Jersey Ham, Egg, Bagel and Herb Cream Cheese Breakfast Sandwich image

Provided by Food Network

Categories     main-dish

Time 15m

Yield 4 servings

Number Of Ingredients 11

3/4 cup cream cheese
1 tablespoon fresh dill
1 tablespoon fresh parsley
Pinch chile powder
Salt and freshly ground black pepper
1 large Jersey tomato (beefsteak)
Vegetable oil, for oiling skillet
8 slices Jersey pork roll, such as Taylor Ham (see Cook's Note)
8 eggs
1 tablespoon butter
4 bagels, split

Steps:

  • Place the cream cheese in a large bowl. Finely chop the dill and parsley and add to the cream cheese with a pinch of chile powder. Season with salt and pepper, and thoroughly mix the ingredients to evenly distribute and combine the flavors.
  • Slice 4 rounds from the center of the tomato, each about 1/4 inch thick. Season with salt and pepper and set aside.
  • Set a skillet over medium heat and add a little oil. Cook the pork roll slices until lightly browned on each side, about 5 minutes. Set aside.
  • Whisk the eggs in a bowl and sprinkle with salt and pepper. Put a nonstick skillet on medium heat and add the butter. Add the eggs and cook until scrambled, stirring occasionally, about 5 minutes.
  • Spread about 1 1/2 tablespoons of the herb cream cheese on each bagel half. Place 2 slices of the meat on the bottom half of each bagel and top with scrambled eggs and sliced tomato. Place the top half of each bagel on the sandwiches and serve.

HAM AND CHEESE QUICHE-STUFFED BAGELS

Ham and Cheese Quiche-Stuffed Bagels image

Remove the bready center of some bagels and fill them with a cheesy ham quiche mixture, a quick bake in the oven, and everyone gets a wonderfully hot, unique, and tasty breakfast all at the same time! Mix and match your filling ingredients, or personalize them so everyone gets exactly what they want. Use your favorite bagels-I am partial to the "everything" bagels!

Provided by Rebekah Rose Hills

Time 25m

Yield 3

Number Of Ingredients 6

1 ½ bagel (4" dia)s bagels, split
2 slices deli ham, diced
1 large egg
3 tablespoons half-and-half
1 tablespoon shredded Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Lay bagel halves with their centers facing up on a baking sheet. Use a sharp knife to gently score around the inside of the bagel (close to the very center and along the outside edge). Remove the bready centers, being careful not to rip through the bagel. Discard the middle pieces of bread, or save for bread crumbs or another use.
  • Gently press all the way around the middle and sides with your fingers to create a well around the center of each bagel half.
  • Whisk ham, egg, half-and-half, shredded Cheddar, salt, and pepper together in a bowl until combined. Divide the egg mixture between the prepared bagels.
  • Bake in the preheated oven until bagels are well toasted and egg is set in the middle, 12 to 15 minutes. Cool briefly before serving.

Categories     Other Breakfast

Number Of Ingredients 18

1 - bagel
2-3 tablespoon(s) cream cheese (not whipped, but flavors work well too)
2-4 slice(s) cheese (provolone, swiss or mozzerella work best)
2-4 slice(s) lunch meat (any kind you like)
2-3 dash(es) spike (this is a great seasoning, if you cannot find it in your market use one of the mrs. dash seasoning with lots of spices)
TOPPING/FILLING IDEAS:
- olives (black, green, kalamata, even a tapenade or a mix of all is great too!
- capers
- red onion (this would go on top not in the cream cheese so it cooks)
- red, orange or yellow bell pepper(also a top item)
- raw or marinated mushrooms
- marinated artichokes
- roasted red peppers
- sun dried tomatoes
- sun flower seeds
- lemon pepper
- jalapeno peppers
- mix and match, be creative, make a lot and cut them as an appitizer lots of fun a tasty treat

Steps:

  • Preheat oven to 400 ( I use my toaster oven when I am only making one for me) slice bagel and smear with cream cheese
  • lay out olives (or any of the filling type items) onto cream cheese
  • place meat on now, not too thick or it will be cold in the middle so a couple thin slices or just one thick type slice.
  • cover with sliced cheese
  • sprinkle with SPIKE ( or Mrs. Dash )
  • ** add any topping type items (onion, raw peppers, sun dried tomatoes stuff that needs to cook, cause the middle will be hot but will not cook down an onion or pepper)
  • bake at 400 until cheese is melted the way you like it, I like it a bit crunchy and you can see but you can take it out at just melted and that's good too.
