ROASTED RED POTATO SALAD
A tasty alternative to the typical picnic potato salad. It's made with roasted red potatoes, bacon, eggs, green onion, celery, and mayo. Pretty easy to make and you can adjust most ingredients to suit your own personal taste.

- Preheat oven to 375 degrees F (190 degrees C).
- Spread potato pieces onto a baking sheet and drizzle with olive oil.
- Roast in the preheated oven until tender, about 45 minutes; remove from oven and let cool at least 15 minutes.
- Place roasted potatoes into a large salad bowl and combine with hard-cooked eggs, celery, green onion, and bacon; stir in mayonnaise and season to taste with salt and black pepper. Cover and refrigerate for 1 hour to let flavors blend.

ROASTED RED POTATO SALAD (STONEWALL KITCHEN)
This recipe was taken from the Stonewall Kitchen site, and calls for some of their products: Roasted Garlic Oil & Traditional Pub Mustard. You could substitute 2 Tbsp Olive Oil with 1 Tsp Minced Garlic for "Garlic Oil"; and any Spicy, brown mustard for the latter (Grey Poupon, perhaps?).

- Preheat oven to 450 degrees F. Mix 5 Tablespoons Traditional Pub Mustard, Roasted Garlic Oil, and potatoes in large bowl. Toss together and then place potatoes on large baking sheet and scatter shallots on top. Bake for 45 minutes, or until potatoes are soft and golden brown.
- Slice the hot potatoes into 1/2-inch rounds without worrying if some of the skins slip off.
- Leave the shallots on them. Put the potatoes and shallots into the mixing bowl.
- In a small bowl combine sour cream, mayonnaise (or aioli), bacon, scallions, and remaining 2 Tablespoons mustard.
- Pour the dressing over the hot potatoes and stir gently to combine. Add pepper to taste.
- Cool the potato salad to room temperature. Serve immediately or chill it overnight.

ROASTED POTATO AND GARLIC SALAD
This is not your traditional potato salad recipe, but it is sooooo good! It has such delicious, robust flavors and has always been a huge hit at our summer barbeques.

- Preheat oven to 400 degrees F (200 degrees C).
- Place 1/2 cup of olive oil in a large bowl. Toss the cubed potatoes in the oil until coated, and then spread them evenly on a baking sheet.
- Pass the red peppers through the bowl of oil, making sure they are evenly coated. Place on a separate baking sheet.
- Cut about 1/2 inch off the tops of the garlic and drizzle with the remaining oil from the bowl. Place on the baking sheet with the red peppers. Sprinkle the potatoes, peppers and garlic with salt and pepper, and then place both sheets in the oven for about 20 minutes.
- Check the potatoes: they should be soft, brown and crispy. If not, return them to the oven for an additional 10 minutes or until they are done. The peppers and garlic will take longer, and are done when the skins on the peppers are black and garlic is dark brown (no more than 40 minutes total).
- Once everything has been roasted, place the potatoes in a large bowl and seal the peppers in a plastic bag to let them steam for 10 minutes. (This will loosen their skins.)
- Take the peppers out of the bag, remove their skins and seeds and chop them up. Add to the bowl with the potatoes and stir to mix.
- Turn the garlic heads upside down and squeeze the softened garlic past into a separate, small bowl. Mix in the balsamic vinegar, 1/3 cup olive oil and oregano until smooth. Pour the dressing onto the potatoes and peppers and toss to coat. Season to taste with additional salt and pepper. Best when served warm or at room temperature. To prepare in advance for an occasion, refrigerate and then reheat in the microwave just until warmed through.

ROASTED RED POTATO SALAD
I tried this recipe at a party while on a vacation in California. It is great side dish for grilled poultry or burgers and I like to double the amount of dressing that the recipe calls for and eat it slightly cold. Warm or cold, you may eat this anyway that you like.

- In a large baking pan, toss in the potatoes, 1/4 cup olive oil, garlic cloves and fresh rosemary.
- Bake at 350F for 45 minutes, mixing occasionally.
- After baking, discard rosemary sprigs, but save softened garlic cloves.
- For the dressing, in a separate bowl, whisk the red wine vinegar, Dijon mustard, and olive oil.
- Add softened garlic cloves, mashing into dressing.
- Toss in green onions and season with salt and black pepper.
- Pour this dressing over the roasted potatoes (when the potatoes are slightly warm to absorb the dressing) and mix well.
- Serve warm or cold.

ROASTED RED POTATO SALAD
This is a recipe idea that came from a cooking show. I took it to my kitchen and made a few modifications to personalize it. This is a relatively easy recipe to make, and is a hit at picnics. It is best served well chilled and can be garnished just prior to serving with halved cherry tomatoes and a few more black olives.

- Wash potatoes well and slice into uniform pieces, if potatoes are very small, quartering will work.
- Place all potato pieces in a large bowl.
- Coat with oil and spices.
- Spread coated potatoes on a cookie sheet and roast until lightly browned.
- (this usually takes 4 or 5 cookie sheets to make this large a batch) Remove roasted potatoes to colander to drain excess oil.
- While potatoes are roasting, prepare the remaining ingredients.
- Drain rep pepper fillets, and slice lengthwise into quarters.
- Cut quartered fillets on the diagonal into quarters again. Set aside.
- Cut red onion into thick slices and chop very coarsely.
- Onion pieces should be 1/2-3/4 inch to add color as much as flavor.
- Drain black olives well.
- Place drained potatoes into a large bowl.
- Add the diced and drained vegetables.
- Starting with one cup of Peppercorn Ranch dressing (you can substitute your favorite flavor of Ranch dressing), mix the dressing into the potato/vegetable mixture until well coated.
- Depending on how much dressing you like, you may add as much or as little as needed.
- Mix well, chill 2 hours, and serve.
- Tip: To make this a main dish, you can add grilled chicken strips or grilled jumbo shrimp.

STONEWALL KITCHEN HABANERO AIOLI
Stonewall Kitchen's aioli is served in their York Store Cafe with sweet potato fries. This has quickly become one of my favorite snacks here at Stonewall Kitchen. ROASTED GARLIC AND SMOKED PAPRIKA POTATO SALAD
This recipe was inspired by and created with the secret ingredients for the RSC #15 contest. Qualifying ingredients were roasted garlic, smoked paprika, spicy brown mustard, thyme and eggs. - Peel and dice potatoes into about 1-inch cubes. Put into large pot of cold water (enough to cover) and bring to a boil. Lower heat to a steady, slow boil and cook until potatoes are fork-tender. Drain.
- Meanwhile, dice celery and hard boiled eggs into a small dice. Set aside.
- Into a large bowl, stir together the minced onion, roasted garlic, sugar, thyme, smoked paprika, salt, spicy brown mustard, cider vinegar and mayo. Stir in reserved celery, eggs and bacon (if using).
- Fold in cooked and drained potatoes.
- Serve immediately or chill in refrigerator until serving time.

- Toss potatoes with oil, half of the salt, and half the pepper. Place in a greased baking pan and bake at 400 for 30 minutes or until tender.
- To make the dressing, beat cream cheese and sour cream until smooth. Stir in the chilies,paprika, garlic poweder, and remaining salt and pepper.
- In a big bowl, combine corn, onion, red pepper, and potatoes. Add 1 cup dressing and cilantro, toss to coat. There will be dressing left over.
