If you can't find Bucheron, any other ripened goat cheese will work -- even thin slices from a goat-cheese log. And we like to use the dip leftovers over scrambled eggs or a frittata.

Number Of Ingredients 8

1/2 cup sliced almonds, toasted
1 clove garlic, peeled
1 to 2 slices rustic bread, torn into bite-size pieces (1 cup)
1 jar (12 ounces) roasted red peppers in brine, drained (1 1/4 cups)
1/4 cup extra-virgin olive oil
2 teaspoons sherry vinegar
Kosher salt and freshly ground pepper
6 ounces Bucheron, rind removed and discarded, sliced into 4 rounds (each about 1/4 inch thick)

Steps:

  • Preheat oven to 425 degrees. In a food processor, pulse 1/4 cup almonds with garlic until finely ground. Add bread, peppers, oil, and vinegar; puree until smooth. Season with salt and pepper.
  • Transfer mixture to a 1-quart baking dish. Top with cheese. Bake until bubbly, 15 minutes. Top with remaining 1/4 cup almonds; serve immediately.

1 10-ounce log goat cheese, at room temperature
4 ounces cream cheese, at room temperature
1/4 cup grated parmesan cheese
1/4 cup extra-virgin olive oil, plus more for brushing
Freshly ground pepper
8 small cocktail tomatoes (about 10 ounces), quartered
2 tablespoons chopped fresh chives
2 teaspoons balsamic vinegar
1 clove garlic, finely chopped
Kosher salt
Toasted baguette slices, for serving

Steps:

  • Preheat the oven to 400 degrees F. Combine the goat cheese, cream cheese, parmesan and 2 tablespoons olive oil in a food processor and season with pepper; puree until smooth. Brush a 1-quart baking dish with olive oil, then spread the cheese mixture in the dish, mounding it slightly higher around the edge than in the middle. Bake until golden and heated through, about 15 minutes.
  • Meanwhile, combine the tomatoes, chives, vinegar, garlic, the remaining 2 tablespoons olive oil and 1/2 teaspoon salt in a medium bowl. Spoon the tomato mixture on top of the dip. Serve with baguette slices.

ROMESCO DIP WITH GOAT CHEESE

1/3 cup olive oil
2 garlic cloves, crushed
2 tablespoons tomato paste
One 14-ounce jar roasted red peppers, drained and roughly chopped
2 pickled cherry peppers
3/4 cup slivered almonds
1/3 cup pepitas
1/4 cup sherry vinegar
1 teaspoon kosher salt
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
Handful parsley
8 ounces goat cheese
Baked Pita Chips
4 pitas, each cut into 8 triangles
2 tablespoons olive oil
1/2 teaspoon salt

Steps:

  • Heat the olive oil in a small skillet over medium heat. When hot, add the garlic and tomato paste. Immediately remove from the heat and stir to melt the tomato paste into the oil. (It's okay if it doesn't come together completely.) Set aside and let cool slightly.
  • Combine the red peppers, cherry peppers and brine, almonds, pepitas, vinegar, salt, paprika and cayenne in a food processor. Pour the tomato oil and garlic over top. Pulse a couple of times to combine the ingredients, then process until the mixture is smooth, about 1 minute. Add the parsley and process a few more seconds just to incorporate.
  • Place the romesco in a serving bowl. Crumble the goat cheese over the top and serve with baked pita chips, tortilla chips, crudite or a combination of all three.
  • Preheat the oven to 450 degrees F. Line 2 baking sheets with parchment paper.
  • In a bowl, toss the pita triangles, oil and salt together. Divide between the prepared baking sheets. Bake until crisp, 12 to 15 minutes. Remove and let cool slightly before serving.

CREAMY GOAT CHEESE, BACON AND DATE DIP



Creamy Goat Cheese, Bacon and Date Dip image

This appetizer is like a bacon-wrapped date in dip form - and every bit as luxe, sweet and simultaneously smoky as that sounds. Here, as you swipe crusty bread through the smooth cheese, you'll gather chunks of bacon and a bit of date, toffee-like from a quick fry in the meaty fat. You could embellish further, with nuts, chile or honey, or you could sip Champagne and dig in just as merrily - with friends hovering nearby for their turn.

10 ounces goat cheese, at room temperature
4 ounces cream cheese, at room temperature
2 tablespoons freshly squeezed lemon juice
Salt and pepper
5 ounces thick-cut bacon, cut in 1/2-inch thick
10 Medjool dates, pitted and cut into quarters lengthwise, or roughly chopped
Honey, red-pepper flakes, black pepper, flaky salt, toasted sliced almonds or chopped pistachios, for garnish (optional)
Crusty bread, grainy crackers, endive or fennel, for serving

Steps:

  • Heat oven to 400 degrees. In a medium bowl, stir together the goat cheese, cream cheese, lemon juice and a pinch each of salt and pepper. Transfer to a 1-quart baking dish or ovenproof skillet, and spread into an even layer. Bake until warmed through and bubbling, about 20 to 25 minutes.
  • Meanwhile, cook the bacon in a medium skillet over medium-low heat, stirring occasionally, until golden and crisp, about 10 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, then add the dates to the bacon fat in the skillet, and cook, stirring occasionally, until the insides are warm and the outsides blister, about 1 minute.
  • Top the baked cheese with the dates and bacon, and garnish as you wish. Serve at once.

2 medium tomatoes, chopped
½ small onion, chopped
2 tablespoons chopped fresh basil
1 tablespoon minced garlic
¼ teaspoon salt
¼ teaspoon ground black pepper
½ cup crumbled goat cheese
¼ cup shredded mild Cheddar cheese

Steps:

  • Mix tomatoes, onion, basil, garlic, salt, and pepper together in a small bowl. Refrigerate bruschetta for at least 1 hour to allow flavors to blend.
  • Remove bruschetta from the refrigerator and transfer to a small saucepan. Add goat cheese and Cheddar cheese. Cook over medium-low heat, stirring constantly, until cheese is melted and mixture is heated through, 15 to 20 minutes.
  • Transfer to a bowl to serve.
