SWEET POTATO CASSEROLE ROSES



Sweet Potato Casserole Roses image

A stunning additional to the Thanksgiving table, this bundle of rose-shaped sweet potatoes will enliven the holidays.

4 medium sweet potatoes
3 tablespoons unsalted butter
1 tablespoon sugar
1/2 teaspoon cinnamon
1 pinch salt
1/2 sheet puff pastry (store-bought)
1/4 cup marshmallow cream
20 mini marshmallows
confectioners' sugar (sifted for topping)

Steps:

  • Slice sweet potatoes thinly (best to use a Mandoline).
  • In a bowl, combine unsalted butter, sugar, cinnamon, salt; mix well.
  • Pour the mixture over the sliced sweet potatoes; make sure they are all well-coated.
  • Place the sliced sweet potatoes in the microwave for approx 20-30 seconds until soft so it rolls easily (add more time in the microwave if needed).
  • On a lightly floured surface, roll out the pastry.
  • Using a pizza cutter or knife, cut dough in half vertically then horizontally creating 1 inch by 5 inch strips.
  • Arrange 15-20 sliced sweet potatoes into an straight row overlapping the edges.
  • Starting from the first slice you laid down, roll the lined up sweet potatoes forming a rose-looking shape.
  • Brush a strip of the pastry with egg wash then wrap it around the base of the sweet potato rose flower.
  • Brush butter in a casserole pan.
  • Lay two slices of sweet potato on the bottom, creating a base for each rose.
  • Add a dollop of marshmallow fluff on top of each sweet potato base.
  • Place each rose on the base, the marshmallow fluff acting as an adhesive.
  • Bake at 400F for 35-40 minutes or more until the potatoes are baked well.
  • After it cools, place mini marshmallows around the roses and top with confectioners' sugar.

We love how these sweet potatoes are prepared. Cutting into chunks and not mashed, gives the potatoes a bit of extra texture. The sweet sauce poured on top is amazing! Of course, we had to top with a bit more marshmallows. This will be an impressive side dish at your holiday gathering.

8 large sweet potatoes
3/4 c brown sugar, firmly packed
3 Tbsp butter
1 pt whipping cream
4 Tbsp flour
1 tsp salt
1 1/4 c marshmallows, mini

Steps:

  • 1. Boil potatoes and check to see when they are just about done (you don't want them mushy). You will have to take each potato out of the water as they are cooked. Cut in half and peel. Then let them cool or cool overnight. Cut into 1-inch pieces and place in a buttered 9 x 13-inch baking dish.
  • 2. In the meantime, melt butter in a pan. Add flour and salt make a light roux. Then add the cream, stirring well to thicken. Now add brown sugar and the marshmallows and melt them in the sauce.
  • 3. When done, pour over the potatoes and place in a 350* degrees oven and bake until warmed through. You can put some marshmallows on the top of the potatoes if you like. ENJOY!

5 medium sized yams
8 tbsp salted butter
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground clove
1/4 tsp ground ginger
1 cup granulated sugar
1/4 cup brown sugar
1 tbsp pure vanilla extract (not imitation)

Steps:

  • Preheat the oven to 350 F.
  • Wash the yams.
  • Peel, then chop the yams ( make sure that they are about 1/2 inch thick.)
  • Place the yams into a 9x13 bake dish.
  • Place the butter into a medium sized pot, then melt it over medium heat.
  • Once the butter is melted, sprinkle in the white & brown sugar, ground cinnamon,ground nutmeg, ground ginger, and ground clove.
  • Turn the stove off, mix the ingredients, then add in the vanilla extract.
  • Pour the candied mixture over the yams, and try to coat all the yams with the candied mixture.
  • Next, cover the bake dish with foil, then bake the yams in the oven for 30 minutes.
  • Remove the yams from the oven, and baste them with the candied mixture.
  • Cover the yams, and bake them for another 15-20 minutes.
  • Remove the yams from the oven, and let them sit for about 10 minutes before serving.
  • Enjoy!

2 pounds sweet potatoes (3 to 4 medium sweet potatoes)
2 tablespoons extra-virgin olive oil
Optional: 1 teaspoon chili powder or freshly ground black pepper, to taste
¼ teaspoon fine sea salt

Steps:

  • Preheat the oven to 425 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy clean-up.
  • Either scrub the sweet potatoes clean and pat dry, or peel them (I generally peel mine). To slice, use a sharp chef's knife to cut them into 1-inch thick rounds. Then, cut up each round to make 1-inch cubes. The "cubes" won't be perfectly even, but that's ok.
  • Place the sweet potatoes on the prepared baking sheet. Drizzle the olive oil on top. If using, sprinkle the chili pepper or several twists of freshly ground black pepper on top, followed by the salt. Toss until the sweet potatoes are all evenly coated in oil, and arrange them in a single layer.
  • Bake for 30 to 40 minutes, tossing halfway, until the sweet potatoes are tender and caramelizing at the edges. Serve while warm. Leftover sweet potatoes will keep in the refrigerator, covered, for about 4 days. Gently reheat in the microwave or oven if desired.

4 sweet potatoes (about 1.2kg), peeled
2 tbsp olive oil
sliced red onions, unpeeled garlic cloves, thyme sprigs or other veg or herbs of your choice (optional)

Steps:

  • Heat the oven to 230C/210C fan/gas 8. Chop the sweet potatoes into 2-3cm cubes.
  • Tip into a large, shallow roasting tin, drizzle with the oil and season with salt and pepper. If you're adding additional veg or herbs, such as sliced red onions, garlic cloves and thyme, tip these in as well. Toss everything together to coat in the oil, then roast for 20 mins. Toss again to ensure the potatoes cook evenly, and roast for another 15-20 mins until the potatoes are lightly browned on the outside and tender when pierced with a fork or knife.

ROSIE'S SWEET POTATO PIES

Found this in the Times-Picayune. It was reposted in response to a request who lost his copy of it from Hurricane Katrina's flooding. Too many treat the sweet potato the same as pumpkin when making pies. It has a different more subtle flavor that benefits from judicious use of only nutmeg to let its own glorious flavor shine through. Only difference between this & our own recipe is we roast rather than boil our sweet potatoes. Posted as printed in The Times-Picayune. NOTE - this can be mixed aheaad of time & stored in the fridge to be poured into prepared crusts when ready to bake (a great thing when the oven is full!).

3 lbs sweet potatoes (about 2 large ones)
1/2 cup butter, softened
1 (12 ounce) can evaporated milk (1 1/2 cups)
2 cups sugar

1 tablespoon vanilla extract
6 large eggs
4 unbaked 9-inch pie shells

Steps:

  • Scrub the potatoes and boil them until very tender, about one hour; drain.
  • (we roast ours in a 400 degree F oven until soft & the flesh sinks away from the papery skin & let them cool overnight - we find this caramelizes the natural sugars & lets us reduce the sugar in the recipe to 1 1/4 cups).
  • When cool enough to handle, peel the potatoes and place in the large bowl of an electric mixer. Add the butter, milk, sugar, nutmeg, vanilla and eggs. Beat until the mixture is smooth. (If the filling is made ahead of time, cover and refrigerate until ready to bake the pies.).
  • Preheat oven to 375 degrees. Pour the filling into the pie shells and bake until crusts are golden brown, 30 to 35 minutes. Serve warm or at room temperature, topped with ice cream or sweetened whipped cream, if desired.
