ROY'S DELICIOUS BBQ SAUCE/MARINADE



Roy's Delicious BBQ Sauce/Marinade image

I love this recipe. It is the only one that I make since a lake friend brought it to the lake with chicken soaked in it. Its delicious. I do not use as much salt as the recipe calls for because the other ingredients in the recipe are already salty so I just salt to taste. I think that the recipe actually calls for too much salt but I put the amount it called for so I wasnt altering the recipe.

1 1/2 cups ketchup
6 tablespoons minced onions
4 teaspoons celery seeds
3 teaspoons salt
1/4 teaspoon cayenne pepper
10 tablespoons Worcestershire sauce
6 tablespoons lemon juice
6 tablespoons salad oil (I use olive oil)
4 tablespoons honey
1 clove garlic, minced

Steps:

  • mix together and let come to a boil.
  • Let cool.

2/3 cup ketchup
1 tablespoon light brown sugar
1 tablespoon apple cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon ground cumin
1 teaspoon paprika
1 clove garlic, grated
Kosher salt and freshly ground black pepper

Steps:

  • For the marinade: Combine the ketchup, sugar, vinegar, Worcestershire, cumin, paprika, garlic, 1/2 teaspoon salt and a few turns of pepper in a large resealable plastic bag. Add 4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds), squeeze out the air, seal tightly and massage gently to coat the chicken with marinade. Refrigerate for 2 hours or freeze up to 1 month; defrost in the refrigerator overnight before cooking.
  • To cook: Remove the chicken from the bag and grill over indirect heat, covered, until cooked through, lightly charred and an instant-read thermometer registers 165 degrees F, 20 to 25 minutes.

1/2 cup Worcestershire sauce
1 cup extra-virgin olive oil
1 tablespoon black pepper
2 tablespoons onion powder
1 tablespoon garlic powder
2 tablespoons salt
1/3 cup lemon juice
1/4 teaspoon cayenne pepper
1/2 cup wine vinegar
3/4 cup brown sugar
2 tablespoons dry mustard
6 chicken breasts

Steps:

  • Combine all ingredients except chicken breasts. Add chicken breasts to marinade mixture and marinate chicken breasts in the refrigerator for 2 to 4 hours before grilling.
  • Preheat grill. Place chicken breasts on the grill and cook until chicken is opaque in center, flipping twice during cooking, about 15 minutes total.

MAUI TERIYAKI SAUCE MARINADE

My family likes to use this marinade for pork chops, pork ribs or basically any meat that you choose to grill on the BBQ. It has a nice flavor and is quick and easy to do. You can marinate over night or just an hour... of course like most things the longer the marinating the stronger the flavor. This can also be halved for smaller family meals (1/2 recipe covers 4 small pork chops nicely.) I hope you enjoy :)

1 cup brown sugar (you can substitute white sugar if that's all you have)
1 garlic clove, crushed
fresh gingerroot, peeled and sliced lengthwise (size & length of your thumb)
2 green onions, diced (the GREEN part)
1/2 teaspoon sesame seed oil

Steps:

  • Add first two ingredients into a large mixing bowl, stir until sugar is dissolved. Then add the remaining ingredients and stir well. Pour over whatever meat you wish, beef, pork or chicken cover and marinate anywhere from 2 hours to 24 hours.

3 tbsp plain flour
450g ray wing, cut into 2
50g butter
2 tbsp capers
small handful parsley leaves, chopped
1 lemon , ½ juiced and ½ cut into wedges

Steps:

  • Tip the flour onto a large plate or dish and season with salt and pepper. Dredge the fish in the flour until completely coated. Place a large frying pan over a high heat and add half the butter. When the butter is sizzling, lay the fish into the pan and cook for 4-5 mins on each side until golden, then transfer the fish to two plates and keep warm.
  • Working quickly, place the pan back on the heat with the remaining butter. When it's starting to foam and turn light brown, throw in the capers, then the parsley and sizzle for a moment. Squeeze in the lemon half and simmer everything for a moment longer. Season the buttery sauce in the pan with a touch of salt and pepper, then spoon half over each portion of fish. Serve with mashed potatoes and steamed spinach, and lemon wedges for squeezing over.
