It's hard to believe we got all this goodness into a one-pot skillet dish-but true! It has ground beef, mac and cheese, salsa-and more cheese.

1 lb. extra-lean ground beef
2 cups water
1 cup TACO BELL® Thick & Chunky Salsa
1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner Made With 2% Milk Cheese
2 cups frozen corn, thawed, drained
1/2 cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese
1 green onion, chopped

Steps:

  • Brown meat in large skillet; drain.
  • Add water, salsa and Macaroni; stir. Bring to boil; cover. Simmer on low heat 10 min. or until macaroni is tender, stirring occasionally. Add corn and Cheese Sauce; stir. Cook 2 min. or until heated through.
  • Top with cheese and onions.

1 lb lean (at least 80%) ground beef
1 jar (16 oz) Old El Paso™ Thick 'n Chunky salsa (2 cups)
1 can (15 oz) Progresso™ dark red kidney beans, undrained
1 can (7 oz) whole kernel corn, undrained
1 can (8 oz) tomato sauce
2 teaspoons chili powder
1 1/2 cups Original Bisquick™ mix
1/2 cup milk
1/2 cup shredded Colby-Monterey Jack cheese (2 oz), if desired

Steps:

  • In 12-inch skillet, cook beef over medium heat, stirring occasionally, until brown; drain. Stir in salsa, beans, corn, tomato sauce and 1 teaspoon of the chili powder. Heat to boiling; reduce heat to low.
  • In medium bowl, stir Bisquick mix, remaining 1 teaspoon chili powder and the milk until soft dough forms. Drop dough by 6 spoonfuls onto simmering beef mixture.
  • Cover; cook about 20 minutes or until dumplings are light and fluffy inside. Sprinkle with cheese. Cover; cook about 2 minutes or until cheese is melted.

3-1/2 cups uncooked egg noodles
1 pound lean ground beef (90% lean)
1 small onion, chopped
1 can (10-3/4 ounces) condensed nacho cheese soup, undiluted
1 cup mild salsa
1/2 cup water
1 teaspoon taco seasoning
1 cup shredded Monterey Jack cheese

Steps:

  • Cook egg noodles according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat 6-8 minutes or until meat is no longer pink, breaking into crumbles; drain. Stir in condensed soup, salsa, water and taco seasoning., Drain noodles; stir into skillet and heat through. Sprinkle with cheese. Remove from heat. Let stand, covered, 1-2 minutes or until cheese is melted. Freeze option: Freeze cooled noodle mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

1-1/2 pounds beef stew meat, cut into 3/4-inch cubes
2 cups salsa
1 tablespoon brown sugar
1 tablespoon reduced-sodium soy sauce
1 garlic clove, minced
4 cups hot cooked brown rice
Sliced jalapeno peppers, optional

Steps:

  • In a 3-qt. slow cooker, combine the beef, salsa, brown sugar, soy sauce and garlic. Cover and cook on low 8-10 hours, until meat is tender. Using a slotted spoon, serve beef with rice and, if desired, sliced jalapeno peppers. Freeze option: Freeze individual portions of cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding water if necessary.

1/4 cup olive oil
1 cup coarse yellow cornmeal
4 cups chicken broth
2 tablespoons olive oil
1 pound ground beef
2 red bell peppers, cut into 1/4 inch dice
2 cups salsa, storebought
1 cup chopped fresh cilantro
Grated aged Jack cheese or sharp white cheddar
Salt

Steps:

  • Heat the oil in a large saucepan. Add cornmeal and saute, stirring constantly, for a minute so all grains are coated with oil. Add the broth and bring liquid to a boil whisking all the while. When this comes to a boil it will bubble up. Quickly put a lid on and turn heat down to very low; cook until no longer tastes raw, about 20 minutes. Season with salt and pepper.
  • Meanwhile heat 2 tab oil in large skillet. Add peppers, cover and cook until tender, about 10 minutes. Uncover skillet, crumble in ground beef and cook until no longer pink. Add salsa and cook uncovered for 5 minutes until thick. Adjust seasoning.
  • To serve ladle cornmeal in bowl; spoon beef and salsa sauce over top and sprinkle with cilantro and grated aged Jack cheese.
