Roasted cabbage is an utterly delicious way to give this green vegetable some star power at the dinner table.

1 head of cabbage
2 tablespoons olive oil
salt and pepper to taste
1 tablespoon butter (melted)
fresh parsley (or thyme)

Steps:

  • Preheat oven to 400°F.
  • Slice cabbage into ½" thick rounds. Brush each side with olive oil.
  • Place on a baking sheet (cut rounds in half if needed). Roast 20-25 minutes. Flip and roast another 15-20 minutes or until cabbage is tender. Broil 1-2 minutes if desired.
  • Drizzle with butter and serve.

One of my favorite side dishes, as it's very easy to make! I personally love garlic so I go crazy with it, but put as much as is good for you. This is a very simple recipe and you can put as much or as little of the seasonings you want.

Number Of Ingredients 5

1 head cabbage
2 tablespoons light olive oil
2 tablespoons minced garlic
½ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut the bottom off of the cabbage and set it so that the flat end is on the cutting board; cut into 1-inch thick slices. Arrange slices in a single layer in a large casserole dish.
  • Drizzle olive oil over the cabbage slices and top with garlic. Season cabbage with salt and pepper. Cover the dish with aluminum foil.
  • Bake in preheated oven until the cabbage core is easily pierced with a fork, about 45 minutes.

  • Cut the stems off the cabbage heads and then cut each one in half, then in half again. You should have four flat discs of cabbage that are about ¾ to 1 inch thick from each head. Place the cabbage steaks on a baking sheet that is lined with parchment paper, allowing some space between each one to even cooking.
  • Brush the cabbage with the olive oil, coating them thoroughly. Then generously sprinkle the salt, garlic powder, and paprika on the cabbage steaks. Flip the cabbage over and repeat, brushing them with oil and sprinkling the seasonings. Then add a pinch of red pepper flakes to each one, if desired.
  • Bake the cabbage steaks at 400°F for about 25 minutes, until the leaves are browned and the center is tender. Serve hot out of the oven.
