SESAME CHEDDAR BREAD



Sesame Cheddar Bread image

Yield 2 loaves

Number Of Ingredients 9

scant tablespoons or 2 (1/4-ounce) packages active dry yeast
2 cups warm water (about 110 degrees)
1/4 cup granulated sugar
2 tablespoons soft butter
2 teaspoons salt
2 eggs, slightly beaten
1/2 cup sesame seeds, toasted
5 1/2 to 6 1/2 cups unbleached flour
3 cups shredded Cheddar cheese, divided

Steps:

  • In a large bowl, stir yeast into water to soften. Add sugar, butter, salt, eggs, sesame seeds, 2 cups flour and 2 cups cheese. Beat vigorously for two minutes.
  • Gradually add flour, 1/4 cup at a time, until the dough begins to pull away from the side of the bowl.
  • Turn dough out onto a floured work surface. Knead, adding flour a little at a time, until you have a smooth, elastic dough.
  • Put dough into an oiled bowl. Turn to coat the entire ball of dough with oil. Cover with a tightly woven towel and let rise until doubled, about one hour.
  • Turn the dough out onto a lightly oiled work surface. With the heel of your hand, flatten the dough to a 15-inch square. Sprinkle with the remaining cheese. Roll up, then knead a few times to marble the cheese throughout the dough. Cover with a tightly woven towel and let rest for 5 minutes.
  • Divide dough in half. Shape each half into a loaf and place into well-greased loaf pans. Cover with a tightly woven towel and let rise until almost doubled, about 45 minutes.
  • About 10 minutes before baking, preheat oven to 375 degrees.
  • Bake for 25 minutes, or until the internal temperature of the loaves reaches 190 degrees.
  • Immediately, remove bread from pans and cool on a rack.

1 pound prepared pizza dough, at room temperature, torn into pieces
2 tablespoons extra-virgin olive oil, plus more for the parchment paper
2 tablespoons unsalted butter, melted
1 tablespoon sugar
2 tablespoons sesame seeds
1 teaspoon anise seeds
1 tablespoon orange-flower water (or 1/4 teaspoon each grated lemon zest and orange zest)

Steps:

  • Combine the pizza dough, olive oil, melted butter, sugar, sesame seeds, anise seeds and orange-flower water in a food processor; pulse until the ingredients are incorporated and the dough gathers around the blade. Line a baking sheet with parchment paper and lightly oil the parchment. Form the dough into a ball and pat into a 6-inch disk on the parchment. Cover with a large bowl; let rise in a warm place until airy and spread into a flat round, 1 hour, 30 minutes to 2 hours.
  • Put an upside-down baking sheet in the oven and preheat to 400 degrees F. Remove the bowl from the dough; put the baking sheet with the dough on the hot baking sheet in the oven and bake until golden, about 15 minutes. Reduce the oven temperature to 300 degrees F and continue baking until the bread sounds hollow when tapped, 15 to 20 more minutes. Let cool slightly before slicing.

1 cup water, hot (90F-100F)
2 tablespoons sesame oil
1 teaspoon sugar
1 teaspoon salt
3 1/4 cups white bread flour
1 tablespoon sesame seeds
1 tablespoon sunflower seeds (optional)
1 tablespoon pumpkin seeds (optional)
1 1/2 teaspoons yeast
1 -2 tablespoon milk
1 -2 tablespoon sesame seeds

Steps:

  • Place the first four ingredients into your bread machine pan in the order they are listed above.
  • Mix the flour with the seeds and pour into the pan, followed by the yeast.
  • Set the programme to 'DOUGH'.
  • When the cycle has finished, (my machine takes 90 minutes) transfer the dough to a floured surface, knead about 5 times then shape as you like (round, oval, loaf, etc.) Place the dough on a lightly oiled baking sheet and cover it with a piece of oiled cling film/plastic wrap. Leave it to prove until it has almost doubled in size (about an hour).
  • Preheat the oven to 200C/400°F
  • Using the point of a sharp knife, cut 4-5 slashes in the loaf no more than 1/4 inch deep, making a simple design of your choice. (ex: / / / / or XXXX, etc.).
  • Brush the dough gently with the milk then sprinkle the sesame seeds over the top.
  • Bake for 25 minutes or until it has turned golden brown. Transfer the loaf to a wire rack and leave it to cool a little before slicing.

2 packages (1/4 ounce each) active dry yeast
2-1/2 cups water (110° to 115°)
2 tablespoons sugar
2 tablespoons canola oil
2 teaspoons salt
6 to 6-1/2 cups all-purpose flour
Cornmeal
1 large egg white
1 tablespoon water
2 tablespoons sesame seeds

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the sugar, oil, salt and 4 cups of flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Divide in half. Roll each half into a 15x10-in. rectangle. Roll up from a long side; seal well. Place with seam side down on greased baking sheet sprinkled with cornmeal. , Beat egg white and water; brush over loaves. Sprinkle with sesame seeds. Cover with plastic wrap sprayed with cooking spray; let rise until nearly doubled, about 30 minutes. , With a sharp knife, make 4 shallow diagonal cuts across top. Bake at 400° until lightly browned, about 25 minutes. Remove from pan and cool on a wire rack.

4 cups rye flour
2 teaspoons baking soda
½ teaspoon salt
1 ¼ cups buttermilk
1 ¼ cups packed brown sugar
1 cup white sugar
½ cup light corn syrup
½ cup molasses
2 eggs
1 tablespoon anise seed
1 tablespoon melted butter

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease 3 small loaf pans.
  • Combine rye flour, baking soda, salt, buttermilk, brown sugar, white sugar, corn syrup, molasses, eggs, anise seed, and melted butter in a large bowl, and mix well.
  • Scrape the batter into the prepared loaf pans, and bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Remove pans from the oven, and cool on their sides for about 15 minutes before loosening the sides of the loaves from the pans. Remove the loaves, and finish cooling on a wire rack.

1 tablespoon whole anise seeds
2 tablespoons boiling-hot water
2 cups all-purpose flour
1/8 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks (3/4 cup) unsalted butter, softened
2/3 cup sugar
2 large eggs
1/4 cup sesame seeds, lightly toasted
Special Equipment
a 2 1/2-inch fluted round cookie cutter

Steps:

  • Soak anise seeds in boiling-hot water until most of water is absorbed, about 15 minutes.
  • Whisk together flour, baking soda, and salt in a bowl.
  • Beat together butter and sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 2 minutes in a stand mixer (preferably fitted with paddle attachment) or 4 minutes with a handheld. Beat in 1 egg and anise seeds with any remaining soaking liquid until combined. Reduce speed to low, then mix in flour mixture until just combined.
  • Divide dough into 4 balls and flatten each into a 4-inch disk. Chill disks, wrapped in plastic wrap, until firm, about 3 hours.
  • Put oven racks in upper and lower thirds of oven and preheat oven to 350°F.
  • While oven preheats, roll out 1 piece of dough (keep remaining dough chilled) on a well-floured surface with a well-floured rolling pin into a 7-inch round (slightly less than 1/4 inch thick; if dough becomes too soft to roll out, chill on a baking sheet until firm). Cut out as many cookies as possible from dough with cutter and transfer to 2 ungreased large baking sheets, arranging cookies about 1 inch apart. Beat remaining egg in a small bowl with 1 tablespoon water to make an egg wash. Brush each cookie lightly with egg wash, then sprinkle with some of sesame seeds.
  • Bake cookies, switching position of sheets halfway through baking, until bottoms are golden, 10 to 12 minutes total, then transfer with a metal spatula to racks to cool completely.
  • Gather scraps and chill until firm enough to reroll. Make more cookies with remaining dough, scraps (reroll only once), and sesame seeds, then bake on cooled sheets.

My family has been making this Easter bread for generations. It's origins are in a family bakery owned by my great-great aunts off the boat from Italy. My mom and I are the only remaining individuals who know how to make this, so I'm posting it hoping to share it with others. It is made the old world way, so it is not quick, but it is delicious and well worth the work and wait.

12 ⅜ cups all-purpose flour
2 cups white sugar
5 tablespoons anise seed
½ cup warm water
2 (.25 ounce) packages active dry yeast
2 cups warm milk
8 eggs, at room temperature
½ cup butter, melted

Steps:

  • Combine flour, sugar, and anise seed together in a very large bowl; create a well in the center.
  • Mix warm water and yeast together in a bowl. Let stand until the yeast softens and begins to form a creamy foam, about 10 minutes.
  • Beat warm milk, eggs, and butter together in a bowl; stir into yeast mixture. Add milk mixture to the well in the flour mixture. Knead flour-milk mixture using your hands until dough and your hands are no longer sticky. Cover dough with a clean cotton cloth and let rise, 8 hours to overnight.
  • Grease and flour 6 loaf pans.
  • Punch dough down and divide into 6 portions. Mold each portion into a round shape and place each in a prepared pan. Cover pans and let rise for 1 hour more.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until bread is cooked through, 45 to 50 minutes.
