EASY HONEY CHIPOTLE SALMON
This easy honey chipotle salmon is made with only 5 ingredients and comes together in less than 30 minutes.

- In a medium bowl, whisk everything together (except for the salmon of course). Place the salmon in a tupperware, baking dish, or zipped-top bag. Pour half of the marinade on top. Give everything a nice shake. Reserve the rest for step 4. Marinate for at least 15 minutes or up to 8 hours.
- Meanwhile, fire up the grill to medium-high heat or preheat oven to 375°F (191°C).
- You can grill the salmon on foil or on a cedar plank. Grill the salmon skin side down for 15 minutes- about 10 minutes per 1-inch inch thickness measured from the thickest part of the fillet or until the thickest part reaches 145°F (63°C) internal heat.
- Or bake the salmon on a lined baking sheet for 15-20 minutes depending on thickness and until the thickest part reaches 145°F (63°C) internal heat.
- Brush the warm salmon with remaining marinade before serving. Leftovers keep well in the refrigerator for a few days. Reheat to your liking.
BAKED LEMON HERB SALMON
This moist and tender lemon herb salmon takes about 30 minutes. Feel free to use other vegetables instead of brussels sprouts. See note below.

- Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper or a silicone baking mat. Arrange salmon and brussels sprouts evenly spaced on top.
- Brush the melted butter on top of each salmon fillet. In a small bowl, stir the rosemary, parsley, garlic, juice of 1 lemon (around 4 Tablespoons), and 1/4 teaspoon pepper together. Spoon evenly onto each fillet, spreading all over the top. Slice 1/2 of the 2nd lemon and arrange 1-2 slices on top of each fillet. Squeeze the other lemon half on top of the brussels sprouts. Sprinkle the brussels sprouts with remaining 1/4 teaspoon of pepper. Sprinkle sea salt evenly over the whole pan- not much is needed, but go by your preference.
- Bake the salmon for 15-20 minutes depending on thickness, about 10 minutes per 1-inch inch thickness measured from the thickest part of the fillet or until the thickest part reaches 145°F (63°C) internal heat.
- Serve warm.
- Leftovers keep well in the refrigerator for a few days. Reheat to your liking.
SALLY'S BIRTHDAY SALMON
I made this for the first time for my MIL's birthday. It was the first time I had cooked for the "family" and she loved it so much that she makes it for her own dinner parties quite often now.

Steps:
- Using a vegetable peeler make the cucumber into long wide strips.
- Set aside.
- Put the water, wine, zest, and dill in a deep frying pan.
- Bring it up to the boil.
- Reduce heat to a simmer.
- Add salmon.
- Simmer for 5-6 mins until the fish flakes easily.
- For the sauce combine ingredients in a bowl.
- Season well.
- Serve salmon on a bed of the cucumber, make it look really pretty.
- Drizzle with the sauce.
- Serve with salad and bread rolls.

- For sauce: Whisk olive oil, orange juice and terriyaki sauce together in a saucepan.
- Stir in ginger& green onions.
- Bring to a boil and allow to reduce for 5 minutes.
- In a skillet heat olive oil& butter.
- When hot, add salmon and brown on each side.
- Cook for about 3-4 minutes per side or until salmon starts to flake.
- Add sauce, turning salmon to coat.
- Cook for another 2 minutes.
- Serve salmon with sauce.
