RUSTIC GARLIC AND HERB BREAD ABM
A wholesome, rustic bread to serve with pasta, soup or for making sandwiches. From Jennie Shapter's Bread Machine Cookbook (one of my favorites).

Steps:
- Add ingredients to the bread machine, according to the manufacturer's directions.
- I mix all my flours, gluten and grains together, well, before adding to the bread machine.
- Add the salt in one corner of the pan and the sugar in another.
- Make a well in the flour and add the yeast in the middle.
- Set on basic setting with normal crust and check at the end of 5 minutes to see if more liquid or flour is needed.
- This makes a one pound loaf.

RUSTIC ROUND HERB BREAD

- In a large bowl, combine the first nine ingredients. Cut in butter until mixture resembles fine crumbs. In another bowl, whisk the egg, yogurt and milk. Stir into dry ingredients until just moistened. , Spoon into a 9-in. round baking pan coated with cooking spray. Sprinkle with poppy seeds. , Bake at 400° for 20-25 minutes or until golden brown. Cool in pan on a wire rack. Cut into wedges.

ITALIAN GARLIC AND HERB SEASONED PANINI - FOCACCIA BREAD (ABM)
This is an adaptation from a recipe posted on hungrybrowser.com in the Uncle Phaedrus section. I used my breadmaker to put the dough together and then hand shaped the loaves for baking. To use for a panini sandwich, slice each loaf in eighths (rendering 4 sandwiches per loaf), fill with your favorite ingredients and use your panini maker or grill with press to prepare a delicious sandwich. Mangia!

Steps:
- Prior to placing ingredients in breadmaker, fill the container with water.
- It needs to accomodate at least 11 cups of water.
- If it has that capacity, you can dump the water out and proceed.
- The dough makes a large amount and does rise to the top of the container.
- Place all ingredients in bread machine in order suggested by the manufacturer.
- If desired, you can hold off placing the herbs into the machine and wait until forming the loaves to place on top of bread.
- Set machine to dough cycle.
- When cycle is complete, punch dough down and knead a few times on a lightly floured surface (the dough should remain somewhat sticky).
- Place dough in oiled bowl, turn to coat with the oil, cover, and allow to rise again until doubled, about 1 hour.
- Ten minutes prior to rising is finished preheat oven to 400°F Lightly grease two baking sheets (I line them with Silpat sheets).
- After dough has risen the second time, press air out and divide dough in half (dough will still be sticky, do not use more flour).
- Press (using your hands) each half with a light touch into approximately an 8 x 11-inch rectangle on the individual prepared pans (rustic looking is okay, but don't press too flat).
- Brush with olive oil.
- If you haven't already added the herbs into the dough, scatter garlic, oregano, rosemary, marjoram, peppers, and parsley over surface of each and press lightly.
- Sprinkle with salt.
- Bake about 20-30 minutes or until a light golden.
- Serve warm or slice to use for a panini sandwich and grill.
- *Notethat preparation time doesn't include about 3 hours of rising time.

OLIVE FOUGASSE (RUSTIC BREAD) -- ABM
This olive-rich is rolled into a rectangle and then slashed with a knife to form a traditional pattern. The sunburst is popular, or a tree branch, a moon, or a sunflower. Steps:
- Combine the yeast, flour, sugar, salt, milk, water and olive oil in the bread machine pan and process on the dough setting. At the end of the cycle, turn out the dough onto a lightly floured board and knead in the olives. Turn the bread pan over the dough and let it rest for 15 minutes.
- Divide the dough into two equal pieces and roll each piece into an 8x10" rectangle. Place each rectangle on a parchment paper covered baking sheet. Make two rows of 6 to 8 evenly spaced diagonal slashes, leaving 1" at the border and in between the rows, cutting all the way through the dough. Open these slits by pulling them well apart with your hands (this traditional pattern looks like a leaf.) Coat the flatbreads with olive oil and set aside to rise until the dough is puffed, about 20 minutes.
- Preheat the oven to 375°F.
- When loaves are puffy, bake for 15 to 20 minutes, or until golden brown. Cool on a rack.
OH MY GARLIC! BREAD (ABM)
If you want to pinpoint any suspected vampires be sure to have this bread circulating at the next get together, it will do the trick better than Van Helsing. On the other hand if your a true garlic lover this one is for you. It makes a wicked grilled ham and cheese sandwich! The 10 min is just for the measuring and getting it into the machine, after that it's up to you and your bread maker and how you want to finish it. A beautiful braided loaf will take longer to make than letting it bake in the machine of instance.

RUSTIC ITALIAN BREAD ABM
This is the one I make all the time. I use the bread machine to make my dough and then bake in oven to get that rustic look. It rises nice and the crust and texture is great--give it a try. Prep time includes the total bread machine and rising time. You can also make this in your KitchenAid mixer instead of the bread machine, using you kneading hook. Oil bowl cover let rise in a draft free spot.

Steps:
- Add flour, oil, salt, sugar, yeast and water to your bread machine according to its instructions.
- Set on dough setting.
- Always follow your machines instructions, when mixing open it and keep check on the dough. Dough should be in a nice round soft sticky to the touch ball. If it is not add more water, or add flour which ever is needed.
- Remove when signal beeps and cycle is done.
- Preheat oven to 375°F.
- Sprinkle cornflour or cornmeal onto a baking sheet.
- Punch dough down and form into a long or oval loaf.
- Cover and let rise for 25 more minutes.
- It should be doubled again by this time.
- Uncover and slash the top with a sharp knife or razor.
- Brush all over with the beaten egg white.
- Bake 25 minutes to 35 minutes, until hollow sounding when tapped on bottom.
- Cool.
