Louisiana Jumbo Lump Crab Cakes with Roasted Corn and Chipotle Mashed Potatoes with Remoulade and Chipotle Honey image

5 Idaho potatoes, peeled and chopped
1 cup hot milk
4 ounces melted butter
2 tablespoons oil
1 to 2 ears corn, shucked, kernels removed from the cob
Salt and pepper
Chipotle Puree, recipe follows
1 1/2 to 2 pounds jumbo lump crabmeat
1 ounce garlic, chopped
4 ounces mayonnaise
Pinch chopped fresh herbs (tarragon, thyme, sage)
Salt and pepper
2 cups all-purpose flour
2 eggs, lightly beaten
2 cups bread crumbs
4 tablespoons butter
Basil Oil, recipe follows
Remoulade, recipe follows
3 ounces chipotle in adobo
1/4 bunch cilantro, stemmed
1 ounce garlic
1 bunch basil, leaves picked
1 cup olive oil
2 cloves garlic
Salt and pepper
1 ounce shallot, peeled and sliced
3 ounces cornishons or 1/2 dill pickle
1 tablespoon capers
1/4 teaspoon cayenne pepper
1 cup mayonnaise
1 tablespoon brandy
Salt and pepper

Steps:

  • Mashed Potatoes: Place potatoes in boiling, salted water and cook until soft, about 15 to 20 minutes. Drain. While the potatoes are cooking, combine the hot milk and melted butter. In a small saute pan, add the oil and heat. Add the corn and saute until tender, about 5 minutes. Season with salt and pepper. Add the milk mixture to the drained potatoes with the chipotle puree and sauteed corn and mash. Season with salt and pepper, to taste. Set aside and keep warm.
  • Mix the crabmeat, garlic, mayonnaise, and herbs. Season with salt and pepper. Divide the mixture into 8 equal portions.
  • Place the flour in a shallow dish or bowl. Place the eggs in a separate bowl, and the bread crumbs in a separate bowl. Dredge each crab cake in the flour, then the egg, then the bread crumbs, shaking off any excess. Refrigerate until ready to cook.
  • Melt 1/2 of the butter in a large saute pan. Add the crab cakes in batches and cook until golden brown on both sides, adding more butter as necessary.
  • Place potatoes in center of plate. Stack crab cakes onto mashed potatoes. Drizzle chipotle honey and basil oil around plate. Place a dollop of remoulade sauce on top of crab cakes.
  • Combine all ingredients in a blender or food processor and puree until smooth.
  • Chipotle Honey:
  • 4 ounces honey
  • 1 ounce chipotle peppers in adobo sauce, pureed
  • Combine the honey with the chipotle puree
  • Blanch the basil leaves in boiling water for 10 seconds. Drain and plunge in a water bath. Dry the leaves well and place in a blender. Add the garlic and puree with oil until smooth. Season with salt and pepper.
  • Combine all ingredients in food processor or blender until smooth.

3 lbs beef boneless sirlion roast, cut into 2 - 3 inch pieces
1 1/2 teaspoons salt, divided
1/2 teaspoon black pepper
3 tablespoons vegetable oil
3/4 cup all-purpose flour
2 teaspoons chili powder
2 teaspoons oregano leaves
2 teaspoons cumin
1/2 teaspoon chipotle chili pepper
1 cup water
2 garlic cloves, minced
2 jalapeno peppers, minced
2 cups beef broth
1 garlic, bulb
2 tablespoons olive oil
3 ears fresh corn
2 lbs red potatoes, cut into 1 1/2 - 2 inch cubes
3/4 cup sour cream
1/2 cup butter
1/2 cup milk or 1/2 cup half-and-half
1 1/2 teaspoons salt
1 chipotle chile in adobo, finely chopped
1 teaspoon adobo sauce, from can
1 teaspoon pepper
1/2 cup chopped cilantro

Steps:

  • ROAST:.
  • Sprinkle roast evenly with 1/2 teaspoon salt, 1/2 teaspoon blackpepper. Brown roast on all sides in hot oil in Dutch oven over high heat.
  • Stir together flour, next 4 ingredients and remaining 1 teaspoon salt in a large bowl. Whisk in 1 cup warm water until smooth. Add minced garlic and chopped jalapeno.
  • Add 2 cups beef broth to Dutch oven. Stir in flour mixture. Bring to a boil over high heat; cover tightly, reduce heat to low and simmer 2 to 2 1/2 hours or until meat is tender, stirring every 20 minutes to prevent sticking.
  • CORN-GARLIC-CHIPOTLE-CILANTRO MASHED POTATOES:.
  • Preheat oven 400 degrees.
  • Cut off pointed end of garlic; place garlic on a piece of aluminum foil and drizzle with 1 tablespoon olive oil. Fold foil to seal. Brush corn with 1 tablespoon oil and place on a baking sheet.
  • Bake garlic for 1 hour. After 15 minutes, place corn in oven and bake with garlic, 45 more minutes or until corn is golden brown. Squeeze pulp from garlic from garlic cloves and set aside. Let corn cool completely.
  • Hold upright on a cutting board and carefully cut downward, cutting kernels from cob. Repeat with each corn cob. Discard cob; set corn aside.
  • Cook potatoes in boiling water to cover in a large saucepan until fork-tender, about 15-20 minutes. Drain and return to pan.
  • Whisk together reserved roasted garlic pulp, 3/4 cup sour cream, 1/2 cup butter and next 5 ingredients in a medium saucepan over medium heat until butter melts and mixture is thoroughly heated.
  • Mash potatoes slightly, add warm garlic mixture to pan and continue to mash just until blended. Mixture should be coarsely mashed. Stir in chopped cilantro and reserved corn.
  • Serve by arranging potatoes on plate and topping with roast and gravy.

3 1/2 pounds yellow-fleshed potatoes such as Yukon Gold
1 1/4 cups skim milk
1/2 tablespoon canned chipotle chiles in adobo, or to taste
2 tablespoons nonfat sour cream
1/2 cup packed fresh cilantro sprigs

Steps:

  • In a kettle combine potatoes with enough salted cold water to cover by 2 inches and boil potatoes until very tender, about 30 minutes. Drain potatoes in a colander, and, when just cool enough to handle, peel potatoes. Return warm potatoes to kettle and with a potato masher mash potatoes with milk over very low heat. Chop chiles and mash into potatoes with sour cream and salt and pepper to taste. Potatoes may be made up to this point 1 day ahead and chilled, covered. Reheat potatoes, covered, in a 350°F. oven about 30 minutes and season with salt and pepper. Chop cilantro and stir into potatoes.

Who can resist this yummy comfort food? Kids love it! Use fresh or frozen corn - canned will do if in a pinch. I got this recipe from the 7-2000 issue of Bon Appetit. I never add the saffron and I almost always use 1/2 and 1/2 and its been great. Using the whipping cream makes it purely decadent, however.

Steps:

  • Saute onion, corn and garlic in oil till tender. Add cream, butter and saffron - heat till close to boil.
  • Remove from heat, cover and let stand for 20 minutes.

1 chipotle pepper, seeded, or more to taste
2 cloves garlic, minced
½ cup milk
1 small bunch fresh cilantro, chopped, or to taste
2 tablespoons butter, softened

Steps:

  • Bring water to a boil in a medium saucepan. Add potatoes and cook over medium heat, stirring once in a while, until easily pierced with a fork, 20 to 30 minutes. Drain.
  • Place chipotle pepper and garlic in a food processor; process until minced. Add potatoes and process until mostly smooth. Add milk, cilantro, butter, and salt. Mix until combined but a few lumps remain.

  • Char chilies over gas flame or in broiler until blackened on all sides. Wrap in paper bag and let stand 10 minutes. Peel and seed chilies; chop coarsely.
