This is a sweet bread that seems quite fancy and is actually not much more work than a simple French loaf. I went to an Irish bakery once and they had apricot bread. In my imagination, this is the recipe I was thinking of so I made this up when the Irish bakery didn't read my mind.

1 ⅜ cups water
2 tablespoons olive oil
1 ½ teaspoons salt
½ cup dried apricots, quartered
4 cups bread flour
2 tablespoons chopped fresh rosemary
1 tablespoon brown sugar
2 teaspoons bread machine yeast

Steps:

  • Place water, olive oil, and salt into one side of a bread machine. Place 1/3 of the apricots on top of this fluid mixture with 2 cups of flour. Place more apricots in the middle of the flour, pour remaining flour on top, followed by remaining apricots. This will help weaker bread machines integrate the apricots.
  • Run French loaf cycle for a 2-pound loaf. Remove from the machine after the cycle is done, about 3 1/2 hours.

2 pork tenderloins (1 pound each)
1/2 cup seasoned bread crumbs
2 tablespoons olive oil
6 cups fresh broccoli florets
2/3 cup apricot preserves
1/4 cup white wine or chicken broth
2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
1/2 teaspoon salt
1/8 teaspoon pepper
5-1/3 cups hot cooked brown rice

Steps:

  • Cut each tenderloin crosswise into eight 1-in. slices. Place bread crumbs in a shallow bowl. Dip pork slices in crumbs, patting to help coating adhere. In a large nonstick skillet, heat oil over medium heat. Add pork in batches; cook 3-4 minutes on each side or until a thermometer reads 145°., Meanwhile, in a large saucepan, place steamer basket over 1 in. of water. Place broccoli in basket. Bring water to a boil. Reduce heat to maintain a simmer; steam, covered, 4-6 minutes or until tender., In a small saucepan, mix preserves, wine, rosemary, salt and pepper. Cook and stir over medium-low heat 3-5 minutes or until preserves are melted. Serve with pork, broccoli and rice.

4 cups all-purpose flour
2 tablespoons sugar
2 tablespoons baking powder
3/4 teaspoon salt
1-1/2 cups cold butter, cubed
1 cup chopped dried apricots
1 tablespoon minced fresh rosemary
4 large eggs, room temperature, lightly beaten
1 cup cold heavy whipping cream
TOPPING:
1 large egg, lightly beaten
2 tablespoons 2% milk
2 teaspoons sugar

Steps:

  • Preheat oven to 400°. Whisk together flour, sugar, baking powder and salt. Cut in cold butter until the size of peas. Stir in apricots and rosemary. , In a separate bowl, whisk eggs and whipping cream until blended. Stir into flour-butter mixture just until moistened. , Turn onto a well-floured surface. Roll dough into a 10-in. square. Cut into 4 squares; cut each square into 4 triangles. Place on baking sheets lined with parchment., For topping, combine egg and milk. Brush tops of scones with egg mixture; sprinkle with sugar. Bake until golden brown, 12-15 minutes. , Freeze option: Freeze cooled scones in resealable freezer containers. To use, reheat in a preheated 350° oven 20-25 minutes, adding time as necessary to heat through.

1 tablespoon margarine or butter, softened
3 cups bread flour
1 tablespoon sugar
1 1/2 teaspoons salt
1 teaspoon dried rosemary leaves
2 1/4 teaspoons yeast
2/3 cup dried, quartered apricots
cornmeal

Steps:

  • Measure carefully, placing all ingredients except apricots and cornmeal in bread machine pan in the order recommended by the manufacturer. Add apricots at the Raisin/Nut signal.Select Dough/Manual cycle. Do not use delay cycles.Remove dough from pan, using lightly floured hands. Cover and let rest 10 minutes on lightly floured surface.Grease large cookie sheet sprinkle with cornmeal. Shape dough into round loaf, about 5 inches in diameter and 3 inches high. Roll top of loaf on lightly floured surface place floured side up on cookie sheet. Cover and let rise in warm place 40 to 50 minutes or until 7 1/2 inches in diameter.Heat oven to 400°. Make slashes, 1/4 inch deep, in tic-tac-toe pattern on top of loaf, using sharp knife. Spray with water. Bake 10 minutes, spraying 3 times with water. Bake 20 to 25 minutes longer or until loaf is deep golden brown and sounds hollow when tapped. These have such a unique wonderful flavor that surprises everyone who tries them. The combination of the rosemary with the sweetness of the apricot is a great flavor. Great with coffee in the morning or makes a great dessert as well. Even more special if you can pick the rosemary right out of your garden.

3 1/2 cups of all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 1/2 tablespoons finely chopped fresh rosemary
1/2 cup unsalted butter, room temperature
3/4 cup sugar
3 eggs
1 teaspoon vanilla extract
3/4 cup dried currants or 3/4 cup dried apricot, chopped

Steps:

  • Preheat oven to 350. Mix flour, baking soda and salt in a bowl and set aside. Using an electric mixer and a large mixing bowl, beat butter and sugar together until light and fluffy, about 4 minutes. Add the eggs, one at a time, incorporating each egg fully before adding the next. Add the vanilla, and gently stir in the flour mixture until just combined.Stir in the dried fruit and rosemary.
  • Cut dough in half and shape into 2 logs (about 12 inches long and 1 inch thick).
  • Bake until just starting to brown at the edges, about 35 minutes. (keep an eye as not to over do, ovens vary, i didn't go the full 35 minutes) Let cool for a few minutes on baking sheets. While logs are still warm, cut each into 1/2 inch wide slices on the diagonal, place the slices back on the baking sheet (use 2 if necessary to hold the slices). Bake for additional 7 - 8 minutes, until the biscotti are crisp. Let cool for few minutes on baking sheets. Store in airtight container for up to 2 weeks.
