Grilled Salmon with Mediterranean Salsa image

Top already-delicious grilled salmon with a Mediterranean-inspired salsa made with fresh tomatoes, tangy feta and Kalamata olives.

1/2 cup chopped fresh parsley
1/3 cup chopped plum tomatoes
1/4 cup ATHENOS Traditional Crumbled Feta Cheese
1/4 cup coarsely chopped pitted Kalamata olives
2 Tbsp. olive oil
1 Tbsp. lemon juice
4 salmon fillets (4 oz. each)

Steps:

  • Preheat grill to medium heat. Mix parsley, tomatoes, cheese, olives, oil and lemon juice until well blended. Let stand at room temperature until ready to use.
  • Grill salmon 5 minutes on each side or until salmon flakes easily with fork.
  • Serve each fillet topped with 1/4 cup of the tomato salsa.

2 cups diced tomatoes
1/2 diced onion
1/2 cup pine nuts
2 tablespoons minced garlic
2 tablespoons olive oil
1 tablespoon basil
1/2 teaspoon pepper

Steps:

  • Spray baking dish with nonstick spray.
  • In mixing bowl, combine the remaining ingredients.
  • Top each salmon fillet with the tomato mixture.
  • Bake in preheated 350 degree oven for 15 to 20 minutes.
