EASY SANTA FE CASSEROLE



Easy Santa Fe Casserole image

Hands down, the easiest, most flavor, crowd-pleasing dish- this Santa Fe Casserole will have you in and out of the kitchen in a flash!

1/2 small onion (chopped)
2 cups cooked chicken (shredded (I used rotisserie chicken))
1 1/2 cups cooked brown rice*
1 15 oz. can black beans, drained and rinsed
1 10 oz. can RO*TEL, drained
3/4 cup unsweetened almond milk (any milk will work)
2 eggs (beaten)
1 cup lite shredded Mexican cheese blend or cheddar cheese
1 teaspoon cumin
1/2 tablespoon chili powder
1/2 teaspoon garlic salt
Optional garnish; chopped fresh cilantro (diced avocado and/or salsa)
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F. and spray casserole dish with nonstick cooking spray.
  • In a large bowl, combine all ingredients (how simple is that!?!).
  • Pour mixture into a casserole dish and bake for about 25 minutes or until center is firm.
  • Let cool 5-10 mins and serve with desired garnishes. Enjoy!

This is quick and easy recipe to make when you don't have a lot of time to spare. I've made this and brought to Ladies Meeting's before and there was nothing left to bring home. Also good to fix and take to someone that is ill or for a meal for someone who has had a death in the family.

1 lb lean ground beef
1 pkg lawry's taco spices & seasonings
2 c chicken broth
1/4 c all-purpose flour
1 c dairy sour cream
1 can(s) (7-oz) diced green chiles
1 pkg (11-oz) corn or tortilla chips
2 c grated monterey jack or cheddar cheese
1/2 c sliced green onions with tops

Steps:

  • 1. In medium skillet, brown meat and stir until crumbly; drain fat. Add taco spices & seasonings; blend well.
  • 2. In small bowl, combine broth and flour. Add to meat mixture; bring to a boil to slightly thicken liquid. Stir in sour cream and chiles; blend well.
  • 3. In 13x9x2" lightly greased glass baking dish, place 1/2 of chips. Top with 1/2 of beef mixture, 1/2 of cheese and 1/2 of green onions.
  • 4. Layer again with remaining ingredients ending with green onions. Bake, uncovered, in 375 degree oven for 20 minutes. Let stand 5 minutes before cutting.

2 pounds ground beef
1 medium onion, chopped
2 cans (16 ounces each) kidney beans, rinsed and drained
2 cans (15 ounces each) black beans, rinsed and drained
2 cans (15 ounces each) pinto beans, rinsed and drained
3 cans (7 ounces each) white or shoepeg corn, drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (10 ounces) diced tomatoes and green chiles
1 can (11-1/2 ounces) V8 juice
2 envelopes ranch salad dressing mix
2 envelopes taco seasoning
Optional: Sour cream, shredded cheddar cheese and corn chips

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a 5- or 6-qt. slow cooker. Stir in the beans, corn, tomatoes, juice, salad dressing mix and taco seasoning. , Cover and cook on high for 4-6 hours or until heated through. Serve with sour cream, cheese and corn chips if desired., Freeze Option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.

1 package (8-1/2 ounces) ready-to-serve Santa Fe whole grain rice medley
1/2 pound lean ground beef (90% lean)
3/4 cup frozen corn, thawed
3/4 cup black beans, rinsed and drained
1 jar (12 ounces) salsa
4 ounces process cheese (Velveeta), thinly sliced
6 flour tortillas (10 inches), warmed
Optional: Torn leaf lettuce, chopped onion, chopped sweet red pepper, sour cream and shredded Mexican cheese blend

Steps:

  • Heat rice according to package directions. Meanwhile, crumble beef into a 4-qt. microwave-safe dish. Add corn and beans; mix well. Microwave, covered, on high until beef is no longer pink, 4-5 minutes; drain. Stir in salsa and cheese; microwave until cheese is melted, 2-3 minutes longer. Stir in rice., Spoon 3/4 cup beef mixture in the center of each tortilla; add additional ingredients of your choice. Fold bottom and sides of tortilla over filling and roll up. Freeze option: Cool beef mixture before making burritos; omit lettuce and sour cream from filling options. Individually wrap burritos in paper towels and foil; freeze in a freezer container. To use, remove foil; place paper towel-wrapped burrito on a microwave-safe plate. Microwave on high until heated through, turning once. Let stand 15 seconds. Carefully open burritos and add additional filling ingredients as desired.

1/2 cup Old El Paso™ Thick 'n Chunky salsa
1/2 cup Progresso™ black beans, drained, rinsed (from 15- or 19-oz can)
2 tablespoons finely chopped red onions
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
1 1/2 teaspoons chili powder
4 beef boneless New York strip steaks (1 1/2 pounds)
2 teaspoons chopped fresh oregano leaves or 1/2 teaspoon dried oregano leaves

Steps:

  • Mix salsa, beans, onion, cilantro, lime juice and 1/2 teaspoon of the chili powder. Cover and refrigerate while preparing beef.
  • Set oven control to broil.
  • Sprinkle both sides of beef with remaining 1 teaspoon chili powder and the oregano; gently press into beef. Place beef on rack in broiler pan. Broil with tops 4 to 6 inches from heat 6 minutes; turn. Broil 2 to 5 minutes longer for medium doneness. Serve with salsa.

2 (1 ounce) packets taco seasoning mix
2 (1 ounce) packets ranch dressing mix
2 (16 ounce) cans shoepeg corn
2 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®)
1 (15 ounce) can red kidney beans
1 (15 ounce) can black beans
1 (15 ounce) can pinto beans
1 (14.5 ounce) can chicken broth
1 (14.5 ounce) can diced tomatoes

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Stir taco seasoning mix and ranch dressing mix into the ground beef; add shoepeg corn, diced tomatoes with green chile peppers, red kidney beans, black beans, pinto beans, chicken broth, and diced tomatoes. Bring the mixture to a simmer, stirring occasionally; cook until the tomatoes are softened, 30 to 60 minutes.
