FRESH SALMON CARPACCIO

This no-cook starter is easy, impressive and a deliciously fresh way to start a meal

800g very fresh salmon
2 lemons
2 tbsp chopped dill
2 shallots , finely chopped
2 tsp caster sugar
2 tbsp extra-virgin olive oil
1 tbsp capers , drained and dried
salad leaves and brown bread, to serve

Steps:

  • Rinse and dry the salmon, then wrap in cling film and freeze for 1 hr to make slicing easier. Meanwhile, finely grate the zest from one lemon and squeeze the juice from both. Mix in a bowl with the dill, shallots, sugar and 1 tsp sea salt. Add the olive oil and whisk to amalgamate.
  • Unwrap the salmon and set on a large chopping board. Cut wafer-thin slices on the diagonal, as you would smoked salmon. Arrange a layer of the salmon over a large shallow dish, then spoon over a little of the marinade - spreading it to evenly coat the fish. Continue slicing and layering, finishing with a layer of marinade. Cover with cling film, directly over the fish, and chill for at least 2 hrs or overnight.
  • To serve, arrange the salmon slices over a platter and scatter over the capers and some salad leaves. Serve with thinly sliced brown bread or soda bread.

8 ounces salmon, preferably wild
3 tablespoons extra virgin olive oil, plus extra for brushing
1 small shallot, finely diced
2 teaspoons finely chopped lemon zest
1 tablespoon lemon juice
Salt
pepper
1 teaspoon capers, rinsed and roughly chopped
2 teaspoons snipped chives
Nasturtium petals, optional
8 ounces halibut fillet
Salt
pepper
2 scallions, chopped fine
1 small cucumber, peeled, seeded and finely diced, about 1/2 cup
1/2 teaspoon grated or finely minced jalapeño, optional
2 tablespoons extra virgin olive oil
Juice of 1 small lime, or to taste
2 teaspoons snipped dill, optional

Steps:

  • To prepare the salmon carpaccio: Slice the salmon crosswise into 4 equal pieces. Paint each slice lightly with olive oil and place between 2 pieces of waxed paper. Using a meat mallet or wine bottle, with light tapping motions, very gently pound the salmon to about 1/16- inch thickness. Refrigerate in the waxed paper until ready to serve.
  • Put the shallot, lemon zest and lemon juice in a small bowl. Season with salt and pepper. Add the capers. Whisk in 3 tablespoons olive oil.
  • To prepare the halibut tartare: Dice the halibut as small as possible, put it in a bowl and put the bowl on ice.
  • Just before serving, season the halibut with salt and pepper. Gently stir in the scallions, cucumber, jalapeño, olive oil and lime juice.
  • For each serving, carefully peel one sheet of waxed paper from the salmon and invert onto a chilled plate. Remove the remaining waxed paper. Sprinkle the salmon lightly with salt. Drizzle with the lemon-caper oil and sprinkle with the chives and nasturtium petals.
  • Spoon a 2-ounce mound of halibut tartare onto each plate, next to the salmon. Sprinkle with the dill.

Wild Salmon With Chive Oil and Lime Crème Fraîche image

The wild king salmon season opens in late spring in Alaska and all the way down the West Coast. The season continues through summer, but is at its best in June. The year's first wild salmon has brilliant red flesh, a mild sweet flavor and a velvety texture. Farmed salmon doesn't compare. You pay a high price for wild salmon, but the splurge is worth it. Paired with bright green chive oil and limey crème fraîche, it will make you swoon.

4 (6-ounce) pieces wild king salmon fillet
2 tablespoons extra-virgin olive oil
Salt and pepper
1 cup roughly chopped chives, plus 2 tablespoons thinly sliced chives, for garnish
3/4 cup grapeseed oil or another neutral oil, such as safflower
1 cup crème fraîche
Zest and juice of 1 small lime
Chive blossoms or other edible blossoms (optional)
Watercress sprigs or other peppery greens, for garnish

Steps:

  • Heat oven to 375 degrees. Lay the salmon fillets on a parchment-lined baking sheet. Coat salmon with olive oil and season with salt and pepper on both sides. Bring to room temperature.
  • Make the chive oil: Put 1 cup roughly chopped chives in a blender or food processor. With the food processor running, slowly add oil and a pinch of salt. You should have a bright-green oil. Transfer chive oil to a small bowl.
  • Put crème fraîche in a small bowl. Stir in lime zest and juice. Season with a little salt.
  • Bake salmon on top rack of oven for 8 to 10 minutes, until just done. When you see juices begin to rise to the surface of the fish, remove fish from oven. (It is better to err on the less-cooked side; the fish continues to cook a bit from residual heat.)
  • To serve, transfer fish to individual plates or a platter. Dollop about 1 tablespoon of limey crème fraîche on each fillet. Drizzle chive oil over the top and sprinkle with chives. Garnish with blossoms and watercress sprigs.

2 pounds very fresh salmon fillet
Juice of 2 limes (or to taste)
6 tablespoons extra-virgin olive oil
3 tablespoons finely chopped chives
Coarse salt and freshly ground pepper to taste
16 thin strips of chive, about 14 inches long

Steps:

  • With a very sharp knife, cut the salmon into thin slices. Divide them among eight plates, without overlapping them.
  • Combine the lime, olive oil and chives. Season to taste with salt and pepper.
  • Spoon the dressing evenly over the salmon slices. Cover with plastic wrap and refrigerate for 30 minutes.
  • About five minutes before serving, remove the salmon from the refrigerator. Put two strips of chives in a V shape onto each plate and serve.

juice 2 limes
thumb-sized piece ginger , grated
2 garlic cloves , crushed
2 tsp low-sodium soy sauce
2 tbsp rice wine vinegar
2 skinless salmon fillets
100ml low-sodium chicken stock
140g pack baby corn , halved
175g thin-stemmed broccoli
4 baby pak choi , halved
small bunch spring onions , sliced

Steps:

  • Mix the lime juice, ginger, garlic, soy and vinegar with some black pepper. Pour half over the salmon fillets and leave to marinate for 10 mins.
  • Heat the grill to High. Lay the salmon on a non-stick baking tray and grill for 5-6 mins each side or until cooked through. Meanwhile, heat a wok with the remaining marinade and the stock, add the baby corn and broccoli, stir-fry for about 5 mins, then add the pak choi and cook for 2 mins more.
  • Serve the salmon on top of the vegetables with any sauce from the pan and sprinkle with the spring onions.

Grilled Salmon Salad With Lime, Chiles and Herbs image

Made of soft, supple salmon; crisp lettuces and vegetables; and a very savory dressing run through with chiles and lime, this light salad is tangy and full of flavor. The dressing, based on nuoc cham, a traditional Vietnamese dipping sauce, has just enough fish sauce to give it depth and pungency without overpowering the brightness of the lime. You can substitute other fish, or even chicken, for the salmon. Just adjust the grilling time as needed, and toss with the dressing while still warm. Note that if you don't have a grill, you can roast the fish in the oven.

2 limes
2 small fresh red or green chiles or 1 large one, thinly sliced, seeds removed if you like
1 shallot (or 2 scallions, or 2 tablespoons red onion), thinly sliced
2 tablespoons fish sauce
Kosher salt
Pinch of granulated sugar
1/4 cup extra-virgin olive oil or grapeseed oil, plus more for brushing
1 1/4 pounds salmon fillet, preferably 1 large center-cut piece
8 cups salad greens, such as Little Gem, bibb or Boston lettuce
1 cup mixed soft herbs (such as cilantro, mint and basil), leaves and tender stems
1 cup thinly sliced radishes, cucumbers or both (optional)

Steps:

  • Light the grill for indirect heat, or heat the oven to 450 degrees.
  • As the grill or oven heat up, make the dressing: Halve 1 lime, and squeeze its juice into a small bowl. Add the chile slices, half of the sliced shallot (save the rest for serving), the fish sauce and a pinch each salt and sugar. Let sit for 1 minute to dissolve the salt, then whisk in the olive oil. It won't emulsify, so mix again before using.
  • Brush the salmon with oil, and place it in a grilling basket if you have one. Cook over the indirect (unlit) side of the grill, for 2 to 5 minutes per side, depending on how hot the grill is and how thick the salmon is. Note that individual fillets will cook faster than a single large piece. Check the salmon often. (Alternatively, roast the salmon on a baking sheet in the oven, until just cooked to taste, 7 to 12 minutes; you don't have to flip it.)
  • As the salmon cooks, halve the other lime. Brush the cut sides with olive oil and grill, cut-side down, over direct heat until charred, about 1 minute. If using the oven, throw the halves, cut-side up, on the roasting pan with the salmon. They won't char, but they will cook and mellow in flavor, which is the aim.
  • When the salmon is cooked, transfer it to a plate and spoon some dressing over it. Let it cool slightly, then break up the fish into large chunks.
  • Place greens, remaining shallots, herbs, and radishes or cucumber, if using, in a large shallow bowl or on a platter, and add a little more of the dressing. Squeeze some of the juice from a charred lime half over it and drizzle with a little olive oil. Toss and taste, adding lime juice, olive oil or salt as needed.
  • Top with the salmon chunks and drizzle with more (or all) of the dressing. Serve with the remaining charred lime half on the side for squeezing.
