Number Of Ingredients 7

2 lb mixed bell peppers, tender-roasted and cut lengthwise into 1/4-inch- wide strips
3 tablespoons white balsamic vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons capers in brine, rinsed and drained
2 tablespoons chopped fresh basil

Steps:

  • Toss together all ingredients and let stand, covered, 1 hour for flavors to develop.

This colorful salad works well with almost every main course, but it's a perfect match for grilled chicken breast or pork tenderloins

1 large yellow bell pepper
1 large red bell pepper
3 large ripe peaches, peeled, pitted and sliced
1 tablespoon olive oil
2 teaspoons fresh lemon juice
1/2 teaspoon ground cumin
1/4 teaspoon salt (to taste)
1/8 teaspoon cayenne pepper (to taste)

Steps:

  • Roast peppers over a gas flame, under a broiler or on a grill until the outside
  • is blackened and flesh is soft. Transfer peppers to a bowl, cover with a plate
  • and let stand for about 5 minutes. When cool enough to handle, peel off skins,
  • discard cores, seeds and veins, and cut into long, thin strips. Stir all
  • ingredients together in a serving bowl. Let stand at room
  • temperature until ready to serve.

This is based on a Weight Watchers recipe modified to suit my own tastes. A wonderfully simple salad that can play center stage at the meal or accompany grilled meat and vegetables. Travels well and would work well for a potluck or picnic.

Number Of Ingredients 10

1/2 lb dry lentils, rinsed and picked over to remove debris
6 cups water
1/3 cup balsamic vinegar
2 teaspoons olive oil
1 large red pepper
1 clove garlic, finely minced
1/2 cup fresh basil, chopped
1/8 teaspoon table salt, to taste
1/8 teaspoon black pepper, to taste
1/3 cup reduced-fat feta cheese, crumbled

Steps:

  • Bring lentils and water to boil in a saucepan over high heat.
  • Reduce heat, cover and simmer until lentils are tender, about 30 minutes.
  • While the lentils are cooking, char the red pepper over a high flame on the stove until the skin is blackened and blistered.
  • Place it in a paper or plastic bag for 10 minutes to get the skin to further loosen.
  • Remove skin from pepper and dice into 1/2 inch pieces.
  • Set aside.
  • Drain lentils and transfer to a large bowl.
  • Add vinegar, oil, garlic, peppers and basil; toss to combine.
  • Season to taste with salt and pepper.
  • Place salad onto serving platter/bowl or individual plates.
  • Top with feta crumbles.
  • Serve warm or chilled.

ROASTED PEPPER SPINACH SALAD

This refreshing, colorful salad comes from Jillian Moseley-Williams of Barrie, Ontario. The spinach leaves are tossed with sliced veggies and a tangy red wine vinaigrette.

1 medium sweet red pepper
1/3 cup thinly sliced fresh mushrooms
1/2 small zucchini, julienned
1/4 cup red wine vinaigrette
2 cups fresh baby spinach

Steps:

  • Broil the red pepper 4 in. from the heat until skin blisters, about 2 minutes. With tongs, rotate pepper a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place pepper in a bowl; cover and let stand for 15-20 minutes. , Peel off and discard charred pepper skin. Remove stem and seeds. Finely slice pepper; place in a bowl. Add mushrooms, zucchini and vinaigrette; marinate for at least 10 minutes. Place spinach in a serving bowl; add vegetables and toss gently to coat.

3 red and 3 yellow peppers
3 tbsp extra-virgin olive oil , plus extra for grilling
1 large garlic clove
1 tbsp white wine vinegar
2 tbsp pine nut , toasted
1-2 tbsp capers
few basil leaves , shredded (optional)

Steps:

  • Turn on the grill and line a baking tray with foil. Arrange the peppers, skin-side up, on the baking tray and brush with oil. Grill for 10-15 mins, turning, until skins are well charred. Put the peppers in a plastic bag and seal for 5 mins to loosen the skins.

3/4 pound snow peas
Salt to taste
2 red sweet peppers, about 3/4 pound, roasted, skinned, cored and cut into thin strips, about 1 cup
1 small red onion, peeled, halved and cut into thin slices
1 tablespoon Dijon-style mustard
2 tablespoons red-wine vinegar
1/2 teaspoon ground cumin
Salt and freshly ground pepper
1/4 cup olive oil
1/4 cup finely chopped parsley

Steps:

  • Cook snow peas in boiling salted water to cover for 2 minutes. Drain. Run cold water briefly over snow peas and drain again. Put snow peas, pepper strips and onion in a salad bowl.
  • Put mustard, vinegar and cumin in a small bowl and add salt and pepper. Beat vigorously with a whisk while adding oil. Stir in the parsley and pour dressing over vegetables. Toss and serve.

2 green bell peppers
2 red bell peppers
3 ripe peaches
3 green onions, chopped
2 garlic cloves, minced
2 tablespoons olive oil
2 teaspoons balsamic vinegar
1/2 small lemon, juice of
1 1/2 teaspoons sugar
generous pinch paprika
generous pinch cayenne pepper
2 tablespoons chopped of fresh mint
1 teaspoon chopped fresh dill

Steps:

  • Char the peppers all over on a stove burner or barbecue. Seal them in a paper bag for 20 minutes, then slip off the skins, remove the seeds, and cut into strips.
  • You can skin the peaches, if desired, or leave them as is. Remove the pits and slice the peaches.
  • Add the peaches to the peppers, then toss gently with the remaining ingredients.
  • Cover and refrigerate for an hour to let the flavors combine.
  • Let the salad warm for 15 minutes at room temperature, and serve.
