- Preheat your oven to 375 degrees Fahrenheit. Mix together the mustard, parsley, lemon juice, oil, and garlic in a small bowl.
- Place the salmon on a parchment lined baking tray and generously coat the top of the salmon with the herbed mustard mix.
- Bake the salmon for 18-20 minutes (depending on size and thickness), then slice it into individual portions and serve immediately.

SALMON WITH CHERMOULA SAUCE AND COUSCOUS
What better way to use up cilantro and parsley in the fridge, than making a spiced and flavorful herbaceous sauce! This Moroccan sauce gets paired with earthy spices like cumin and coriander, making it an easy go-to coating and marinade for many proteins. In this recipe, it's pulsed in a food processor and gets spooned over salmon filets. This chermoula also calls for adding juice of lemon and the zest, but you can try it with preserved lemons for a nice relish.

- Make the chermoula: Combine the cilantro, 1/4 cup parsley leaves, the garlic, 1 teaspoon cumin, 1 teaspoon coriander and the lemon zest and juice in a food processor. Pulse until finely chopped. While the machine is running, slowly drizzle in 1/4 cup olive oil and process until smooth. Season with salt and pepper.
- Meanwhile, heat a saucepan over medium-high heat. Add 1 tablespoon olive oil and the zucchini and cook, stirring, until crisp-tender, 1 minute. Add the harissa, 1 1/4 cups water and a big pinch of salt and bring to a boil. Stir in the couscous, then cover, remove from the heat and wait 5 minutes; fluff with a fork. Stir in the 2 tablespoons chopped parsley; season with salt.
- Season the salmon with the remaining 1 teaspoon each cumin and coriander and a few pinches each of salt and pepper. Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the salmon and cook until browned, 3 to 4 minutes per side. Divide among plates and top with the chermoula. Serve with the couscous and lemon wedges.

- Cut the salmon into bite-sized pieces and arrange on a heat proof plate and cover with foil.
- Bring a large saucepan of boiling salted water to a boil and add the pasta and return to a boil.
- Place the plate of salmon on top and simmer 10-12 minutes until the pasta and salmon are cooked.
- Drain the pasta and toss with the tomatoes and salmon.
- Mix together the crème fraiche, parsley, orange rind, and pepper to taste.
- Serve hot or room temperature.
- Variation: replace the salmon with trout and the orange with lemon zest.

- Start by making the sauce. Place the parsley, fromage frais, cream cheese, stock and capers in a food processor and blend until smooth. Season well, transfer to a bowl, and set aside until ready to serve.
- Preheat the grill until hot. Place the salmon fillets on a rack in a single layer and season well. Grill for 8-10 minutes, or until the fish has cooked through.

- Combine 1 cup wine, 3 tablespoons clam juice, garlic and shallots in heavy small saucepan. Boil until mixture is reduced to 2/3 cup, about 6 minutes. Stir in whipping cream and 1/2 cup parsley. Boil until mixture is reduced to 1 1/2 cups, about 4 minutes. Transfer mixture to blender. Blend until parsley is finely minced. Pour sauce into strainer set over bowl; press on solids to extract as much liquid to same saucepan and boil until sauce coats spoon, about 3 minutes.
- Preheat broiler, Brush salmon fillet on both side with oil. Broil salmon, skin side up, 4 minutes. Turn salmon over; season with salt and pepper. Broil until salmon is opaque in center, about 3 minutes. Transfer to platter.
- Bring sauce to simmer. Whisk in tarragon, chives and remaining 3 tablespoons parsley. Season sauce with salt and pepper. Pour sauce over salmon. Garnish with parsley sprigs and serve.

- With the rack in the center position, preheat the oven to 400°F. Line a large, rimmed baking sheet with foil, and lightly oil the foil or spray it with non-stick cooking spray. Place the salmon fillets on the pan, skin side down, and generously season them with salt and pepper.
