Steps:
- Heat oven to 450°F. Spray 18x13-inch rimmed sheet pan with cooking spray. Place Brussels sprouts, shallots and bacon on sheet pan. Drizzle with oil, salt and pepper; toss to coat.
- Roast uncovered 30 to 35 minutes, stirring after 20 minutes, until Brussels sprouts are fork-tender and bacon is cooked.
- Meanwhile, in small bowl, combine vinegar and brown sugar. Stir with whisk until sugar is dissolved.
- Remove sheet pan from oven. Drizzle with vinegar mixture; toss to coat.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
- Mix Brussels sprouts, bacon, onion, olive oil, garlic powder, cayenne, and salt together in a large bowl. Spread evenly on the prepared baking sheet.
- Roast in the preheated oven until bacon is crispy and reaches 145 degrees F (63 degrees C), about 40 minutes, stirring after 20 minutes.
- Remove from the oven. Toss with pine nuts and serve.

- 1.Preheat oven to 425 degrees.
- 2.In oven safe skillet or casserole dish crisp bacon over medium high heat. About 8-10 minutes. Remove bacon and set aside on plate lined with paper towels. Dispose of fat in the skillet.
- 3.Return skillet to stovetop. Deglaze pan with white wine, scraping brown bits from bottom of pan.
- 4.Add shallots and sauté for about 5 minutes.
- 5.Add Brussels sprouts and olive oil and mix together to combine and evenly coat.
- 6.Place skillet in oven and roast for about 15-20 minutes until cooked through and golden brown.
- 7.Remove from oven and add butter and bacon, toss to combine.
- 8.Salt and pepper to taste.

- Preheat oven to 400 degrees.
- Cut ends off of brussels sprouts and remove any damaged outer leaves. Cut sprouts in half and mix in a large bowl with 3 TB olive oil, salt, and pepper. Set aside.
- Caramelize onions, shallots, and garlic on the stovetop with 1/2 TB olive oil. Add Bacon and cook for one more minute (I use the precooked Real Bacon Pieces you can buy at the supermarket).
- Add Caramelized onion mixture to bowl of sprouts and stir well to mix.
- Evenly distribute mixture on a sheet pan and roast for 35-40 minutes. Sprouts should be browned on the outside, but easily pierced with a fork.

- Heat oven to 450 degrees. In a medium bowl, toss together brussels sprouts, shallots, olive oil and salt. Evenly divide brussels sprouts mixture between two rimmed 13-by-18-inch baking sheets, spreading everything into one layer. Top with thyme sprigs.
- Roast, stirring once, until brussels sprouts and shallots are tender, golden and lightly charred in spots, 20 to 25 minutes.

- Cook bacon in a large skillet over medium, turning occasionally, until browned and crisp, about 10 minutes. Transfer to a plate lined with paper towels; reserve drippings in skillet.
- Add shallots to hot drippings, and cook over medium, stirring often, until shallots are softened and start to brown, about 8 minutes. Add garlic, and cook, stirring often, 1 minute. Add vinegar, and cook until thick and syrupy, about 2 minutes. Remove from heat, and pour into a small microwavable bowl. Crumble bacon, and stir into shallot mixture. Cool to room temperature, cover, and chill until ready to use, up to 1 day ahead.
- Preheat oven to 400°F. Toss Brussels sprouts with canola oil, 1 teaspoon of the salt, and 1⁄2 teaspoon of the pepper. Transfer to 2 aluminum foil-lined rimmed baking sheets. Roast Brussels sprouts in preheated oven until golden and tender, about 25 minutes, stirring halfway through baking. Set aside for up to 1 hour.
- Combine breadcrumbs, melted butter, and remaining 1⁄2 teaspoon salt and 1⁄4 teaspoon pepper in a small bowl. Set aside.
