Quick Garlic-Onion Jam image

Spread this speedy garlic and caramelized onion jam over toasted bread topped with melty gruyere cheese. Appetizer perfection!

2 cup chopped sweet onions
2 Roasted Garlic
3 tablespoon balsamic vinegar
2 tablespoon packed brown sugar
2 tablespoon water
0.5 teaspoon salt
0.25 teaspoon crushed red pepper
Coarse kosher salt
1 large garlic bulb (2 1/2- to 3-inches in diameter)
Olive oil

Steps:

  • In a large skillet heat butter over medium. Add sweet onions. Cook 15 minutes or until softened and starting to brown, stirring occasionally. Add roasted garlic, balsamic vinegar, packed brown sugar, water, salt, and crushed red pepper. Cook, uncovered, 5 minutes or until thickened. Let cool. Spread the jam over toasts and melted gruyère.   • Preheat oven to 350°F. Add a layer of kosher salt to bottom of roaster. Cut 1/2 inch from tip of bulb; place bulb cut side up in roaster. Drizzle with olive oil. Cover; roast 1 hour. Cool. Squeeze cloves from skin. Serve on toasted bread or toss with cooked pasta. A terra-cotta garlic roaster prevents overcooking. Soak it in water before using.

¼ cup garlic cloves, peeled
2 cups distilled white vinegar
5 cups white sugar
3 ounces liquid pectin

Steps:

  • In a food processor or blender, blend the garlic and 1/2 cup of vinegar until smooth. In a 6 to 8 quart saucepan, combine the garlic mixture, remaining 1 1/2 cups vinegar and sugar. Over high heat bring the mixture to a boil, stirring constantly. Quickly add the pectin. Return the mixture to a boil and boil hard for 1 minute, stirring constantly. Remove from the heat.
  • Immediately fill five, sterilized half pint jars with the jelly, leaving 1/4-inch head space. Wipe the jar tops and threads clean. Place hot sealing lids on the jars and apply the screw on rings loosely. Process in boiling water in a deep canning pot for 5 minutes. Remove the jars and cool completely. Tighten the jar screw rings to complete the sealing process.

3 large Spanish onions
2 heads garlic, roasted
2 tablespoons sugar
2 tablespoons brown sugar
4 tablespoons balsamic vinegar

Steps:

  • Squeeze roasted garlic cloves into a small plate; set aside.
  • Cut onions in half lengthwise; peel.
  • Cut off ends; cut lengthwise into 1/4 inch thick pieces.
  • Coat a 13 inch skillet with cooking spray and set over med. heat.
  • Add onions and cover.
  • Cook, stirring occasionally, until softened and clear, about 15 minute.
  • Add sugars; recover and cook till onions are golden brown, 20-30 minutes.
  • Add 1/4 cup water and stir.
  • Cover and cook till dark brown, about 20-30 minutes, again.
  • Add balsamic vinegar, roasted cloves and another 1/4 cup of water, continue cooking till liquid has been absorbed, about 10 minutes.
  • Transfer to a bowl to cool.
  • Store in airtight container in the refrigerator for up to 1 week.

1 large head garlic
2 tablespoons olive oil
Kosher salt and freshly cracked black pepper
1 large Spanish onion, julienned
2 tablespoons sherry vinegar
2 tablespoons dry white wine
1/2 teaspoon crumbled saffron threads

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut the top off the garlic head to just expose the bulb. Remove any excess papery skins.
  • Place in a large sheet of aluminum foil. Drizzle with 1 tablespoon olive oil. Season with salt and pepper. Close the foil around the bulb, leaving a space between the top and the foil. Place onto a baking sheet and into the oven. Roast the garlic until soft and fragrant, about 1 hour.
  • Remove from the oven and cool completely. Gently squeeze the cloves into a dish. (Can be prepared in advance and stored in an airtight container for up to a week.)
  • Set a large saute pan over medium heat and add the remaining tablespoon oil. Once hot, add the onions and season lightly with salt and pepper. Brown until evenly caramelized, 5 to 7 minutes. Deglaze with the sherry vinegar, white wine and saffron. Stir to scrape up any browned bits. Reduce the heat to medium-low, and stir in the roasted garlic. Cook for an additional 10 minutes, stirring occasionally, until the jam is thickened and glossy. Remove from the heat and cool. Season with salt and pepper.

2 large heads garlic
Olive oil
4 large onions (Spanish Sweet or Vidalia)
2/3 cup sugar
2 1/2 tablespoons butter
1 cup white vinegar
4 cups water
6 cups sugar
1 package powdered pectin

Steps:

  • Cut top off each garlic head and drizzle with olive oil. Roast in a regular conventional oven at 275 degrees for 1 hour and 15 minutes. Cool completely. Caramelize onions: chop onions into small pieces (save half of 1 onion and cut into large slivers; set aside to be used later as a garnish). Place 2/3 cup sugar in a large skillet over medium heat and cook until melted; mix in butter until melted. Add onions and cook until coated by caramelizing mixture (onions should be soft and pierce easily with a fork). Caramelize large slivers and set aside. Add garlic cloves from one head and simmer 5 minutes. Add vinegar and mix while still over medium heat; mix in 4 cups water and simmer 5 more minutes. Sieve mixture through a jellybag or cheesecloth, allowing to drip until all liquid is through. Measure 5 cups of the garlic/onion liquid into a saucepan and add pectin. Bring to a full boil and add all the sugar at once. Cook at full rolling boil, stirring constantly, for 1 minute. Remove from heat and ladle mixture into hot, sterilized jars. Garnish top of each jar with a large sliver of caramelized onion and a clove of roasted garlic. Put lids on and process 10 minutes in boiling water bath. Store in a cool, dark place.

VIDALIA ONION AND GARLIC JAM

This pungent jam softens and spices the taste of beef, pork, chicken or lamb when rubbed on either side of the meat about an hour before grilling. Wipe excess jam off before grilling over hot coals as it becomes bitter. It also makes a fine substitute for butter or oil on slices of crusty bread, can be used in place of mayonnaise on meat sandwiches or in place of tomato sauce on pizzas.

1 head garlic, unpeeled, smashed to separate cloves slightly

1 bulb of garlic
1 tablespoon olive oil
1 large sweet onion, peeled and finely chopped (1 cup)
1/2 cup finely chopped granny smith apple
1/2 cup sugar
1/2 cup balsamic vinegar

Steps:

  • Preheat the oven to 350°F
  • Slice about 1/4 inch off the pointed end of the garlic bulb so the individual cloves show.
  • Place the bulb in a small baking dish, cut side up, and drizzle with olive oil.
  • Cover and roast for 45 to 60 minutes or until the garlic cloves have softened. Cool.
  • Gently squeeze the garlic cloves and juices into a saucepan.
  • Stir in the onion, apple, sugar and balsamic vinegar.
  • Bring to a boil over medium-high heat, stirring occasionally.
  • Reduce heat; simmer about 30 minutes or until the onion and apple have softened and turned transparent and the mixture has thickened, stirring occasionally.

ROASTED GARLIC JELLY

This makes a wonderful glaze for meat or a spread or warm bread. The recipe calls for white balsamic vinegar because it will create a light cover jelly. If you are unable to find it make it with the dark balsamic but the jelly will be darker and have a more robust flavor. Remember when making jellies to not squeeze the jelly bag to speed juice collection, doing so may produce a cloudy jelly. This is from the Ball Complete Book of Home Preserving. The recipe is for under 1,000 feet elevation so adjust it for your area.

3 medium bulbs of garlic
1 tablespoon olive oil, divided
1 tablespoon balsamic vinegar, divided
1 cup dry white wine
2/3 cup water
1/2 cup white balsamic vinegar
1 teaspoon whole black peppercorn, crushed
3 tablespoons lemon juice
3 cups granulated sugar
2 (3 ounce) envelopes liquid pectin

Steps:

  • Cut off tops of garlic heads and place each head on a small square of foil set on a baking sheet. Top each head with 1 tsp oil and 1 tsp balsamic. Scrunch foil loosely around garlic heads and roast in a preheated oven until garlic is golden and very soft 45-60 minutes on 400. Let stand until cool. Separate cloves pinching each one to extract garlic. Discard the skins.
  • In a medium saucepan, combine garlic, wine, water, white balsamic vinegar, and peppercorns. Bring to a boil over medium heat. Reduce heat and boil gently for 5 minutes. Cover, remove from heat and let steep for 15 minutes.
  • Transfer garlic mixture to a dampened jelly bag or a strainer lined with layers of damp cheesecloth. Let drip 30 minutes. Measure 1 2/3 c of garlic juice. If you don't have the required amount add up to 1/4 c dry white wine or water.
  • Meanwhile, prepare canner, jars and lids.
  • Transfer garlic juice to a large deep saucepan. Stir in lemon juice and sugar. Over high heat, stirring constantly, bring to a full rolling boil that cannot be stirred down. Stir in pectin. Boil hard, stirring constantly, for 1 minute. Remove from heat and quickly skim off foam.
  • Quickly pour hot jelly into hot jars leave 1/4 in head space. Wipe rims and put lids and rings on.
  • Place in canner, bring to boil and process 10 minutes.

4 whole garlic bulbs
1 teaspoon canola oil
5 cups chopped sweet onions (1-1/2 pounds)
1/4 cup butter, cubed
3/4 cup cider vinegar
1/2 cup bottled lemon juice
1/4 cup balsamic vinegar
1-1/2 teaspoons ground mustard
1 teaspoon salt
3/4 teaspoon white pepper
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
6 cups sugar
1 pouch (3 ounces) liquid fruit pectin

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off garlic bulbs; brush with oil. Wrap each bulb in heavy-duty foil. Bake at 425° 30-35 minutes or until softened. Cool 10-15 minutes. , In a Dutch oven, saute onions in butter 30-40 minutes or until lightly browned. Squeeze softened garlic into pan. Stir in cider vinegar, lemon juice, balsamic vinegar, mustard, salt, pepper, ginger and cloves. Bring to a full rolling boil over high heat, stirring constantly. Gradually stir in sugar. Return to a boil for 3 minutes. Stir in pectin. Continue to boil 1 minute, stirring constantly. , Remove from heat; let stand for 3 minutes. Skim off foam.
