Grilled Wild Alaskan Pollock with BBQ Sauce and Pickled Slaw image

Inspired by summer and ready for the grill this Wild Alaska Pollock dish is great recipe for a small dinner party, family, or just for you (with leftovers). Complemented with a side of bright and crispy coleslaw, this dish brings together all the flavors of summer in perfect easy grilling package.

Ingredients
4 cups Coleslaw
1 cup Onion, Thinly Sliced
3/4 cup Bread and Butter Pickles, Chopped
1/4 cup Bread and Butter Pickles Juice
Cooking Spray
Salt & Ground Black Pepper, to taste
1 teaspoon Ground Cumin
1/4 cup Mayonnaise
2 ounces BBQ Sauce
1 ounce Fried Onions
1 ounce Jalapeno Peppers, Chopped
4 Trident Seafoods® Wild Caught Alaskan Pollock Fish Fillets

Steps:

  • (For best results prepare using frozen fillets)
  • In a large bowl, toss together coleslaw mix, sliced onion, pickles and pickle juice. Season with salt and pepper.
  • Preheat grill to medium-high and oil the cooking grates.
  • Spray fillets with cooking spray and season with salt, pepper and cumin.
  • Grill Alaskan Pollock Fillets for 5 minutes. Turn and brush with BBQ sauce; cook 2 minutes. Turn and brush again, cook another minute.
  • Serve with slaw mixture, sprinkled with crispy fried onions and jalapenos.

Fantastic Lemon Butter Fillet image

This wonderful recipe will make your mouth water when you sink your teeth into the lemon butter spiced fillets. Use any type of fish!

Number Of Ingredients 8

½ cup butter
1 lemon, juiced
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon dried parsley
3 cloves garlic, minced
6 (4 ounce) fillets cod
2 tablespoons lemon pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a medium saucepan over medium heat. Mix in lemon juice, salt, pepper, parsley flakes, and garlic. Bring to a boil. Cook and stir about 10 minutes, until thickened.
  • Arrange cod fillets in a single layer on a medium baking sheet. Cover with 1/2 the butter mixture, and sprinkle with lemon pepper. Cover with foil.
  • Bake 15 to 20 minutes in the preheated oven, until fish is easily flaked with a fork. Pour the remaining butter mixture over the fish to serve.
