SANDY'S CUCUMBER & TOMATO PASTA SALAD



Sandy's Cucumber & Tomato Pasta Salad image

My mother is a wonderful cook. She makes this pasta salad that I LOVE! It is simple and easy to make. It is not one of those nasty pasta salads that you think of getting at a family reunion.

1 ripe tomatoes, chopped
1 large cucumber, chopped
4 green onions, chopped
1 (16 ounce) box small shell pasta
1 cup mayonnaise (Miracle Whip makes it too sweet)
salt
pepper

Steps:

  • Cook pasta according to package directions.
  • Rinse pasta under cold water till cool, Drain WELL!
  • Add chopped tomato, cucumber, and green onions.
  • Mix in mayo, salt, and pepper.
  • Chill for 30 minutes.
  • Serve cold.
  • My mother mentioned that sometimes she adds 2 tablespoons of flat leaf parsley, 1 teaspoon of lemon juice, and that she doesn't add the pepper till she is ready to eat it. I don't do any of that.

5 pounds white boiling potatoes, cooked, diced and cooled
4 to 5 hardboiled eggs, finely chopped
1 cup chopped celery
1/2 cup sweet pickle relish
1/2 cup finely chopped onion
2 cups mayonnaise
2 tablespoons brown mustard
2 tablespoons sugar
Salt and pepper

Steps:

  • Place the potatoes in a large bowl. Add the eggs, celery, relish and onions.
  • Mix the mayonnaise, mustard and sugar in a small bowl. Slowly pour the mayonnaise mixture into the potatoes - don't put it all at once - and mix together until moist. You might not use all of the 2 cups of the mayonnaise mixture (it depends on the potatoes). Add salt and pepper to taste.

1 shallot, finely chopped
1 ½ teaspoons honey
1 teaspoon Dijon mustard
¼ teaspoon salt
¼ cup extra-virgin olive oil
2 tablespoons fresh lemon juice
2 tablespoons rice vinegar
16 cups arugula

Steps:

  • Combine shallot, honey, mustard, and salt in a jar with a lid; add olive oil, lemon juice, and vinegar. Cover jar with lid and shake until dressing is thickened.
  • Place arugula in a bowl and drizzle dressing over greens; toss to coat.

1 box(es) radiatore pasta or corkscrew pasta
1 cup(s) chopped celery
1 cup(s) chopped sweet peppers
1 cup(s) chopped carrots
1/2 cup(s) chopped onions
1 cup(s) broccoli florets
1 cup(s) cauliflower, small florets
1/4 cup(s) radishes, sliced
1/4 cup(s) black olives sliced
1/4 cup(s) green olives sliced
1 cup(s) tomatoes, chopped
1 cup(s) cheddar cheese, shredded
1 cup(s) pepperoni sliced
1 bottle(s) zesty italian dressing
1 bottle(s) catalina dressing
2 tablespoon(s) italian seasoning

Steps:

  • Put salted water in large pot till boils, add pasta and cook till tender, remove and drain, run cold water over pasta and put in large bowl. Add all chopped and sliced ingredients
  • Mix Italian and catalina dressing together, add Italian seasoning. Pour over pasta and veggies and toss, top with shredded cheese. Put in refrigerator to chill, or even better chill overnight

24 ounces Italian dressing (2 packets of seven seas Italian dressing prepare as instructed on package)
