WONTON SOUP

6 cups reduced-sodium chicken broth
1 cup shredded cabbage
1/2 cup shredded or diced cooked pork
1 tablespoon soy sauce
1 tablespoon sesame oil
16 wonton wrappers
1/4 cup chopped scallions

Steps:

  • Place broth and cabbage in a large saucepan and set pan over medium-high heat. Bring to a simmer.
  • Meanwhile, in a food processor, combine pork, soy sauce and sesame oil. Pulse 3 or 4 times until the pork is finely minced but not a paste.
  • Arrange 16 wonton wrappers on a flat surface. Spoon filling onto the center of each wrapper, to within 1/4-inch of the edges (about 1 teaspoon per wrapper). Wet your fingers with water and pull up corners of the wontons to create individual "purses". Pinch the edges together (with wet fingers) to seal.
  • Place stuffed wontons in simmering broth. Cook 5 minutes, until wontons are tender and translucent. Remove from heat and stir in scallions.

Reserved cooking liquid from Braised Beef Tacos
2 tablespoons canola oil
1 medium onion, sliced
4 tablespoons unsalted butter, softened
1 small loaf French bread, sliced on the bias into 8 slices
Reserved 1 1/2 cups shredded beef from Braised Beef Tacos
Reserved 1/2 cups Monterey Jack cheese from Spicy Fajita Soup

Steps:

  • In a small pot over medium heat, add the reserved cooking liquid and cook until it is hot.
  • Add the canola oil to a saute pan over medium heat. Add the onions and cook 20 minutes on medium-low to caramelize.
  • Butter 1 side of each slice of bread. Layer the beef, onions, and cheese evenly over the plain side of 4 bread slices. Top each with the other 4 slices of bread, buttered-side up.
  • Heat a grill pan over medium-high heat and grill the sandwiches until golden brown on both sides and the cheese is melted, 4 to 5 minutes per side.
  • Serve the sandwiches with the hot beef jus for dipping.

Meat from 1 spare rib leftover from Sweet and Sticky Spareribs with Fried Noodles, finely chopped, recipe follows
1 carrot, grated
1 scallion, thinly sliced
12 wonton wrappers leftover from Fried Noodles
2 (14.5-ounce) cans chicken broth
1 cup broccoli, leftover from Crispy Orange Beef and Broccoli recipe
1 tablespoon canola oil
2 tablespoons barbeque sauce
2 tablespoons sweet chili sauce
3 tablespoons white vinegar
1/4 cup soy sauce
2 teaspoons finely chopped ginger
1 tablespoon chopped garlic
1 cup pineapple juice
1/4 cup brown sugar
Salt and freshly ground black pepper
2 1/2 pounds pork spareribs
1/2 (12-ounce) package wonton wrappers, reserve 12 for round 2 recipe, Wonton Soup
1 cup canola oil

Steps:

  • Combine the meat from the spare rib, the carrot and the scallions in a small bowl. Make wontons by placing a tablespoon of filling in the center of each wrapper. Dampen the edges with water, then fold in half, point to point, and pinch together. Wrap the outside corners around and seal together.
  • Heat the chicken broth in a medium saucepan over medium heat. When the broth has come to a simmer, add the wontons and the broccoli. Cook for 3 minutes, then ladle into serving bowls and serve hot.
  • In a small bowl whisk together all the ingredients for the marinade. Cut the spareribs into individual ribs and put in a resealable plastic bag. Pour the marinade into the bag and toss to coat. Put the bag into a large bowl and refrigerate to let marinate for at least 2 hours or as long as overnight.
  • Preheat the oven to 300 degrees F. Remove the spare ribs from marinade and arrange on a baking sheet, cover with foil and poke holes in the foil to vent. Reserve the marinade. Bake until the ribs are tender, about 1 1/2 hours.
  • In the meantime, pour the reserved marinade into a small saucepan and bring to a boil over medium heat. Reduce the heat and simmer the mixture until thick, about 30 minutes. Set aside.
  • After 1 1/2 hours, remove the foil from the spareribs and raise oven temperature to 400 degrees F. Baste the ribs with the reduced marinade and roast in oven for 5 minutes. Turn and baste the ribs again with the remaining sauce and roast for an additional 5 minutes. Remove from the oven and arrange the ribs on a serving platter. Serve hot with Fried Noodles.
  • Fried Noodles:
  • Heat 1 cup canola oil in a medium heavy saucepan, to about 350 degrees F. Cut the wonton wrappers into 1/2-inch wide strips. Fry in batches until golden brown and drain on plate lined with a brown paper bag or paper towels.

1 medium yellow onion, sliced
1 head green cabbage, shredded (reserve half for Online Round 2 Recipe Cabbage and Pear Slaw)
Kosher salt, to taste
Freshly ground black pepper, to taste
1 quart chicken broth
1/2 cup apple cider, reserved from Frosty Sparkling Apple Cider
Reserved dumplings from the Parsley Dumpling

Steps:

  • In a medium pot over medium heat, add the oil. When it is hot, add the onion and cook until it begins to soften, 2 to 3 minutes. Add the cabbage, season with salt and pepper, and cook until the cabbage begins to soften, about 3 to 4 minutes. Add the chicken stock and cider, bring it to a boil, reduce to a simmer, and cook until the cabbage and onions are soft, about 8 to 10 minutes. Add the dumpling and heat through. Taste and adjust seasoning with salt and pepper.

2 green onions, minced
1 large egg, beaten
2 teaspoons hot sauce
ground black pepper to taste
1 (16 ounce) package wonton wrappers
2 (32 ounce) cartons chicken broth
1 (1 inch) piece fresh ginger, grated
5 green onions, sliced
1 dash soy sauce, or to taste

Steps:

  • Mix pork, green onions, egg, and hot sauce for wontons together in a bowl; season with pepper. Refrigerate for 30 minutes.
  • Place a heaping teaspoon of pork mixture in the center of a wonton wrapper. Moisten edges with water. Fold the bottom point to the top point, creating a triangle, and pinch to seal. Fold the outer 2 points in toward the center, pinching together. Repeat to form remaining wontons.
  • Pour chicken broth in a pot and bring to a rolling boil. Add grated ginger. Add wontons and cook until they float to the surface, indicating they are ready, about 6 minutes.
  • Serve, garnished with green onions and soy sauce.

The recipe I modified to make this version (from Favorite Brand Name Soup) called for making the wontons 12 at a time. I liked the idea of making more ahead of time so I can throw the soup ingredients together in a jiffy and the wontons are already made. My husband brags about this soup and asks me to make it special for him. This soup for two is so easy and delicious, you'll be craving it yourself!

½ pound ground pork
½ cup finely chopped, drained water chestnuts
2 tablespoons soy sauce
2 egg whites, lightly beaten
2 teaspoons minced fresh ginger
1 clove garlic, minced
48 wonton wrappers
1 (32 fluid ounce) container chicken broth
1 tablespoon soy sauce
1 ½ cups chopped kale
½ cup sliced green onions
1 tablespoon dark sesame oil
1 small carrot, grated

Steps:

  • Combine ground pork, water chestnuts, soy sauce, egg whites, ginger, and garlic for wontons in a bowl.
  • Place 1 wonton wrapper on a work surface with a point facing you so it looks like a diamond. Dip your finger in water and lightly moisten the bottom 2 edges of the wonton wrapper. Place 1 teaspoon of meat filling near the point closest to you. Pull the further corner over the meat to the corner nearest to you and seal the point. Gently squeeze the air out of the wonton with both hands while sealing the edges. Set the finished wonton on dry parchment paper. Repeat until the meat filling or the wontons are gone.
  • Combine chicken broth and soy sauce for soup in a saucepan and bring to a boil. Reduce heat to medium; add 12 wontons, stirring gently so the wontons don't stick to each other, and cook for 4 minutes. Stir in kale and green onions and cook until heated through, 3 to 5 minutes. Remove pan from heat and stir in sesame oil and carrot. Ladle into two bowls and serve.

½ pound boneless pork loin, coarsely chopped
2 ounces peeled shrimp, finely chopped
1 teaspoon brown sugar
1 tablespoon Chinese rice wine
1 tablespoon light soy sauce
1 teaspoon finely chopped green onion
1 teaspoon chopped fresh ginger root
24 (3.5 inch square) wonton wrappers
3 cups chicken stock
⅛ cup finely chopped green onion

Steps:

  • In a large bowl, combine pork, shrimp, sugar, wine, soy sauce, 1 teaspoon chopped green onion and ginger. Blend well, and let stand for 25 to 30 minutes.
  • Place about one teaspoon of the filling at the center of each wonton skin. Moisten all 4 edges of wonton wrapper with water, then pull the top corner down to the bottom, folding the wrapper over the filling to make a triangle. Press edges firmly to make a seal. Bring left and right corners together above the filling. Overlap the tips of these corners, moisten with water and press together. Continue until all wrappers are used.
  • FOR SOUP: Bring the chicken stock to a rolling boil. Drop wontons in, and cook for 5 minutes. Garnish with chopped green onion, and serve.

1 tablespoon oyster sauce
1/2 teaspoon sesame oil
16 wonton wrappers
1 large egg, beaten
2 quarts cold water
2 to 3 ounces low-sodium chicken base
One 1-inch piece ginger, thinly sliced
2 cloves garlic, smashed
3 scallions, smashed and cut into 2-inch pieces
3 whole black peppercorns or a pinch of freshly ground black pepper
1 teaspoon oyster sauce
2 to 3 drops sesame oil
1/2 to 1 teaspoon kosher salt
Kosher salt
4 ounces noodles, such as spaghetti or dried instant ramen
2 scallions, thinly sliced
2 tablespoons cilantro leaves

Steps:

  • For the wonton filling: Place the shrimp, pork, 1 teaspoon salt, 1/2 teaspoon pepper, the oyster sauce and sesame oil in a medium bowl and mix with your hands to combine. Let marinate while you prepare the stock. (If time allows, marinate for at least 20 minutes and up to overnight; refrigerate if marinating for more than 2 hours.)
  • For the broth: Bring 2 quarts water to a simmer in a large saucepan or pot and whisk in the chicken base until completely dissolved. Add the remaining broth ingredients and let simmer for at least 5 minutes.
  • Continue making the wontons: Bring a large pot of salted water to a boil. Place about 1 teaspoon of the filling in the center of 1 wonton wrapper. Moisten the edges with some of the beaten egg. Pinch in all the sides to make a small sack, enclosing the filling. Transfer to a plate. Repeat with the remaining filling and wrappers.
  • For the noodles: Add the noodles to the boiling water and cook according to the package directions. During the last 3 to 5 minutes of cooking time, add the wontons and continue to boil until the wontons are cooked through and float to the top. Drain the noodles and wontons.
  • For the assembly: Ladle 2 cups of the broth into each of 4 deep bowls. Divide the noodles and wontons among the bowls. Garnish with the scallions and cilantro.
