ROMESCO SAUCE

Romesco Sauce image

Romesco is a rich Spanish sauce of charred tomatoes and roasted red peppers, puréed and thickened with toasted almonds and bread. The flavors are further sharpened with the addition of raw garlic, vinegar, chile powder or red pepper flakes (adjust the heat to your liking). The result is a smoky, pungent sauce, one usually served with mild-mannered vegetables and fish. (Some Spaniards say that a grilled vegetable feast is just an excuse for eating romesco.) But the sauce is just as good on a piece of toast that's been brushed with olive oil and rubbed with yet more garlic. If you have the time, let the sauce stand for an hour at room temperature before serving, allowing the flavors to meld all the more.

Time 30m

Yield About 2 cups

Number Of Ingredients 12

1 large red pepper, about 1/2 pound, roasted, peeled, seeds and membranes removed
3 medium tomatoes or 4 Roma tomatoes (about 3/4 pound)
2 thick slices (about 2 ounces) baguette or country-style bread, lightly toasted
2 large garlic cloves, peeled
1/2 cup toasted almonds, or a combination of almonds and skinned roasted hazelnuts
1 to 2 teaspoons pure ground chile powder or red pepper flakes, to taste (pepper flakes are hotter)
1 tablespoon chopped fresh Italian parsley
1 teaspoon sweet paprika or Spanish smoked paprika (pimenton)
Salt, preferably kosher salt, to taste
Freshly ground pepper to taste
2 tablespoon sherry vinegar
1/4 to 1/2 cup extra virgin olive oil, as needed

Steps:

  • Preheat the broiler and cover a baking sheet with foil. Place the tomatoes on the baking sheet, and place under the broiler at the highest setting. Broil for two to four minutes, until charred on one side. Turn over and broil on the other side for two to four minutes until charred. Remove from the heat, transfer to a bowl and allow to cool. Peel and core.
  • Turn on a food processor fitted with the steel blade and drop in the garlic cloves. When the garlic is chopped and adheres to the sides of the bowl, stop the machine and scrape down the sides. Add the toasted almonds (or almonds and hazelnuts), bread and chile powder or flakes to the bowl and process to a paste.
  • Scrape down the sides of the bowl and add the pepper, tomatoes, parsley, paprika, salt and pepper. Process until smooth, and with the machine running, add the vinegar and olive oil in a slow stream, beginning with the smaller amount of olive oil and thinning out as desired. Process until well amalgamated, then scrape into a bowl.
  • Taste and adjust seasoning, adding salt or chile as desired. If possible, allow the sauce to stand for an hour at room temperature before using. Serve with fish and/or grilled vegetables, or on crostini.

SUMMER SALAD WITH ROMESCO VINAIGRETTE

SUMMER SALAD WITH ROMESCO VINAIGRETTE image

Categories     Salad     Vegetable

Yield 4 servings

Number Of Ingredients 17

For the vinaigrette:
1/2 cup romesco sauce (see recipe)
Juice of 1 lemon
2 tablespoons red wine vinegar
1 1/2 teaspoons Dijon mustard
3/4 cup extra virgin olive oil
Salt and freshly ground black pepper
For the salad:
1 bunch (about 5) medium red beets, tops trimmed leaving 1 inch of stem
4 or 5 small lita and/or golden zucchini squashes, trimmed and halved lengthwise or sliced into 1-inch rounds
1 bunch green garlic
1 pound new potatoes (1 to 2 inches in diameter)
Extra virgin olive oil
Salt
1 head tender leaf lettuce like red oak or deer tongue
4 hard-cooked eggs, shelled and halved lengthwise.
Prepare vinaigrette:

Steps:

  • In a food processor, combine romesco, lemon juice, vinegar and mustard. Process to blend. With processor running, slowly add oil. Season to taste with salt and pepper. Cover and refrigerate. 2. Prepare vegetables for salad: heat oven to 450 degrees. Place beets in a small roasting pan with a lid. Place squash in another small roasting pan. Trim firm green leaves from garlic, and slice stalk into 1-inch pieces, and halve or quarter bulb. Place in a third pan, with potatoes. Drizzle all pans with olive oil, season with salt, and toss to coat. Cover pan of beets, and place pans in oven. 3. Cook all vegetables until they are tender, transferring them to a platter as they are ready. Vegetables are tender when a knife passes easily through center. Squash should take 12 to 15 minutes; potatoes and garlic about 20 minutes. Beets will be tender in 45 minutes to one hour. Allow roasted vegetables to come to room temperature, but do not refrigerate. When beets are cool, peel and cut in two or in quarters. 4. To assemble salad: Whisk vinaigrette briefly to mix. Pour a few tablespoons into a mixing bowl, add lettuce, and toss. Place on one side of a large platter. Add a few more tablespoons of vinaigrette to bowl, add potatoes and garlic, and toss again. Place in a separate pile on platter. Add undressed squash, beets and eggs to platter. Drizzle with vinaigrette, and serve.

ROMESCO POTATOES

Romesco Potatoes image

Number Of Ingredients 20

1 1/2 pounds Yukon Gold potatoes
1/4 cup extra-virgin olive oil
4 to 5 cloves garlic, unpeeled
2 bay leaves
6 sprigs thyme, plus 2 teaspoons thyme leaves
1 cup romesco (recipe follows)
2 tablespoons chopped flat-leaf parsley
Kosher salt and freshly ground black pepper
5 ancho chiles
2 tablespoons raw almonds
2 tablespoons blanched hazelnuts
1 1/4 cups extra-virgin olive oil
1 slice country bread, about
1 inch thick
1/3 cup San Marzano canned tomatoes
1 clove garlic, chopped
1 tablespoon chopped flat-leaf parsley
1/2 lemon, for juicing
A splash of sherry vinegar
Kosher salt

Steps:

  • Preheat the oven to 400°F.
  • Place the potatoes in a roasting pan and toss well with 2 tablespoons olive oil, the garlic, bay leaves, thyme sprigs, and a heaping teaspoon salt. Cover tightly with aluminum foil and roast the potatoes about 50 minutes, until tender when pierced (the time will really depend on size, age, and variety of potatoes). When the potatoes have cooled, reserve the garlic, discard the bay and thyme, and crumble the potatoes into chunky pieces with your hands. Squeeze the garlic out of its skin and set aside.
  • Heat a large sauté pan over high heat for 2 minutes. (To get the potatoes nicely browned and crisp, don't overcrowd them. You may have to use two pans or brown them in batches.) Pour in the remaining 2 tablespoons olive oil, turn the heat to medium-high, and wait 1 minute more. Add the crumbled potatoes, and season with the thyme leaves, salt, and pepper. Sauté the potatoes 6 to 8 minutes until they are crispy on one side. (Don't try to move them or turn them if they are stuck to the pan; they will eventually release themselves-just be patient.) After they've browned nicely on the first side, turn them to let them color on all sides. Once they're nicely browned on all sides, spoon the romesco and reserved garlic into the hot potatoes. Toss and stir to coat them well. Taste for seasoning. Toss in the parsley. Or, if you're not ready to serve the dish yet, turn off the heat and leave the potatoes in the pan; then, just before serving, reheat for a few minutes and toss in the parsley at the last moment.
  • Preheat the oven to 375°F.
  • Remove and discard the stems and seeds from the chiles, and then soak them in warm water for 15 minutes to soften. Strain the chiles, and pat dry with paper towels.
  • Meanwhile, spread the nuts on a baking sheet and toast for 8 to 10 minutes, until they smell nutty and are golden brown.
  • Heat a large sauté pan over high heat for 2 minutes. Add 2 tablespoons olive oil and wait a minute. Fry the slice of bread on both sides until golden brown. Remove the bread from the pan and cool. Cut it into 1-inch cubes and set aside.
  • Return the pan to the stove over high heat. Add 2 tablespoons olive oil and the chiles and sauté for a minute or two. Add the tomatoes. Season with 1/2 teaspoon salt and cook 2 to 3 minutes, stirring often, until the tomato juices have evaporated and the tomato starts to color slightly. Turn off the heat, and leave the mixture in the pan.
  • In a food processor, pulse together the toasted nuts, garlic, and fried bread until the bread and nuts are coarsely ground. Add the chile-tomato mixture, and process for 1 minute more.
  • With the machine running, slowly pour in the remaining 1 cup olive oil and process until you have a smooth purée. Don't worry, the romesco will "break" or separate into solids and oil; this is normal. Add the parsley, and season to taste with lemon juice, sherry vinegar, and more salt if you like.

ROASTED CARROT ROMESCO

Roasted Carrot Romesco image

Romesco is one of Spain's classic sauces, typically made with bread and charred vegetables. I like to lighten it up by taking the bread out, adding more almonds, and swapping red peppers for carrots to give it an earthy dynamic. It's the perfect sauce to go along with just about anything, from grilled vegetables to fish.

Categories     condiment

Time 45m

Yield 8 servings

Number Of Ingredients 10

3 carrots
1 medium yellow onion
2 tomatoes
1 head garlic
1/2 cup extra-virgin olive oil, divided
1/4 cup sliced almonds
1/4 cup toasted whole almonds
Sea salt, to taste
1 teaspoon pimenton (smoked paprika)
2 tablespoons sherry vinegar

Steps:

  • Roast the vegetables: Heat oven to 550 degrees F, or as high as your oven will go. Leaving the skin on, cut the onion in half vertically and place in roasting pan, cut side down. Cut the carrots in half horizontally and add to pan. Slice tomatoes in half and add to pan, cut side down. Cut head of garlic in half horizontally, discard the woody outermost layer, and add to pan, cut side down. Drizzle ¼ cup olive oil over the vegetables and roast until soft and lightly charred, about 15 minutes.
  • Make the romesco: When the vegetables are roasted and cooled, remove the onion, tomato, and garlic skins and discard; add all the vegetables to the food processor. Deglaze the roasting pan by adding enough water to cover the bottom, heating to a low simmer, and scraping to release the brown bits (also known as "fond"). Meanwhile, pulse the vegetables in the food processor to a chunky mash. Add the sliced almonds, toasted almonds, salt, pimenton, vinegar, and 3 tablespoons of olive oil; pulse to combine.
  • Finish the romesco: Add half of the deglazed pan juices to the food processor and continue to pulse to combine; then season to taste with more salt. With the motor running, add the remaining tablespoon of olive oil to finish. Serve with grilled vegetables, as a dip, or as a vinaigrette by mixing a few tablespoons of romesco with one part vinegar and two parts oil.
