RICOTTA SAUSAGE TRIANGLES

Savory pockets filled with cheese, sausage and seasonings...what's not to like? This recipe makes a lot so it's ideal for parties or potlucks. If you don't need the entire amount, they do freeze well. -Virginia Anthony, Jacksonville, Florida

1 carton (15 ounces) part-skim ricotta cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 jar (8 ounces) roasted sweet red peppers, drained and chopped
1/3 cup grated Parmesan cheese
3 tablespoons chopped ripe olives
1 large egg
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound bulk Italian sausage
1 medium onion, chopped
96 sheets phyllo dough (14x9-inch size)
Olive oil-flavored cooking spray
Warm marinara sauce, optional

Steps:

  • In a large bowl, combine the first 10 ingredients. In a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Stir into cheese mixture., Place 1 sheet of phyllo dough on a work surface with a short end facing you; spray with cooking spray. Top with a second sheet of phyllo; spray again with cooking spray. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.) Cut layered sheets into three 14x3-in. strips., Place a rounded teaspoonful of filling on lower corner of each strip. Fold dough over filling, forming a triangle. Fold triangle up, then fold triangle over, forming another triangle. Continue folding, like a flag, until you come to the end of the strip., Spritz end of dough with spray and press onto triangle to seal. Turn triangle and spritz top with spray. Repeat with remaining phyllo and filling., Place triangles on baking sheets coated with cooking spray. Bake at 375° until golden brown, 15-20 minutes. Serve warm and, if desired, with marinara sauce. Freeze option: Freeze unbaked triangles in freezer containers, separating layers with waxed paper. To use, bake triangles as directed, increasing time as necessary until golden and heated through.

The only tricky part of this recipe is working with phyllo, and once you get the hang of it, it's fun. Sometimes you get a bad batch of phyllo that rips and tears easily, so I always buy an extra just in case. I have frozen these before baking. Just add a few minutes to cooking time when you cook them in a frozen state. I have also doubled this recipe for large parties.

3 tablespoons olive oil
1 onion, finely chopped
1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
1 teaspoon salt
1 (4 ounce) package feta cheese, crumbled
½ cup cottage cheese
1 egg, beaten
1 (16 ounce) package phyllo dough
1 cup unsalted butter, melted

Steps:

  • Heat olive oil in a medium saucepan over medium heat. Slowly cook and stir onion until tender, about 5 minutes. Mix in spinach and salt. Stir in feta cheese, cottage cheese and egg. Cook and stir until thickened, 5 to 10 minutes. Reduce heat to simmer.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Unroll phyllo dough sheets one at a time on a flat surface. Brush with unsalted butter. Cut into strips approximately 5 inches wide. Place 1 tablespoon of the onion, spinach and feta mixture at one end of each dough strip. Fold the end of the strip over the filling so that it forms a triangle. Continue folding the strip in triangles until a small, triangular stuffed pastry remains. Brush with unsalted butter. Repeat with remaining phyllo dough.
  • Arrange stuffed triangles on a large baking sheet. Bake in the preheated oven 12 to 15 minutes, until golden brown. Serve warm.

1 cup feta or 1 cup blue cheese, crumbled
1/3 cup ricotta cheese or 1/3 cup 2% fat cottage cheese
1 egg, beaten
1 green onion, finely chopped
1/4 teaspoon pepper, fresh ground
1 (397 g) package puff pastry, frozen, thawed
1 egg, beaten, for glazing pastry

Steps:

  • Preheat oven to 425°F degrees.
  • Lightly grease a baking sheet.
  • In a medium bowl, combine cheeses, egg, green onion and pepper; set aside.
  • On a lightly floured surface, roll out half the puff pastry to a 10 inch square. With a sharp knife, cut pastry into 9 even squares, repeat with other half of puff pastry.
  • Working with one square at a time, place a spoonful of the cheese mixture in the middle of each pastry square; brush edges very lightly with water, then fold one corner over to meet the opposite corner, forming a triangle.
  • Press edges together to seal, then crimp firmly shut with the tines of a fork.
  • Place triangles on baking sheet; brush the tops with the second beaten egg.
  • Bake for 13 to 15 minutes or until the tops are golden and the bottoms are nicely browned.

1/2 lb cream cheese
1 lb fresh ricotta cheese
1 lb large-curd cottage cheese
granulated sugar
1/2 teaspoon grated nutmeg
18 sheets commercial filo pastry
1/2 cup butter, melted (or more)

Steps:

  • Using an electric mixer, beat the cream cheese at high speed until light and fluffy.
  • Lower the speed and add the ricotta, cottage cheese, 1 1/2 tablespoons sugar, and the nutmeg.
  • Beat for 1 minute at high speed, then set aside while you prepare the filo.
  • Lay the filo flat on a table and keep covered with a damp towel over waxed paper or plastic wrap.
  • By stacking 4 sheets, form a base of 15 x 18 inches, brushing the top of each sheet with melted butter as you stack them.
  • Then lay 2 sheets at right angles over the center, using the"base" as a diamond, not a square, brushing the center of each with butter.
  • Divide the filling into 3 parts and spread one part over the filo to form a 7-inch square.
  • Set the rest of the filling aside.
  • Fold the top filo sheet over the cheese and brush with butter, and continue folding the filo over the cheese to make a square, brushing each time with butter.
  • With a wide spatula, lift the bougatsa and invert onto a cookie sheet.
  • Brush the top with butter and set aside.
  • Repeat with the remaining filo, filling until all 3 square pies are folded.
  • Bake in a 350 degree oven for 15 to 20 minutes or until the filo puffs up and turns a golden chestnut color.
  • Cut into small squares and sprinkle with additional sugar.
  • Serve piping hot.
