FRESH STRAWBERRY ROSE PIE



Fresh Strawberry Rose Pie image

Fresh strawberry pie bursting with ripe spring berries and a hint of floral rose, made with fresh strawberries held together with a binder of sweet strawberry jam, this pie is a perfect celebration of spring.

Number Of Ingredients 15

1 1/3 cups (6oz/170g) all-purpose flour
1/4 teaspoon kosher salt
1/8 teaspoon baking powder
1 stick (1/2 cup) very cold unsalted butter, cut into cubes
1 1/2 teaspoons apple cider vinegar
3 to 5 tablespoons ice water, as needed
2 1/2 to 3 pounds (about 4 pints) fresh strawberries, rinsed, dried and hulled
3/4 cup (5 1/4 ounces) sugar
2 tablespoons cornstarch
1/4 teaspoon fine sea salt
(*see note to substitute Sure-Jell low sugar pectin)
1/4 teaspoon calcium water (only if using Pomona's pectin)
1 tablespoon freshly squeezed lemon juice (from 1 lemon)
1 tablespoon rose water (optional)
fresh whipped cream, for serving

Steps:

  • To prepare crust:Place the flour, salt, and baking powder in the bowl of a stand mixer fitted with the paddle attachment. The colder the better for all the ingredients and tools.With the mixer on low speed, slowly add the cold butter a few cubes at a time, until the butter breaks up into pea-sized crumbs (any larger chunks you can break up with your fingers).Add the apple cider vinegar and one tablespoon of ice water at a time, mixing on low speed until it just barely comes together into a crumbly dough (you should be able to pinch a piece of dough and have it hold together). Knead the dough once or twice to form a ball, then form into a disc. Wrap tightly in plastic wrap and refrigerate for at least 1 hour or overnight.Preheat your oven to 350 degrees F. Let the crust come to room temperature for 20 to 30 minutes (it should be still cool but pliable).Roll out crust into a round large enough to fit into your pie pan with a 1-inch overhang. Gently transfer rolled out crust to pie pan, easing it into the pan so as not to stretch the dough. Trim any uneven edges so there is a nice even overhang around the entire pie.Fold the overhang under itself, then crimp as desired. Refrigerate for at least 30 minutes.Line pie with a piece of foil, lightly draping the foil over the crimped edges. Fill with granulated sugar to weight it down (pie weights work too, also dried rice or beans).Bake crust for 50 to 60 minutes or until lightly golden around the edges. Remove from oven and carefully lift out foil with weights. If the crust still seems underdone, pop it in the oven for another 10 minutes or so until golden brown and puffed. Place on a wire rack and let cool.For the Filling:Pick out about 8 ounces of the least-attractive berries; hull and cut in half. Process berries in a food processor until smooth, 20 to 30 seconds, scraping down bowl as needed. You should have a scant 1 cup purée.Whisk sugar, cornstarch, Pomona's pectin, and salt in a bowl and set aside.In a medium saucepan, stir together berry puree, lemon juice, rose water, along with calcium water (if using Pomona's pectin). Cook over medium-high heat, stirring constantly with heatproof rubber spatula, and bring to full boil. Add sugar-pectin mixture and stir vigorously until completely dissolved. Return to a boil, scraping bottom and sides of pan to prevent scorching, for 1 to 2 minutes to ensure that cornstarch is fully cooked; it will become very thick. Transfer to a small bowl and let cool to room temperature.Meanwhile, pick over remaining berries to find the most attractive ones; if you have any extra-large berries you can cut them in half, otherwise, leave them whole. Place in a large bowl.Pour glaze mixture over berries and fold gently with rubber spatula until evenly coated. Scoop berries into cooled pie crust, arranging them into a nice looking mound, rearranging as necessary and flipping berries so the cut sides are facing down.Refrigerate about 2 hours until fully set, then slice and serve. This pie is best enjoyed within 5 hours of chilling, topped with freshly whipped cream.

ONE PRE-MADE PIE CRUST BAKED AND SET ASIDE TO COOL
1/3 c cornstarch
6 c coarsely chopped strawberries (fresh or frozen)
1 c sugar
1/8 tsp salt
2 tsp butter
1/2 tsp vanilla or almond extract
1 1/4 c heavy cream

Steps:

  • 1. Bake your premade crust. In a small bowl, combine the cornstarch and 1/3 cup cold water stir to dissolve lumps set aside.
  • 2. In a medium saucepan combine chopped strawberries sugar and salt. Stir to combine and cook over medium heat until mixture comes to a gentle boil. Cook about 5 minutes until the berries create a little pool of sauce. Stir up the cornstarch and water mixture and add to the pan cook and stir often until the strawberry sauce boils again and thickens up about 4 or 5 minutes. Remove from heat and stir in the butter and vanilla. Set aside to cool to room temperatuare. Beat the heavy cream in a large bowl until very thick. Stir in gently the strawberry mixture and pile into the prepared cooled pie crust. Refrigerate 3 to 4 hours. This can be made with a graham cracker crust if you desire. If fresh strawberries are available I slice and serve the pie on top of them just to make it look pretty. Enjoy.

1 pre-made pillsbury pie crust (or graham cracker crust)
1/2 c cornstarch
6 c hulled and coarsely chopped strawberries
1 c sugar
1/8 tsp salt
2 tsp butter
1/2 tsp vanilla
1 1/4 c heavy cream

Steps:

  • 1. Use a 9 or 10 inch pie plate. Bake your pre-made crust and set aside. I also use graham cracker crust, depending on your preference and bake that also.
  • 2. In a small bowl combine cornstarch and 1/3 cup of cold water combine until lumps dissolve. In a medium saucepan, combine the chopped strawberries, sugar and salt. Stir to combine all and cook over medium heat until mixture comes to a gentle boil. Cook for 5 minutes. Restir the cornstarch and add it to the pan. Coof stirring often until the strawberry sauce boils again and thickens up about 4 minutes. Remove from heat, stir in the butter and vanilla, set aside to cool. Beat the cream in large bowl and is very thick and lucious holding its shape. Stir in the strawberry mixture gently into the cream and pile the filling into the crust. Put in refrigerator at least 3 or 4 hours. This pie should be eaten within 1 day.

1/2 pound (2 sticks) unsalted butter, cut into small cubes and kept cold
1 tablespoon sugar
1 teaspoon salt
2 1/2 cups all-purpose flour, plus more for rolling
1/4 cup cold water
1 cup sugar, plus more for sprinkling
1/2 cup all-purpose flour
1/2 cup old-fashioned rolled oats
2 tablespoons tapioca flour
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 pound strawberries, sliced thin
2 cups small diced rhubarb
2 tablespoons unsalted butter, diced into small cubes and kept cold
1 egg

Steps:

  • For the crust: In a food processor, combine the butter, sugar, salt and 1 1/2 cups flour. Mix on a medium setting until the mixture is crumbly, 25 to 35 seconds. Add the remaining cup flour and "pulse" 7 times. Move the mixture to a bowl and cut in the water with a pastry cutter until a dough forms. Roll the dough into a 6-inch log and cut in half. Set aside.
  • For the filling: In a bowl, mix together the sugar, flour, oats, tapioca flour, cinnamon and ginger. Add the strawberries, rhubarb and butter and mix until the fruit and butter is coated in the dry ingredients. Set aside and let stand for 30 minutes.
  • Preheat the oven to 350 degrees F.
  • On a floured surface, roll out half of the dough into a circle about 1/8-inch thick to fit a 9-inch pie pan. Carefully place the dough in the pie pan. Using a fork, "dock" the dough by poking it all over. Add the filling. Roll out the other half of the dough into a circle about 1/8-inch thick to cover the pie, then carefully place on top of the filling.
  • Trim the excess dough that drapes over the sides and pinch the top and bottom crusts together. Beat the egg in a small bowl, then brush the top of the crust with the egg wash and sprinkle with sugar. Poke six vent holes in the top with a fork.
  • Make an aluminum foil "skirt" and wrap around the outer edge of the crust and pie pan. Bake for 20 minutes.
  • Remove the aluminum foil skirt and continue baking until golden brown, another 20 minutes.
  • Let stand until set up, about 3 hours. The longer it stands, the better!

AUNT ROSE'S STRAWBERRY PIE

I must admit,as much as I love it, I had never made one from scratch before, until yesterday. I had made one with a jarred filling, but never from scratch. So with about 10 cookbooks in hand I looked at many...

1 1/4 lb fresh rhubarb, cut into 1/2 inch pieces(3 cups)
1 qt fresh strawberries, washed, hulled & quartered
4 Tbsp all purpose flour
1 1/4 c granulated sugar
2 large eggs, room temperature
1 tsp nutmeg
2 tsp vanilla bean paste, or vanilla extract
2 tsp lemon juice
2 Tbsp butter
1 pkg refrigerated double crust pie crust,(or make your own)
1 1/2-2 Tbsp white decorators sugar crystals, or use reg. sugar
1/4 c heavy whipping cream or (1 egg plus 1 tbs water beaten together)
4-6 c boiling hot water

Steps:

  • 1. PREHEAT OVEN TO 400 DEGREES F. This is the deep dish pie plate that I used.
  • 2. You will need about 1 1/4 pounds of fresh rhubarb.
  • 3. Trim and cut rhubarb into 1/2 inch pieces, should yield about 3 cups.
  • 4. Pour cut Rhubarb into medium size bowl,and cover with boiling water, and let sit for about 15 to 20 minutes, then drain.
  • 5. Wash hull and quarter 1 quart of fresh strawberries, then pour into a large bowl.Add drained rhubarb after the 15 to 20 minutes has elapsed.
  • 6. In a smaller bowl add the flour, sugar, nutmeg, eggs, vanilla bean paste OR VANILLA EXTRACT, & lemon juice.
  • 7. Beat till completely blended.
  • 8. Then pour mixture over the berries/rhubarb mixture, & carefully mix sugar mixture together with fruit. Then pour into prepared pie shell. Dot top with butter and then,
  • 9. Add top crust, and crimp edges of both top and bottom crust together. Brush top of crust with heavy whipping cream or egg wash, then sprinkle top with the decorators sugar or regular sugar, which ever you are using. Make 5-6 slashes in top of crust with sharp knife to allow steam to escape as it cooks.
  • 10. Place pie on cookie sheet, and bake in preheated 400 degrees F. oven and bake for 15 minutes, THEN REDUCE HEAT TO 350 DEGREES F. AND CONTINUE TO BAKE FOR AN ADDITIONAL 45 TO 50 MINUTES OR UNTIL GOLDEN BROWN HOT AND BUBBLY.
  • 11. Remove from oven and allow to cool then serve plain, or with whipped topping or your favorite ice cream.
