RISOTTO WITH TOMATO CONSOMME AND FRESH CHEESE

Steps:
- Put the chopped tomatoes, carrot and bell pepper into a blender, add the vegetable broth and puree until smooth. Strain the broth into a large, heavy-bottomed skillet or pot and simmer.
- Heat the olive oil in a large saucepan at medium heat. Add the leek and the garlic and saute until soft, about 5 minutes. Add the rice and stir. Ladle in 1/2 cup of the vegetable broth and stir. Increase the heat to medium-high and, for the next 25 minutes, continue adding the broth, 1/2 cup at a time, stirring constantly. Season to taste with salt and pepper. The rice should be tender but firm. If not, add more vegetable broth until the rice is tender. Remove the rice from the heat immediately. Quickly stir in the mozzarella and the basil leaves. Divide among 4 bowls and garnish with the cracked black pepper.

Steps:
- 1. Mix first 5 ingredients; stir well and set aside. Bring broth to a simmer in medium pan Don't boil. Keep warm over low heat. Heat 2 tsp. oil in large pan over medium high heat. Add onion; sauté 3 minutes. Add rice; cook, stirring constantly, 1 minute.
- 2. Add wine; Cook, stirring constantly, 1 minute or til liquid is nearly absorbed. Add warm broth, 1/2 cup at a time, stirring constantly til each addition is absorbed before adding the next (about 20 minutes total). Add tomato mixture; cook, stirring constantly, 2 minutes. Remove from heat and stir in mozzarella and pepper. Sprinkle each serving with Parmesan cheese. Makes 6 servings.
GORDON RAMSAY'S TOMATO AND MUSHROOM RISOTTO
This creamy risotto recipe was in the "Dinner for Four Under $10" section of People magazine. I haven't tried it yet but Gordon Ramsay seems to make really good dishes and this looked yummy!

- In a large saucepan sauté the shallots with the olive oil for about 3 to 4 minutes and then add the mushrooms and continue to sauté for another 5 minutes, stirring frequently until softened.
- Stir in the rice and cook for another minute or two. Add the wine, stir and cook until absorbed. Pour in a quarter of the chicken broth, bring to a boil and cook until absorbed, stirring frequently.
- Gradually stir in the rest of the broth over a period of about 15 minutes, adding more as each previous amount is absorbed. This helps to give you a creamy risotto.
- When the rice is al dente, mix in the tomatoes and herbs. Check the seasoning and stir in the cheeses. Serve in warmed bowls topped with shaved aged Parmesan.

- In another large saucepan, heat the olive oil into medium heat and add the onions and garlic. Sauté for 5 minutes, until the onions are softened, but not colored.
- Turn the heat up and add the rice. Saute the rice, whilst stirring it, until it becomes translucent. Pour in the wine and wait for it to evaporate whilst stirring.
- Add the grated tomatoes. As soon as the rice starts to absorb the tomatoes, add your first ladle of hot stock and the cherry tomatoes and turn the heat down. Stir the rice and wait for the stock to be absorbed before adding the next ladle. Add the ouzo and repeat the procedure, with the rest of the stock. This should take about 15 minutes, until the rice is soft but with a slight bite.

- After 15 minutes the tomatoes will be nicely roasted. You can either leave them whole or else gently mash them to break them down.
