"This bread has a wonderful sourdough taste, but you don't need to bother with a starter," relates Dawn Glynn of Twin Bridges, Montana. "I received the recipe from a friend and now make it more than any other loaf in my bread machine."

Yield 1 loaf (about 1-1/2 pounds).

Number Of Ingredients 7

2/3 cup water (70° to 80°)
2 tablespoons white vinegar
1/2 cup sour cream
1 tablespoon sugar
1-1/2 teaspoons salt
3 cups bread flour
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggest by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

This bread is loved by all who's tried it, especially my kids. I've handed out so many copies of this recipe over the years. It certainly doesn't last long. I made 3 mini loaves and my son already has the first one demolished...LOL! He wouldn't wait until it cooled for me to frost, as you can see in the pictures. :) If you love the combo of peanut butter and banana's, you will love this bread. More photo's to follow, having some difficulty with my pictures today. Enjoy!

Number Of Ingredients 15

1 cup(s) peanut butter
1/4 cup(s) brown sugar
1 - egg
1/2 cup(s) sour cream
1 teaspoon(s) vanilla
1 1/2 cup(s) mashed ripe bananas
1 1/2 cup(s) flour
1/4 teaspoon(s) salt
1 teaspoon(s) baking soda
1/2 cup(s) peanut butter chips
PEANUT BUTTER GLAZE
1/4 cup(s) cream or milk
1/2 cup(s) confectioners' sugar
3 tablespoon(s) slightly heaping - peanut butter
1/2 teaspoon(s) vanilla

Steps:

  • Preheat oven to 350 degree F. Spray a 9 x 5 loaf pan with non stick cooking spray. I use bakers joy. In a large bowl, beat the peanut butter with the brown sugar until light and fluffy or until sugar is well incorporated. In another bowl, sift the flour, soda and salt. Set aside.
  • Once the sugar and peanut butter is creamed, beat in the banana, egg, sour cream and vanilla. Mix well. To this add the flour mixture and only beat until blended. Fold in the peanut butter chips.
  • Spread into prepared loaf pan. Bake for 55 minutes to 1 hour, or until pick comes out clean. If it starts getting too brown, cover with foil and return to oven.
  • In a small bowl, whisk all glaze ingredients until creamy. Add more sugar or milk to get desired consistency. Remove bread from oven and place on cooling rack for 5 minutes, then remove from pans. Once cool, glaze.
  • Enjoy with a cup of coffee or a nice glass of ice cold milk.

After making bread for many years - and experimenting with different ingredients and family tastes - I believe this tops the cake! I have discovered while working with whole wheat and bread making that you have to let the wheat flour "sponge" so the bread doesn't end up heavy. This recipe combines white flour, wheat flour and oatmeal. For us, it's a great way to use leftover cooked oatmeal from breakfast. My kids and DH go through approximately 7 loaves a week!

Number Of Ingredients 9

2 tablespoons yeast
2 tablespoons gluten
2 teaspoons salt
4 tablespoons sugar or 4 tablespoons honey
2 cups hot water
2 teaspoons vegetable oil
2 cups regular oatmeal, precooked
2 cups whole wheat flour
4 -6 cups white flour

Steps:

  • In a large bowl add yeast, gluten, salt, sugar, oatmeal, whole wheat flour and water. Mix well.
  • Cover. Let this mixture sit for 30-40 minutes. This is called sponging.
  • Add vegetable oil and mix well.
  • Add enough white flour to make a non-sticky soft dough. Knead 10 minutes.
  • Place in greased bowl and let rise until double. About 30 minutes.
  • Punch dough down.
  • Divide dough between 4 greased bread pans. Cover and let rise for 20 minutes.
  • Bake at 400 degrees for 30 minutes.
  • Cool on wire racks.
  • Note: If you are grinding your own wheat - adjust the coarsness of the flour for different textures. Enjoy!

1/4 c butter
1 - 16 oz loaf, french bread - cubed
3 3/4 - 4 c milk
2 c sugar
1 tsp cinnamon
4 eggs
1 c each - chopped pecans & raisins
2 Tbsp good vanilla extract
SAUCE
2 Tbsp butter
2 Tbsp rum
1/2 c sugar
3 oz milk
1/4 c corn starch - minus 2 teaspoons

Steps:

  • 1. Preheat oven to 350 degree F. Melt butter in a 9 x 13 baking dish ( I did mine in a 3 quart casserole, which took longer to bake. ) Once butter is melted remove from oven. In a large bowl, place bread cubes. Pour milk over the bread and leave set for at least 5 minutes, making sure all bread is saturated. I then toss in the raisins and pecans.
  • 2. In another bowl, mix the eggs, cinnamon, sugar and vanilla. Blend well and then mix with the milk soaked bread. Carefully combine.
  • 3. Pour bread mixture into dish with melted butter. Spread evenly.
  • 4. Bake for 40 - 45 minutes or until puffy and firm.
  • 5. Sauce: Whisk together the milk and corn starch in a small bowl and set aside. In a small saucepan, over medium heat, melt butter and stir in sugar and rum. Bring to a boil. Slowly stir in the milk mixture and continue cooking until thickening. It will thicken further as it cools.
  • 6. Serve sauce over warm bread pudding. Delicious!
