HERB-ROASTED TURKEY BREAST
Rather than roast an entire bird, try Ina Garten's Herb-Roasted Turkey Breast for a flavorful alternative. Rosemary, sage and thyme star in this recipe.

- Preheat the oven to 325 degrees F. Place the turkey breast, skin side up, on a rack in a roasting pan.
- In a small bowl, combine the garlic, mustard, herbs, salt, pepper, olive oil, and lemon juice to make a paste. Loosen the skin from the meat gently with your fingers and smear half of the paste directly on the meat. Spread the remaining paste evenly on the skin. Pour the wine into the bottom of the roasting pan.
- Roast the turkey for 1 3/4 to 2 hours, until the skin is golden brown and an instant-read thermometer registers 165 degrees F when inserted into the thickest and meatiest areas of the breast. (I test in several places.) If the skin is over-browning, cover the breast loosely with aluminum foil. When the turkey is done, cover with foil and allow it to rest at room temperature for 15 minutes. Slice and serve with the pan juices spooned over the turkey.

- Preheat the oven to 325°F
- Rinse the turkey breast under cold running water and pat it dry with paper towels. Place it in a baking dish and set it aside.
- Combine the chipotle pepper, herbs, garlic, salt and pepper in a mortar and pestle or chop them on a cutting board until they form a paste.
- Add the olive oil to the mortar and pestle or transfer the mixture to a small bowl and add the olive oil.
- Rub the turkey breast with the chipotle paste.
- Carefully slip your fingers under the skin and put more paste between the skin and the meat.
- Roast the turkey breast in the oven for about 2 hours.
- Let the turkey rest at room temperature for about 15 minutes before carving.

- 1. Place oven rack in lowest position. Preheat oven to 325 degrees F. Place roasting rack in shallow roasting pan. Mix sage, paprika, seasoned salt, garlic powder, pepper and nutmeg in small bowl.
- 2. Place turkey, breast-side up, in prepared pan. Sprinkle about 1/2 of the seasoning mixture inside turkey. Stuff with onion and bay leaves. Brush turkey breast with oil. Remove turkey from oven. Let stand 20 minutes. Transfer to platter or carving board to slice. Reserve pan juices to make gravy or to serve with turkey.
ROAST TURKEY WITH CHIPOTLE-MAPLE BUTTER
A turkey is roasted with a spicy and slightly sweet compound butter.

- Let the turkey sit at room temperature for about 1 hour.
- Preheat the oven to 400 degrees F.
- Remove the packet of neck and giblets from the turkey and reserve for another use. Cut away any fatty pieces near the cavity or neck and discard. Pat the turkey dry inside and out with paper towels and sprinkle liberally with salt and pepper inside and out.
- Put the butter, maple syrup, chipotle pepper, garlic and a pinch of salt in a mini food processor and pulse until smooth. Loosen the skin over the turkey breast and push half of the butter mixture under the skin and over the breast meat. Rub the skin all over with the rest of the butter mixture. Tie the legs together with twine. Tuck the wings under the body and put the turkey breast-side up on a rack in a roasting pan.
- Roast until the turkey begins to turn golden, about 25 minutes. Loosely tent the breast with foil, then reduce the oven temperature to 325 degrees F. Continue roasting until an instant-read thermometer inserted in the thigh joint reaches about 155 degrees F. Remove the foil and continue roasting until it reaches 165 degrees F in the thigh joint, about 30 minutes longer. Transfer the turkey and rack to a cutting board and let rest about 30 minutes before carving.

- Lay 3 clean cotton strings, each about 24 inches long, across a large roasting pan sprayed with non-stick spray.
- Set turkey breast skin side down, over strings.
- Sprinkle turkey with parsley, thyme, Morton Lite Salt mixture, pepper, cheese and ham.
- Shape turkey breast into a roll and tie with strings.
- Turn roast over, so that skin side is up. Insert thermometer into center.
- Bake in a preheated 325°F oven for 1 to 1-1/2 hours (or until thermometer reads 170 degrees).
- Place on a serving platter and keep warm for 10 minutes.
- Mix wine with cornstarch, water and chicken bouillon granules.
- Add to pan drippings.
- Cook over medium-high heat, stirring constantly, until thickened.
- Pour sauce into serving bowl for spooning over slices of meat.

- Set the oven at 350 degrees. If the turkey breast is wrapped in netting, cut the string from the top (skin side) of the breast leaving all but the two ends uncovered. (If the netting is left on top, the spice coating will be lost when you cut off the string after cooking.).
- In a shallow baking dish just large enough to hold the breast, place 1 tablespoon of the olive oil. Set the breast in the pan and tuck the garlic under it. Sprinkle the meat with salt, pepper, and chili powder or paprika. Sprinkle the remaining 1 tablespoon olive oil on top of the meat.
- Roast the turkey for 45 minutes. Add 1/3 cup of water to the pan, and continue roasting for 30 to 40 minutes, spooning the pan juices over the meat every 15 minutes, or until a meat thermometer inserted into the center registers 170 degrees (total roasting time is 75 to 85 minutes). Let the turkey stand for at least 15 minutes before slicing.

- Preheat oven to 350 degrees F.
- Coat large roasting pan with nonstick vegetable-oil cooking spray.
- Rub turkey on all sides and under skin with olive oil and lime juice.
- Dry Rub: Mix onion salt, chili powder, dried oregano, cumin, garlic powder, allspice and cayenne in small bowl.
- Rub 1 1/2 tablespoons mixture over turkey and under skin.
- Roast turkey in the oven for 1 1/2 to 2 1/2 hours or until the internal temperature registers 165 degrees F on instant-read thermometer.
- Remove turkey to a warm place; let stand 10 minutes.
- Gravy: Pour off all but 2 tablespoons drippings from roasting pan.
- Sprinkle flour and 1/2 teaspoon of remaining dry rub over bottom of roasting pan; cook over medium-high heat, scraping up any browned bits from bottom of pan, for about 1 minute.
- Gradually whisk in chicken broth until smooth; cook, stirring occasionally, until thickened, about 2 minutes.
- Strain gravy through sieve into gravy boat; keep warm.
- Cut off each 1/2 of the turkey breast from the bone.
- Wrap one 1/2 and refrigerate for up to 3 days or freeze for up to 4 months, for later use.
- Slice other 1/2 of turkey breast and serve with the gravy, and mashed potatoes, if desired.

- Trim turkey breast of any fat.
- In a small bowl combine olive oil with garlic, thyme, mustard, lemon peel, salt and pepper. Rub into turkey breast.
- Marinate in the refrigerator from 1 hour to 12 hours.
- Arrange turkey breast, skin side up, on a baking sheet lined with parchment paper or tinfoil.
- Roast at 350F for 50 to 60 minutes or until a meat thermometer inserted into the thickest portion of the breast reaches 165F and the juices run clear.
- Remove turkey from oven to a carving board and tent with tinfoil. Place juices in a medium skillet (could drain off some of the fat) add lemon juice (perhaps use less if some of the fat drained off) and boil for 2 minutes. Remove from heat and stir in butter.

- Stir together butter, rosemary, and sage. Loosen skin from turkey without detaching it; spread butter mixture under skin. Arrange one-fourth of orange and lemon slices over butter mixture. - Make turkey:
- Mix first 5 ingredients in small bowl. Pat turkey dry with paper towels and place on rack set in large roasting pan. If not stuffing turkey, place herb sprigs in main cavity. If stuffing turkey, spoon stuffing into main cavity. Tie legs together loosely to hold shape of turkey. Brush turkey with oil. Rub herb mix all over turkey. Place turkey neck and giblets in roasting pan. (Can be prepared 1 day ahead if turkey is not stuffed. Cover and refrigerate. Let stand at room temperature 1 hour before roasting.)
- Position rack in lowest third of oven and preheat to 425°F. Drizzle melted butter all over turkey. Pour 2 cups broth into pan. Roast turkey 45 minutes. Remove turkey from oven and cover breast with foil. Reduce oven temperature to 350°F. Return turkey to oven; roast unstuffed turkey 1 hour (roast stuffed turkey 1 hour 30 minutes). Remove foil from turkey; pour remaining 2 cups broth into pan. Continue roasting turkey until meat thermometer inserted into thickest part of thigh registers 180°F. or until juices run clear when thickest part of thigh is pierced with skewer, basting occasionally with pan juices, about 1 hour 40 minutes longer. Transfer turkey to platter; tent with foil. Let stand 30 minutes. Reserve liquid in pan for gravy.
- Meanwhile, prepare gravy:
- Mix flour and Sherry in small bowl until smooth paste forms. Melt butter in heavy large saucepan over medium-high heat. Add mushrooms and rosemary and sauté until mushrooms begin to soften, about 3 minutes. (Can be made 3 hours ahead. Cover flour paste tightly. Let paste and mushrooms stand at room temperature.)
- Discard turkey neck and giblets from pan juices in roasting pan. Transfer pan juices to large glass measuring cup. Spoon off fat. Add enough chicken broth to measure 5 cups; add to saucepan with mushrooms. Add flour paste and whisk until smooth. Bring mixture to boil, stirring frequently. Boil until thickened to light gravy, about 10 minutes. Mix in cream, thyme and tarragon. Season with salt and pepper. Serve turkey with gravy.

- Preheat oven to 350 F.
- Rinse turkey breast in cold water.
- Pat dry.
- Combine chicken broth and wine in a bowl or in a jar.
- Line a roasting pan with aluminum foil.
- Put vegetables in pan.
- Put a rack sprayed with vegetable oil in the pan.
- Place turkey breast on rack.

- Discard vegetables.

- Put in saucepan, stir in 1 1/2 T cornstarch mixed with 3 T cold water.
- Cook and stir on medium heat until thickened.
- Add salt and pepper to taste.
