Salami And Cream Cheeses Wedges image

I got this recipe from a little cookbook entitled "Tested Best", which featured recipes from America's food companies test kitchens. Surprisingly good for little effort, and it can be varied to suit your taste. A great addition to an appetizer tray, or even as a late night snack!

1 3 oz. package cream cheese, softened
2 Tbsp milk or cream
1 tsp lemon juice
1/2 tsp msg - accent (optional)
1/2 tsp prepared mustard
1/4 tsp salt
1 tsp horseradish
2 Tbsp finely crushed corn chips (fritos)
5 slice salami (approx. 4 inches in diameter)

Steps:

  • 1. Blend cream cheese with milk. Add remaining ingredients except salami.
  • 2. Spread cream cheese mixture on slices of salami, putting one on top of the other to form a stack, ending with salami.
  • 3. Chill. When ready to serve, cut into wedges.

This works well as part of an appitizer tray. I got this recipe many, many years ago from a good friend. This can be made up ahead of time and chilled.

8 ounces cream cheese, softened
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/2 garlic clove, minced
1 green onion, chopped finely
36 slices salami

Steps:

  • Combine the cream cheese filling and spread between salami slices.
  • Stack to 4 slices then chill for up to an hour (or before serving time)
  • Cut into 4 wedges. Dip sides into parsley.

Six 1/4-inch thick slices kosher salami
8 large eggs
Freshly ground black pepper

Steps:

  • Quarter the salami slices to make wedges. Saute the salami wedges in a skillet over medium heat, stirring and cooking the wedges on both sides until they are slightly browned on the edges and have released some of their fat, 1 to 2 minutes.
  • Meanwhile, break the eggs into a bowl and mix them with a fork. Mix in 1 tablespoon water and season with pepper.
  • Pour the egg mixture into the hot skillet, over the salami, and stir to cook the eggs and to break them up a bit, as you would with scrambled eggs. When the eggs are cooked through but not overcooked (after 2 to 3 minutes), dish spoonfuls of egg and salami onto warm plates.

Yummy appetizers. You can make up a tray with these, or use your imagination and use bologna or other meats. If I use bologna, I add a tablespoon of mustard to the cheese spread.

1 (8 ounce) package cream cheese
9 pieces salami, large thick sliced
12 olives
toothpick

Steps:

  • Soften the cream cheese and spread each slice of salami with the cream cheese.
  • Stack the slices on top of each other, ending with the top slice having no cheese on it.
  • Cover and refrigerate till cheese is set and meat is good and cold.
  • Cut into 12 wedges. Garnish with an olive on a toothpick and push into top of wedges.

Adapted from an Australian Womens Weekly Recipe. Makes quite an impressive addition to a fingerfood banquet, yet it is quite simple to make.

250 g soft cream cheese
2 tablespoons fresh basil, chopped
6 sun-dried tomatoes, chopped
10 slices white bread
20 slices salami
10 pitted green olives, halved
10 pitted black olives, halved

Steps:

  • Blend or process half the cheese with basil until smooth.
  • Blend or process remaining cheese separately with tomatoes until smooth.
  • Cut rounds from the bread the same size as the salami.
  • Spread a slice of salami with basil mixture, top with a bread round.
  • Spread bread with tomato mixture, top with a slice of salami.
  • repeat with remaining salami, basil mixture, bread and tomato mixture, making 10 stacks.
  • Cover, refrigerate for 30 minutes.
  • Just before serving, cut stacks into 4 wedges, top each wedge with half an olive, secure with a toothpick.
  • Can be prepared 3 hours ahead.
  • Store covered in refrigerator.
  • Not suitable to freeze.
  • Preparation time does not include refrigeration time.

5 large potatoes
3 -4 tablespoons chopped fresh rosemary
sea salt, for sprinkling
1/2 cup butter, melted
2 garlic cloves, crushed
1/8 cup olive oil
1/8 cup melted butter

Steps:

  • Cut each potato into 8 wedges. You can use peeled or unpeeled potatoes.
  • Melt butter with crushed garlic, place into a bowl.
  • Add wedges to butter in the bowl and mix until all wedges are coated with the garlic butter.
  • Add 1/8 cup butter and 1/8 cup olive oil to a large baking dish.
  • Add wedges to large baking dish.
  • sprinkle with the chopped rosemary and the sea salt.
  • Bake in preheated 180°F oven until golden and crisp, may need to be turned.

I had this at a holiday appetizer party and everyone loved it and wanted the recipe!We sampled the ham--Swiss version but the salami-cheddar filling sounds yummy too. Best served warm.

1 1/4 cups flour
1/2 cup cold butter, cubed
1/2 cup small curd cottage cheese
1 cup chopped ham (see note)
1 cup shredded swiss cheese
1 stalk celery, diced
1/4 cup sliced green onion
2 tablespoons flour
1 dash nutmeg
1 dash ground black pepper
1 egg, separated

Steps:

  • Preheat oven to 400°.
  • Pastry: combine flour and butter in a food processor fitted with a metal blade- pulse until evenly blended.
  • Or cut in butter with a pastry blender.
  • Add cottage cheese and process (or stir) until dough forms a moist ball.
  • Divide dough in half and chill while preparing filling.
  • Filling: Mix ham, cheese, celery, green onions, flour and spices.
  • On a lightly floured board, roll out half of the dough to form an 11 or 12 inch circle.
  • Set on a greased baking sheet.
  • Spread filling evenly to within 1 inch of edges.
  • Lightly beat egg white and brush outer edges of dough.
  • Roll out remaining dough to same size and top the pastry round with the filling with this round.
  • Press edges firmly together and flute or crimp.
  • Can be assembled ahead to this point.
  • Just before baking, brush top and edges with the lightly beaten, reserved egg yolk.
  • Bake 20-25 minutes until golden brown.
  • Loosen from pan with a metal spatula and slide onto serving plate.
  • Cut into slim wedges; serve hot or warm.
  • Note: to make Salami-Cheddar filling instead, substitute chopped salami and shredded cheddar cheese for the ham and Swiss and increase the amount of green onion to 1/2 cup.

2 5-oz. bags sea salt potato chips (preferably Kettle Brand)
8 oz. salami, thinly sliced
⅔ cup honey
½ cup (1 stick) unsalted butter
1 tsp. cayenne pepper
1 tsp. coarsely ground black pepper, plus more
Flaky sea salt

Steps:

  • Place potato chips in a large bowl. Working in batches if needed, cook salami in a single layer in a dry large skillet over medium heat, turning occasionally with tongs and reducing heat to medium-low to prevent burning if needed, until crisp, about 5 minutes per batch. Add salami to potato chips and toss gently to combine.
  • Add honey, butter, cayenne, and 1 tsp. black pepper to fat in skillet. Cook over medium heat, whisking constantly, until butter is melted and mixture is bubbling vigorously, about 3 minutes.
  • Drizzle half of honey butter over chip mixture and toss with a wooden spoon or heatproof rubber spatula to combine. Drizzle remaining honey butter over and toss again until honey butter evenly coats chips and salami. Pile chip mixture in a shallow bowl or on a large plate to build a mound as high as you can go. Sprinkle with sea salt and more black pepper.

Spoon half into bread shell. Layer with pepperoncini, salami, cheese, roasted peppers, pepperoni and remaining olive mixture.
