I took a traditional quiche recipe and adapted it by replacing the ham with beef. It is a great way to use left over beef roast or steak.-Glenda Parsonage, Maple Creek, Saskatchewan

Number Of Ingredients 11

1 unbaked pastry shell (9 inches)
1-3/4 cups finely chopped cooked roast beef
1/4 cup chopped green onions
1 tablespoon all-purpose flour
4 large eggs
1/2 cup evaporated milk
1 tablespoon steak sauce
1/8 teaspoon each dill weed, dried basil and dried oregano
Salt and pepper to taste
2 cups shredded cheddar cheese
1/2 cup chopped green pepper

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 5 minutes; remove foil. Bake 5 minutes longer. Reduce heat to 375°. Sprinkle beef and onions into the crust. , In a bowl, beat the flour and eggs until smooth. Add milk, steak sauce and seasonings; beat until smooth. Stir in cheese and green pepper. Pour into crust. , Bake for 25 minutes or until center is set. Let stand for 10 minutes before cutting.

BEEF AND CHEDDAR QUICHE

This recipe has been a family favorite for years. It's easy to prepare and perfect for a busy schedule. I've also made this recipe with salmon - substituting two cans for the ground beef and adding 1 tablespoon fresh lemon juice. It's great!

Number Of Ingredients 10

3/4 pound ground beef
1 unbaked pastry shell (9 inches)
3 large eggs, lightly beaten
1/2 cup mayonnaise
1/2 cup whole milk
1/2 cup chopped onion
4 teaspoons cornstarch
1 teaspoon salt
1/2 teaspoon pepper
2 cups shredded cheddar cheese, divided

Steps:

  • In a large skillet, cook the beef over medium heat until no longer pink. Meanwhile, line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 5 minutes. Remove foil; bake for 5 minutes more. Set aside. , Drain beef; place in a large bowl. Add the eggs, mayonnaise, milk, onion, cornstarch, salt, pepper and 1 cup cheese. Pour into crust. Bake at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. , If necessary, cover the edges of crust with foil to prevent overbrowning. Sprinkle with remaining cheese. Let stand 5-10 minutes before cutting.

Always my favorite quiche, this recipe was give to me by a friend many years ago. You can serve it at a brunch, ladies luncheon, a midnight snack, or take to a potluck supper. An upscale version of corned beef hash! YUMMY.

Number Of Ingredients 8

1 deep dish pie shell
15 ounces corn beef hash (I use 50% less fat by Mary Kitchen)
1/4 teaspoon salt (optional)
1/4 cup grated onion
2 eggs or 1/2 cup egg substitute
1/4 teaspoon ground black pepper
4 ounces whipped cream cheese with chives or 4 ounces whipped cream cheese
1 cup cream-style cottage cheese or 1 cup small curd cottage cheese

Steps:

  • Mix all Bottom Layer ingredients together and press into pie crust.
  • Mix all Top Layer ingredients together and pour over the first layer.
  • Bake at 350 degrees for 50-60 minutes or until set and firm in middle.
  • Cut into 4-6 wedges and serve.
  • MAKE-AHEAD: This can be made, baked and frozen.
  • VARIATION: To make as an appetizer, use a refrigerated pastry crust.
  • Press pastry into a rectangular baking pan and follow Steps 1 and 2.
  • Cut into small squares.

1/2 cup butter, softened
2 tablespoons finely chopped garlic
1 tablespoon finely chopped fresh thyme leaves
4 teaspoons salt
2 teaspoons pepper
1 cup Progresso™ beef-flavored broth (from 32-oz carton)
5 to 6 lb bone-in beef rib roast
1 tablespoon vegetable oil
1 cup sour cream
2 tablespoons prepared horseradish
1 tablespoon chopped fresh chives
1 teaspoon Dijon mustard
1/4 teaspoon pepper

Steps:

  • In small bowl, mix softened butter, garlic, thyme, salt and pepper. Set aside.
  • Spray 6-quart slow cooker insert with cooking spray. Pour beef-flavored broth into slow cooker. Rub beef roast all over with vegetable oil. Heat 12-inch skillet over medium-high heat. Cook 4 minutes on ribs side, then turn and cook 1 to 3 minutes each on other sides, until browned, holding roast upright in skillet with tongs if necessary.
  • Transfer to slow cooker, ribs side down. Rub butter mixture on top and sides of roast. Cover and cook on Low heat setting 3 to 5 hours or until desired temperature in center. For medium-rare, cook 3 hours 30 minutes to 4 hours, or until meat thermometer inserted in center reads 135°F. For medium, cook 4 hours 30 minutes to 5 hours, or until meat thermometer inserted in center reads 145°F. Transfer roast to cutting board. Cover roast loosely with foil; let stand 30 minutes before carving. Cut into slices.
  • Meanwhile, stir together Creamy Horseradish Sauce ingredients. Serve with roast.
