FISH of all kinds are meal-time mainstays for us in Nova Scotia, so my search for new and tasty ways to prepare fish never stops. These lighter-than-air salmon patties are a favorite in my family and are especially good served with green beans and a tossed salad. -Beverly Willis, Bridgetown, Nova Scotia

Number Of Ingredients 10

1 cup mashed potatoes (with added milk and butter)
1 can (6 ounces) salmon, drained, bones and skin removed
1/4 cup chopped onion
3 saltine crackers, crushed
1 teaspoon minced fresh parsley
1/8 teaspoon salt
1/8 teaspoon pepper
1 egg, separated
2 tablespoons vegetable oil
Lemon wedges, optional

Steps:

  • In a small bowl, combine the potatoes, salmon, onion, cracker crumbs, parsley, salt, pepper and egg yolk; mix well. Beat egg white until stiff peaks form; fold into salmon mixture. , Shape into six patties. Heat oil in a large skillet; fry the patties over medium heat for 3-4 minutes per side or until lightly browned. Garnish with lemon if desired.

I make salmon patties all the time out of canned salmon. This time I had some salmon that I grilled and there was just the 2 of us, so had some left over. You could add more or less of whatever you like, I seasoned the salmon in the first place, so didn't add tons of seasonings. You might want to add more mayo if you find the mix too dry. With this I usually make some home made tartar sauce.

12 ounce(s) cooked salmon
1/3 cup(s) chopped onion
1/3 cup(s) green part of scallions, chopped (for color and bite)
1 large egg
2 teaspoon(s) minced garlic from jar (timesaver)
1 tablespoon(s) hot horseradish
1/3 cup(s) mayo, more if you want it a little more moist
2/3 cup(s) italian bread crumbs to put in the salmon patties
3/4 cup(s) italian bread crumbs to roll patties in.
2 teaspoon(s) lemon juice
- salt and pepper to taste
1 teaspoon(s) dried dill weed.

Steps:

  • Put all ingredients in a large bowl except the 3/4 cup bread crumbs.
  • Make 5 to 6 salmon patties.
  • Put the 3/4 cup bread crumbs in a shallow plate, and press the salmon patties on both sides in the crumbs.
  • Scatter some of the crumbs on a platter and place the patties on top of them,
  • Cover and chill for at least one hour.
  • Either heat 1 inch of oil in a fry pan or use a deep fat fryer heated to 350°.
  • Cook til both sides are golden brown.
  • Serve with home made tartar sauce.

This is my spin on salmon patties. Just about everyone here at JP makes them, and they are all done differently.

Number Of Ingredients 14

14 3/4 ounce(s) can pink alaskan wild salmon
1/2 cup(s) plus 2/3 cup seasoned bread crumbs, we like italian
1 large egg
1/2 cup(s) onion, chopped
4 tablespoon(s) mayonnaise
2 teaspoon(s) lemon juice
2 teaspoon(s) horseradish, creamy horseradish sauce works here too
1/4 teaspoon(s) each, kosher salt, freshly ground black pepper, and dill weed
1 teaspoon(s) hot sauce, optional
- tartar sauce:
1/2 cup(s) mayonnaise
1/3 cup(s) pickle relish, sweet
1 1/2 teaspoon(s) lemon juice
1 1/2 teaspoon(s) either hot sauce, or sue's aunt's sadie's hot pepper sauce

Steps:

  • Drain salmon and pick off the skin and the round crunchy bones. Crumble with your hands.
  • Put salmon, 1/2 cup bread crumbs, egg, onion, mayo, lemon juice, horseradish, and seasonings in a large bowl and mix well. The hot sauce is optional, but we like it.
  • Form 4 patties with your hands.
  • Put the 2/3 cup breadcrumbs on a shallow dish and roll patties in them. Cover and refrigerate for an hour.
  • Heat oil in a heavy skillet, and fry salmon patties until browned, turn and brown on the other side.
  • Make tartar sauce by mixing up all sauce ingredients, cover and chill until serving time.
