This is posted for the World Tour 2005 RecipeZaar event. I haven't tried it yet, but it looks so yummy, I couldn't resist posting it for later use. The source is Lidia's Italian American Kitchen by Lidia Matticchio Bastianich.

2 cups red seedless grapes
1 cup sugar
2/3 cup moscato" "or other fruity white wine
2 lemons, juice of, only
2 tablespoons apricot jam
1/2 vanilla bean, split lengthwise
3 bosc pears, ripe but firm

Steps:

  • Preheat oven to 375°F Place grapes in an 11 X 7 inch baking dish.
  • Stir the sugar, Moscato, lemon juice, apricot jam, and vanilla bean in a bowl until blended. Pour over the grapes.
  • Cut pears lengthwise through the core, and remove the stems, cores, and seeds. Place the pears, cut side up, between the grapes.
  • Bake, uncovered, until the pears are tender and the liquid is thick and syrupy (50 min - 1 hour).
  • Remove the pears, and let them rest until the syrup thickens - about 10 minutes.
  • Serve warm with some grapes and syrup drizzled over the pears.

4 bosc pears, large, halved and cored
1 tablespoon butter
spice island pumpkin pie spice (or any combo of cinnamon, nutmeg, ginger, etc.)
1/4 cup almonds, slivered, toasted

Steps:

  • Lightly grease 8 half-pear shapes on a baking sheet.
  • Sprinkle Pumpkin Pie Spice liberally over the buttered areas.
  • Place each cored, UNPEELED pear half on each greased spot.
  • Bake at 350° (180°C) for 20-30 minutes, until the pears are oozing and a fork goes in easily.
  • Cool on the pan.
  • Serve warm with cut sides up, sprinkled with the slivered, toasted almonds.

1 large pear
vegetable oil cooking spray
2 tablespoons cream cheese (I use no fat)
1/8 teaspoon salt
1/8 teaspoon nutmeg
1 tablespoon whole half walnuts (or pecans)
2 teaspoons honey

Steps:

  • Preheat oven to 350°F.
  • Peel, if you wish (I leave them unpeeled) Slice pear in half lengthwise, scoop out seeds to make a nice circle. Spray with veggies spray and set aside in a gratin dish sprayed with veggie spray, cut side up.
  • In a small bowl mix together, cream cheese, salt, nutmeg and 1 teaspoon honey. Fill each pear half cavity with half of the cheese mixture.
  • Place a half walnut on top of the cheese mixture; lightly press it down. Drizzle pear halves with remaining teaspoon of honey.
  • On centre grate in oven, roast at 350°F for about 1 hour or until soft. Test with a toothpick at about 45 minutes.

1 Bosc pear, halved
1 tablespoon water

Steps:

  • Preheat oven to 375°F. Melt butter with oil in small ovenproof skillet over medium heat. Add pear halves, turning to coat. Arrange pears, cut side down, in skillet; sprinkle with water. Roast until tender, about 20 minutes. Cool. Peel and core roasted pears; cut into 3/4-inch cubes.

  • Preheat oven to 350°F. Stir wine, pomegranate juice, sugar, cinnamon stick, and orange peel in medium saucepan over medium heat until sugar dissolves, about 3 minutes.
  • Using small melon baller, core pears from bottom of wide end. Trim bottoms flat and stand upright in 8x8x2-inch baking dish. Pour pomegranate-wine sauce over pears. Roast pears until tender when pierced with knife, basting pears with sauce every 20 minutes, about 1 hour. Using spatula, transfer roasted pears to serving platter. Transfer pan juices to small saucepan. Simmer until reduced to 2/3 cup, about 5 minutes. DO AHEAD Can be made 4 hours ahead. Let sauce and pears stand at room temperature. Rewarm sauce before continuing.
  • Spoon glaze over pears. Serve warm or at room temperature with vanilla ice cream and biscotti.
