This Oven Roasted Red Skin Potatoes recipe is one of the most simple and versatile side dishes that you can make. They're crispy on the outside, soft in the middle and perfectly seasoned to go with just about anything.

3 lbs Red Potatoes (washed and quartered)
3 Tablespoons Avocado OIl
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Italian Herbs (dried)
1 tsp Salt
1 pinch Pepper (to taste)

Steps:

  • Preheat the oven to 425 degrees.
  • Place potatoes in a large bowl or a ziplock bag and drizzle them in 3 tablespoons of avocado oil. Toss the potatoes until evenly coated, then add the garlic powder, onion powder, Italian herbs, salt and pepper. Toss again until the potatoes are evenly coated.
  • Remove potatoes from the bowl or ziplock bag onto the baking sheet, squeezing out as much of the seasoning from the inside of the bag as possible. Place the potatoes on an even layer on the baking sheet.
  • Add potatoes in a bowl and drizzle with avocado oil. (Or you can use a Ziplock bag) Toss potatoes until evenly coated. Add Garlic Powder, onion powder, Italian Herbs, salt and pepper, and toss again.
  • Bake at 425 degrees for about 20 minutes, or until the edges of the potatoes begin to brown. Using a spatula, turn the potatoes and cook for another 15-20 minutes so the other side can brown.
  • Once the potatoes are soft on the inside and crispy golden brown on the outside, remove from the oven and season with additional salt and pepper to taste. Serve immediately and enjoy!

1 pound bulk pork sausage
1 medium onion, chopped
1/4 cup butter, melted
2 cups shredded cheddar cheese

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce the heat; simmer, uncovered, until tender, 8-10 minutes. Meanwhile, crumble sausage into a large skillet; add onion. Cook over medium heat until meat is no longer pink; drain if necessary. , Drain potatoes; arrange in an ungreased 13x9-in. baking dish. Drizzle with butter. Add the sausage mixture and stir gently. Sprinkle with cheese. , Bake, uncovered, at 350° until cheese is melted, 5-7 minutes.

2 pounds red potatoes, halved
⅓ cup olive oil

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • In a large plastic bag, combine the soup mix, red potatoes and olive oil. Close bag, and shake until potatoes are fully covered.
  • Pour potatoes into a medium baking dish; bake 40 minutes in the preheated oven, stirring occasionally.

Mmm...cheesy goodness. This is especially good on those cold days. I got this recipe from my mom and her best friend a couple of years ago and have been enjoying it ever since.

Number Of Ingredients 4

1 (1 lb) package sausage, sliced (the kind that comes in two curved links)
5 large potatoes, peeled and thinly sliced (or as much as you would like)
Nice & Cheesy cheese (or you could use Velveeta, use as much as you would like. I use about half a small box)
2 tablespoons vegetable oil

Steps:

  • Preheat oven to 375°F.
  • Put oil in skillet and place over medium heat until hot.
  • Brown sausage on both sides.
  • Place sausage in between layers of paper towels to get out as much of the grease as possible.
  • Spray deep baking dish with Crisco and place sausage into it.
  • Brown potatoes, (but do not fry until done) in the sausage grease left in skillet.
  • You may need to add a bit more oil.
  • Follow the same paper towel method as you did in step #3. This time with the potatoes.
  • Place potatoes on top of sausage in deep baking dish.
  • Bake at 375°F until potatoes are soft (about 45 minutes). Check often, as not to burn.
  • Place a layer of sliced cheese over top when potatoes are soft.
  • Put back in the oven until cheese is melted (about 5 minutes).
  • Serve and enjoy.

If you have never made Roasted potatoes, you will wonder why after using this simple & easy recipe....

3-4 lb red skin potatoes quartered or eights
1/3 c extra virgin olive oil (evoo) 5 tablespoons
1 Tbsp granulated garlic (good quality)
1 Tbsp chopped chive,optional
1 1/2 Tbsp steak seasoning (like montreal)

Steps:

  • 1. Preheat oven to 425 degrees F. Use 1/4 cup olive oil for 3 pounds potatoes or 1/3 cup for 4 pounds potatoes. Spray a jelly Roll pan with cooking spray and set aside till needed.
  • 2. Wash quarter small potatoes and cut the larger ones into eights, for uniformity in size. Then place on paper towel and dry so potatoes will be crisp when roasted.
  • 3. Add to a large bowl, the toss in the spices, olive oil and herbs and toss to coat evenly on all sides,
  • 4. Spread into a single layer on prepared baking pan. Then place into PREHEATED OVEN and roast for about 45 to 50 minutes or until potatoes are tender when pierced with a sharp knife or fork. Turn potatoes about half way through cooking time then return to oven to continue cooking.
  • 5. I just love vegetables and this was my vegetable dinner plate.

¼ cup olive oil, or more if needed
2 pounds red potatoes, cut into evenly sized pieces
5 fresh thyme sprigs, or to taste
kosher salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
½ large red bell pepper, seeded and cut into 1-inch pieces

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour olive oil into a heavy baking dish (such as an enameled cast iron dish). Place potatoes into the baking dish and toss to coat with olive oil. Sprinkle with fresh thyme sprigs, kosher salt, black pepper, cayenne pepper, and red bell pepper pieces.
  • Bake in the preheated oven for 30 minutes. Toss vegetables to turn over. Some potatoes may stick; don't try to turn them. Return to oven and bake for 20 more minutes.
  • Toss potatoes again, turning potatoes so unbrowned sides contact the bottom of the dish. Continue baking until potatoes are browned and tender, about 15 more minutes.
  • Turn oven off and leave potatoes in the oven for 15 more minutes. Toss once more and adjust levels of salt, black pepper, and cayenne pepper before transferring potatoes to a serving bowl.
