4 chicken breasts (boneless skinless)
1/4 cup mayonnaise
1 Tablespoon Lemon Juice
30 Ritz Crackers (about 1 cup, finely crushed)
1/4 cup parmesan cheese (grated)
2 teaspoons basil leaves (dried)

Steps:

  • Preheat oven to 400 degrees. Prepare a baking sheet by lining it with foil and spraying with cooking spray.
  • In a small bowl mix together mayonnaise and lemon juice. In another bowl, mix together crushed ritz crackers, parmesan cheese, and basil.
  • Dredge the chicken in the mayonnaise and then coat them in the ritz crumbs. Place the chicken on the baking sheet and bake for 20 minutes or until chicken is cooked throughout and no longer pink.

1/4 cup KRAFT Real Mayo
1 Tbsp. lemon juice
25 round buttery crackers, finely crushed (about 1 cup)
1/4 cup KRAFT Grated Parmesan Cheese
2 tsp. dried basil leaves
4 small boneless skinless chicken breasts (1 lb.)

Steps:

  • Heat oven to 400°F.
  • Mix mayo and lemon juice in medium bowl. Combine cracker crumbs, cheese and basil in separate bowl.
  • DIP chicken, 1 breast at a time, in mayo mixture, then roll in crumb mixture until evenly coated. Place on baking sheet sprayed with cooking spray.
  • Bake 20 min. or until done (165°F).

34 Ritz crackers, broken into pieces (4 1/2 ounces or 1 sleeve)
1 cup parmesan cheese, grated
1/2 teaspoon fresh ground black pepper
1/2 cup all-purpose flour
2 large eggs
1/2 cup milk
4 six-ounce chicken breasts, boneless skinless and pounded to 1/2 inch thick
2 tablespoons unsalted butter
2 tablespoons vegetable oil
3 1/2 cups marinara sauce, bottled
1 cup mozzarella cheese, shredded

Steps:

  • Preheat the oven to 350°F and butter a 9x13-inch baking dish.
  • Combine the Ritz crackers, Parmesan and pepper in the bowl of a food processor. Process until the mixture forms fines crumbs, about 20 seconds.
  • Place the flour in a large bowl for dipping. Beat the eggs with the milk in separate large bowl until frothy. Place half of the Ritz cracker and Parmesan mixture in a third bowl for dipping.
  • Working with one breast at a time, roll in the flour making sure it is thoroughly coated. Dip in the egg and turn until coated. Transfer to the Ritz cracker crumb bowl and turn until the chicken is completely coated. Transfer to a plate or platter. (Can be done several hours in advance at this point. Keep refrigerated until ready to proceed).
  • Melt the butter with the oil in a large skillet over medium-high heat. Add the Ritz cracker-coated chicken and cook until lightly browned, 3 to 4 minutes per side.
  • Spread enough of the marinara sauce to thickly coat the bottom of the baking dish. Arrange the chicken on top of the sauce. Spoon the rest of the sauce over each breast and top with the mozzarella cheese and the remaining Ritz cracker and Parmesan mixture. Bake until bubbly and browned, 15 to 20 minutes.

My husband and I came up with this super-easy chicken dish one night when we didn't have much time. The chicken comes out juicy and tender with very few ingredients and almost no prep time. We like to serve it with broccoli and baked potatoes or rice but it would go with almost anything. This makes enough for 2-3 but recipe could be easily doubled.

1 lb approx. boneless skinless chicken breast
15 -20 Ritz crackers (1/2 sleeve)
3 -4 tablespoons butter, melted
1 -2 tablespoon parmesan cheese

Steps:

  • Preheat oven to 375.
  • Cut chicken into pieces of desired size. I like to make them small (2" chunks) so I can use more crackers.
  • Crumble crackers into a bowl (crumbs should not be too small) and mix in cheese.
  • Coat chicken with melted butter and then roll in cracker crumb mix. Place on baking sheet or pan and sprinkle more crumbs on top.
  • After all pieces are coated, drizzle remaining butter over chicken and top with remaining crackers.
  • Bake at 375 for 18-22 minutes (longer if pieces are large) or until center of chicken is no longer pink.

1 tablespoon lemon juice
25 Ritz crackers, finely crushed (about 1 cup crumbs)
1/4 cup kraft 100% grated parmesan cheese
4 small boneless skinless chicken breast halves (1 lb.)

Steps:

  • PREHEAT oven to 400°F
  • Mix mayo and lemon juice in medium bowl; set aside. Combine cracker crumbs and cheese in separate medium bowl. DIP chicken in mayo mixture, then roll in cracker crumb mixture until evenly coated on all sides.
  • Place on ungreased baking sheet. BAKE 20 minute or until chicken is cooked through (170°F).
  • Round Out The Meal Serve with a steamed vegetable and a mixed green salad.
  • Great Substitute Prepare as directed, substituting 1/4 cup KRAFT Classic Caesar Dressing or KRAFT Ranch Dressing for the mayo and lemon juice.

I use small chicken breasts or butterfly large chicken breasts and split them in half so the chicken is not too thick to bake. I usually double the recipe then because my family always likes extra.

  • Place on nonstick baking sheet (I like to use the nonstick aluminium foil for this, it works great!).
