RITA'S EGGS STRATA
This is a wonderful recipe for a special occasion Brunch or Breakfast. Passed on to my by a dear friend, this has been a Christmas Morning tradition in my home for almost 10 years.

Steps:
- Spread butter onto one side of each slice of bread. Cut into quarters. Lay half of the bread, butter side down, in the bottom of a 9x13 inch baking dish. Top with half of the Cheddar cheese and half of the Monterey Jack. Layer the remaining bread over the cheese, and top with the other halves of the cheeses.
- In a large bowl, whisk together the eggs, half-and-half, and milk. Stir in the brown sugar, salt, pepper, cayenne, onion powder, mustard powder, and Worcestershire sauce. Pour over the cheese and bread. Cover, and refrigerate at least 6 hours, preferably overnight.
- Preheat the oven to 325 degrees F (165 degrees C). Bake the strata uncovered for 1 hour in the preheated oven. Let stand for 10 minutes before serving. Slice and garnish with fresh parsley.

RITA'S DEVILED EGGS
This recipe is from my friend, Rita. They are always the first to go at parties. I'm always up for a new twist on deviled eggs, so I was so happy to get the recipe from her. They are the best I have ever had (including my own:( Yummy! You can add a little more mayo if you prefer a creamier filling.

Steps:
- Hard-boil eggs (10-15 minutes).
- Cut each egg in half lengthwise and remove yolks.
- In bowl, smash yolk with fork.
- Add all other ingredients (except egg whites), and beat with hand mixer.
- Fill egg halves with mixture by either spooning it in or piping in.
- Sprinkle tops with paprika.
MUSHROOM DEVILED EGGS
Our Russian family has been making these for years. It is always a dish at our dinner parties and holiday dinners. I could eat these forever!!! Great for people that love mushrooms, mayo, and eggs. Leftover mixtures can be mixed into rice or even eaten with bread, soup, etc.

Steps:
- Boil the eggs in salt for about 12 minutes and set aside when finished.
- Meanwhile, start to cut up the mushrooms into small pieces. (about the size of mini m&m's), but don't make them too small because when you cook them on the skillet they will get smaller.
- Heat up a 10 inch skillet on med-high heat with some vegetable or olive oil, & throw the cut up mushrooms on there.
- While that's starting to cook, mince the onion and throw it in with the mushrooms after about 7 minutes. (the mushrooms cook longer and you don't want to burn the onion).
- Sprinkle that mixture with the salt and pepper. Stir around.
- Cook for about 13 minutes or when the look and the smell of the mixture tells you that the food is cooked thoroughly. Some describe the mushrooms done when they "pop" off of the skillet.
- While that is cooking, take the shells off of the eggs, slice them in half, and take the yolks out carefully. (keep half of the yolks).
- When the mushroom/onion mixture is done, place it from the skillet into a separate bowl and mix in 1 tbsp of mayo (or more if you want) and half of the yolks.
- Stuff each half of each egg with the mixture.
- Place a little more mayo on top of each half of each egg and top with cilantro for garnish.

DEVILED EGGS WITH OLIVES
I found this in a Tapas cookbook I have. A twist on deviled eggs and very delicious. Easy to double or half the recipe.

Steps:
- Hardboil the eggs. Put eggs in a pan, cover with cold water, bring to a boil. Reduce heat to low, cover and simmer for 10 minutes. Drain and run eggs under cold water. Let eggs cool.
- Crack the eggs and remove the shells. Cut the eggs in half and carefully remove the yolks. Rub the yolks through a strainer into a medium-sized bowl.
- Add the rest of the ingredients to the eggs and mix well.
- Fill each egg white with the yolk mixture.
- Using the reserved pimentos and olives, add one of each to top of every egg as decoration.
- Dust with paprika.
