Mac and Cheese Grilled Cheese with Bacon Two Ways image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 1h55m

Yield 4 servings

Number Of Ingredients 15

4 cups Easy Mac and Cheese, recipe follows
8 slices country white bread, buttered
4 slices American cheese
8 slices thick-cut smoked bacon, cooked
2 Roma tomatoes, sliced into 1/4-inch slices, optional
Hot sauce, such as Frank's, optional
8 ounces elbow macaroni
Kosher salt
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
3 cups milk
8 ounce processed cheese, such as Velveeta
1 1/2 cups shredded sharp yellow Cheddar
Splash hot sauce, or pinch of cayenne
Freshly ground black pepper

Steps:

  • Evenly spread the Easy Mac and Cheese in an 8-inch square baking dish. Cover the dish with plastic wrap and refrigerate until firm, about 1 hour. Cut the mac and cheese into 4 equal-size squares.
  • Preheat a griddle over medium-low heat. Place each mac and cheese square on a slice of bread, top with 1 slice American cheese and 2 slices bacon. Top with a second piece of bread and griddle the sandwich until golden and warm, about 4 minutes per side. Repeat with the remaining ingredients. Serve.
  • For the adults, toss the tomatoes in some hot sauce and add on top of the bacon before griddling your sandwich.
  • Cook the macaroni in a large pot of boiling salted water to al dente and drain.
  • Melt the butter in a medium saucepot over medium heat. Whisk in the flour and stir for a couple of minutes, making sure it's free of lumps and the flour taste is cooked out. Stir in the milk, bring to a simmer and cook over medium-low until thickened, about 5 minutes. Stir in the processed cheese and Cheddar until melted, add the hot sauce and fold in the macaroni. Sprinkle with salt and pepper.

Thai Red Curry Mac 'n' Cheese image

Provided by Aarti Sequeira

Time 35m

Yield 6 to 8 servings

Number Of Ingredients 12

Kosher salt
1 pound elbow macaroni
5 tablespoons butter
5 tablespoons all-purpose flour
1 (4-ounce) jar Thai red curry paste
2 cups whole milk
2 cups cream (alternatively, use 5 cups whole milk instead of both milk and cream)
8 ounces Monterey Jack cheese, grated
8 ounces Cheddar cheese, grated
3/4 cup panko bread crumbs
2 tablespoons butter, melted
Kosher salt and freshly ground black pepper

Steps:

  • For the mac 'n' cheese: Bring 4 quarts of water to a boil in a large pot. Salt generously, and then add the pasta and cook to box instructions, usually 6 to 7 minutes. Drain.
  • In another large pot, melt the butter over medium-high heat. Whisk in the flour and continue whisking until it deepens in color and releases a light toasted aroma, about 1 minute.
  • Whisk in the Thai red curry paste, and when fully combined, pour in the milk and cream (or all milk, if using). Bring to a boil, whisking constantly, and then turn down to a simmer. Simmer until the mixture thickens, whisking occasionally, about 5 minutes.
  • Off heat, whisk in the cheeses and stir until melted. Add the pasta and toss to combine.
  • Turn your broiler on.
  • For the crumb topping: Toss the panko with the melted butter and season with salt and pepper.
  • To assemble: Pour the mac 'n' cheese into a broiler-safe casserole dish, sprinkle with the bread crumb mixture, and broil until browned, about 1 minute.

SPICY SHRIMP MAC 'N' CHEESE

Spicy Shrimp Mac 'n' Cheese image

How do you take a special occasion treat like lobster mac and cheese and make it weeknight friendly? Just swap the lobster for shrimp! This skillet mac, made with an ultra-creamy white cheese sauce, gets tender, juicy butterfly shrimp baked right on top. Since we're not sticking to tradition, we've also bumped up the spice level with some fresh chiles - a simple twist any Chopped chef would love.

Provided by Food Network

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 12

Two 9-ounce packages frozen jumbo butterfly shrimp
Kosher salt and freshly ground black pepper
8 ounces radiatore pasta
3 tablespoons unsalted butter
1 Fresno chile, seeded and finely chopped
1/4 cup all-purpose flour
2 cups whole milk
1/4 cup freshly grated Parmesan
2 tablespoons mascarpone
Pinch of cayenne, plus more for serving
2 cups shredded Muenster cheese (about 8 ounces)
Chopped parsley, for serving

Steps:

  • Preheat the oven to 425 degrees F. Prepare the butterfly shrimp according to the package directions for the oven. Bring a large pot of generously salted water to a boil over high heat. Add the pasta and cook according to the package directions for al dente, about 10 minutes. Drain well and reserve.
  • Meanwhile, melt the butter in a large ovenproof skillet over medium-high heat. Add the chile and cook until just tender, 1 to 2 minutes. Whisk in the flour until completely moistened and bubbling, about 1 minute. While whisking continuously, slowly pour in the milk and continue to simmer until creamy and thickened, 2 to 3 minutes. Reduce the heat to medium-low and whisk in the Parmesan, mascarpone, cayenne and 1 teaspoon salt until smooth. Whisk in 1 1/2 cups of the Muenster cheese until completely melted and smooth. Use a rubber spatula to fold in the reserved pasta until evenly combined.
  • Top the mac and cheese with the remaining 1/2 cup Muenster cheese, then place the butterfly shrimp in a concentric circle on top, tails facing up. (You may need to shingle or overlap the shrimp slightly so they all fit in the skillet.)
  • Transfer the skillet to the oven and bake until the cheese is completely melted and the shrimp are warmed through, 4 to 5 minutes. Sprinkle with another pinch of cayenne and some chopped parsley.

1/2 cup white wine
1/2 cup white wine vinegar
1 tablespoon black peppercorns
1 large shallot, sliced
1/2 cup heavy cream
12 ounces high quality butter, cubed

Lobster shells (from above)
2 cups vegetable oil
1 tablespoon paprika
4 ounces high quality butter

  • Take the bodies from the lobster and place in a pot with 2 cups of vegetable oil and bring up to very hot almost frying and let sit for 10 minutes. Add 1 tablespoon paprika and let sit for 30 minutes and strain through a fine mesh sieve or coffee filter.
  • In a large saute pan, melt the butter and add the chilled lobster, when the lobster begins to warm add the mascarpone cheese and allow to melt, stirring constantly. GRILLED MAC AND CHEESE

Grilled Mac and Cheese image

Mac and cheese on the grill is going to be one of the tastiest side dishes you've ever had. Its over-the-top, cheesy, creamy flavor is loved by adults and children as well.

Provided by ~Mark~

Categories     Side Dish

Time 1h25m

Yield 8

Number Of Ingredients 8

1 (16 ounce) package elbow macaroni
1 pound bacon, chopped into 1/2-inch pieces
3 large onions, minced
4 cloves garlic, minced
1 quart whole milk
½ (8 ounce) package cream cheese
4 cups shredded sharp Cheddar cheese, divided
½ (6 ounce) package fish-shaped cheese crackers (such as Goldfish®)

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and set aside.
  • Set up an outdoor grill for indirect cooking over medium heat. For charcoal, use coals on one side of the grill. For gas, shut off one side of the grill.
  • Place an 8-quart cast iron Dutch oven over the hot side of the grill. Add bacon; cook and stir until it renders its fat, but doesn't crisp up, 5 to 7 minutes. Add onions and garlic; move the Dutch oven so only about half of the pot is over the heat. Cook and stir until onions start to become translucent, about 5 minutes. Pour in milk and cook until hot, but not simmering. Melt in cream cheese.
  • Stir in about a handful of Cheddar cheese at a time until 3 cups have been melted into the mixture. Move the Dutch oven to the cooler side of the grill. Stir in cooked macaroni. Crumble the cheese crackers over the top. Sprinkle with remaining 1 cup Cheddar cheese.
  • Close the lid of the grill and let cook until bubbly and reduced, about 40 minutes, rotating the Dutch oven every 5 minutes or so to keep from burning. Remove from heat and serve.
