PROSCIUTTO PASTA TOSS

Steps:
- Cook linguine according to package directions, adding peas during the last 3 minutes. Meanwhile, in a large cast-iron or other heavy skillet, saute garlic, Italian seasoning and pepper in oil until garlic is tender, about 1 minute. Stir in prosciutto., Drain linguine; add to skillet and toss to coat. Sprinkle with cheese.

SIMPLE PASTA WITH PARMESAN
Another stupidly simple side dish made from pantry staples that my family asks for over and over. The savory combination of flavors goes well with many other foods. It can be made with freshly-cooked pasta or with leftover, cooked pasta that has no sauce on it. I've included options for some variations to create not-so-simple but extremely tasty side dishes or complete, one-dish meals by adding ingredients you probably have on hand.

Steps:
- Put pasta into a microwavable dish large enough to give you a little room for stirring and tossing.
- Dot pasta with butter or drizzle with olive oil.
- Sprinkle Parmesan over top. Add plenty of fresh-ground, black pepper.
- Heat in microwave on high 3 to 5 minute at a time, stirring frequently, until thoroughly hot.
- Serve, passing the pepper grinder at the table.
- You can add 1-2 cups of cooked meat (chicken, turkey, and ham are all especially good), and/or 1-3 cups pre-cooked, chopped vegetables. I particularly recommend broccoli, zucchini, onions, and/or green, snap, or snow peas.
PARMESAN VEGETABLE TOSS
The first time I made this salad it was with two others for a Fourth of July party years ago. This one disappeared long before the other two! It's great for feeding a hungry crowd. - In a large bowl, combine the Miracle Whip, cheese, sugar, basil and salt. Add broccoli, cauliflower, onion, and water chestnuts; toss. Cover and refrigerate for several hours or overnight. , Just before serving, place lettuce in salad bowl and top with vegetable mixture. Sprinkle with bacon. Top with croutons if desired.

- First, bring a large pot of salted water to a boil, add the pasta and cook it for 4-5 minutes only. Don't cook it any longer, drain and set aside. Add a drizzle of olive oil to stop the pasta stick once drained.
- Meanwhile, make the tomato sauce. Fry the chopped garlic with the basil, fennel seeds and dried oregano with 1/2 tbsp of olive oil until fragrant. Add the passata rustica (chunky sieved tomatoes), a good pinch of salt and pepper and let it simmer for 10 minutes.
- As the tomato sauce is simmering make the cheese sauce by making a roux with butter and flour in a seperate saucepan (see notes).

- When the pasta is done, reserve a mug full of the pasta water. Drain the pasta then return to the pot.
- Add the half and half to the pasta along with the Parmesan. Start stirring the pasta until it a smooth sauce starts to form. This might take several minutes – I like to use a set of tongs to toss it all together. If needed, use some of the reserved pasta water to loosen the sauce. Season to taste with salt and pepper.
