Rosemary garlic potatoes make for one delicious side. They are creamy on the inside and crispy on the outside.

2 lbs. russet or Yukon Gold potatoes, peeled and cut into 1-inch cubes
1 Tbsp. fresh minced garlic, about 3-4 cloves
1 Tbsp. fresh minced rosemary
1 1/4 tsp. kosher salt
1/2 tsp. fresh black pepper
3 Tbsp. olive oil

Steps:

  • Preheat the oven to 400 degrees F. Line a half-sheet pan with parchment paper and set aside.
  • In a large bowl, combine the potatoes, garlic, rosemary, salt, pepper, and olive oil. Toss until the potatoes are well coated.
  • Transfer the potatoes to a sheet pan and spread out into one layer. Do not overcrowd. Roast for 45-50 minutes or until crisp and tender. Toss around a few times during cooking in order to ensure even browning. Allow to cool slightly and serve immediately.

1 1/2 pounds small red or white-skinned potatoes (or a mixture)
1/8 cup good olive oil
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoons minced garlic (3 cloves)
2 tablespoons minced fresh rosemary leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, garlic and rosemary; toss until the potatoes are well coated. Dump the potatoes on a baking sheet and spread out into 1 layer; roast in the oven for at least 1 hour, or until browned and crisp. Flip twice with a spatula during cooking to ensure even browning.
  • Remove the potatoes from the oven, season to taste, and serve.

6 cloves garlic
2 sprigs rosemary
1/2 cup (1 stick) butter
2 pounds brown fingerling potatoes
2 pounds small purple potatoes
2 pounds small red potatoes
Kosher salt and freshly ground pepper
2 tablespoons minced fresh parsley

Steps:

  • Preheat the oven to 400 degrees F. Mince the garlic really finely, then strip the leaves off the rosemary sprigs and mince them finely, too.
  • Melt the butter in a small skillet over medium heat, then throw in the rosemary and garlic. Reduce the heat to low and simmer 10 minutes, or until the butter is totally infused.
  • Arrange all of the potatoes on baking sheets and toss with the butter mixture. Roast 35 to 45 minutes, or until the potatoes are tender and nice and golden brown. Arrange them on a large platter, add salt and pepper to taste and sprinkle the parsley over the top.

2/3 lb red potatoes (halved or quartered depending on size)
4 -6 cups water
1 garlic clove, crushed
2/3 tablespoon extra virgin olive oil
1 tablespoon fresh rosemary, finely chopped
1/4 teaspoon coarse sea salt
1/4 teaspoon fresh coarse ground black pepper
1 cup fresh spinach leaves, chopped
1/2 teaspoon flaked sea salt
1 teaspoon freshly grated parmesan cheese

Steps:

  • Preheat oven to 350°F.
  • Bring 4-6 c water to a boil in large saucepan. Add potatoes & boil 6-8 minutes.
  • Remove from heat & drain.
  • Drizzle with oil and toss. Sprinkle with garlic, rosemary, salt and pepper and toss to coat.
  • Place potatoes in single layer in shallow baking dish or pan. (I line mine with foil & spray with olive oil cooking spray for mess-free cooking!)
  • Roast, uncovered, 10 minutes. Turn & roast 10-15 minutes more until browned and tender throughout.
  • Remove from oven. Toss with spinach & return to oven 1-2 minutes until spinach has wilted.
  • Sprinkle with flaked sea salt & parmesan, and serve.

1/4 cup olive oil
Kosher salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees. In a large bowl, toss new potatoes and garlic cloves with rosemary. Toss with olive oil to coat lightly and add salt and pepper to taste. Lightly oil a sheetpan and spread potatoes out into one layer, cut side down. Roast for 30 to 45 minutes or until golden brown and tender. Remove from oven and let cool for 20 minutes before removing with a spatula. Serve hot or cold.

1 cup shredded parmesan cheese
3 tablespoons goose fat, or vegetable oil
1 tablespoon dried rosemary
1 tablespoon garlic, crushed
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 180°C (350°F).
  • Peel and quarter the potatoes.
  • Place in a bowl, add 2 tablespoons of the goose fat and mix so that the potatoes are evenly covered.
  • Mix in the parmesan, garlic, rosemary, salt, and pepper and ensure all potatoes are evenly covered.
  • Add 1 tablespoon of goose fat to a baking tray and cook for 10 minutes in the oven, making sure the oil is hot. Add the potatoes.
  • Cook for 1 hour, flipping every 15 minutes to ensure they are evenly browned.
  • Enjoy!

  • Place the potatoes and garlic in a shallow baking dish large enough to hold them in a single layer.

Steps:

  • Preheat oven to 450°F with a 4-sided heavy sheet pan in upper third.
  • Toss ingredients with 1 teaspoon salt and 1/2 teaspoon pepper. Spread in 1 layer on hot pan and roast 20 minutes. 1 tablespoon rosemary
12 cloves garlic, with their skins intact
Coarse salt and freshly ground pepper to taste

Steps:

  • Preheat the oven to 350 degrees. Peel away any damaged bits from the potatoes, leaving a generous amount of skin. Cut the potatoes in half, or quarters if they are large.
  • Pour the oil over the bottom of a baking dish large enough to hold the potatoes without crowding them in one layer. (You may need two dishes; a cast-iron pan will also do.) Add the potatoes, rosemary and garlic, season them with salt and pepper and stir them so they are coated with the oil. Bake for one to one-and-a-half hours, turning the potatoes from time to time.
