This simple recipe is perfect to prepare on a busy Thanksgiving day and it adds just the right touch to a wonderful Thanksgiving feast.

3 cups all-purpose flour
2 cups white sugar
2 teaspoons baking soda
2 teaspoons pumpkin pie spice
1 teaspoon salt
½ teaspoon baking powder
2 cups pumpkin puree
⅔ cup vegetable oil
3 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans.
  • Mix together flour, sugar, baking soda, pie spice, salt and baking powder. Add pumpkin, oil and eggs; mix well.
  • Pour into loaf pans and bake for 1 hour or until inserted toothpick comes out clean.
  • Allow to cool for 15 minutes before removing from pans.

Sweetened condensed milk is what gives this pumpkin pie its silken texture. When mixing ingredients for the filling, mix just enough to combine thoroughly. If bubbles form, it is time to stop mixing.

3 large eggs
0.333 cup sugar
1 14 ounce can sweetened condensed milk
1.5 cup cooked pumpkin puree or one 15-ounce can pumpkin
3 tablespoon unsalted butter, melted and cooled
1 tablespoon all-purpose flour
0.5 teaspoon nutmeg
0.5 teaspoon ground cinnamon
0.5 teaspoon ground ginger
0.25 teaspoon ground cloves
Salt
1 prebaked 9-inch pie shell

Steps:

  • Preheat oven to 325°F. In a large bowl, whisk together eggs, sugar, condensed milk, pumpkin, and better to thoroughly combine.
  • In a small bowl, mix together flour, nutmeg, cinnamon, ginger, cloves, and a pinch of salt; stir into pumpkin mixture.
  • Pour pumpkin filling into pie shell. lace filled pie tin on rimmed baking sheet. Bake for 50 to 60 minutes, until filling is set around edges and slightly loose in center. Cool on wire rack for 1 hour. Cover and refrigerated with 2 hours.

Stale bread (e.g. multi-grain)
Gruyere
Fresh Thyme
Nutmeg
Broth
1/2 and 1/2

Steps:

  • Scoop out the seeds, fill with one layer of stale bread (I used multigrain baguette), sprinkle with grated gruyère, fresh thyme, and a grating of nutmeg. Repeat 2 more times. Then pour in a mixture of broth and half and half till you can see the liquid, about 3/4 of the way up. I threw in a shot of Kirshwasser and baked at 350º for almost two hours.

1 large leek, trimmed and chopped
3 liters chicken stock
1 liter water
1 tablespoon black pepper
2 teaspoons coriander
1 teaspoon thyme
2 teaspoons garlic salt
1 teaspoon mixed Italian herbs
1 teaspoon oregano
1 teaspoon tarragon
1 teaspoon cayenne pepper
5 garlic cloves

Steps:

  • Place all ingredients nto a large soup pot.
  • Bring to the boil, reduce heat to simmer.
  • When vegetables are tender, blend with a stick blender until smooth.
  • Serve with sour cream, and chives.
