I'm posting this in response to a request on the boards. This is a different type of Italian dessert with a rich filling. I found it on a site called cooking with Patty.

2 1/3 cups flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1 egg
1 tablespoon milk
1 tablespoon grappa (optional)
1 cup cold butter, thinly sliced
14 ounces fresh ricotta
3/4 cup sugar
1 cup un-sweetened chocolate chips

Steps:

  • Preheat oven to 320°.
  • Grease and flour a 9" springform pan.
  • For the crust, in a large bowl mix the flour, sugar, baking powder, egg, milk and grappa, if used.
  • Add the slices of cold butter to the mixture working it in gently, but not so much that everything blends together.
  • Take half the crust mixture and press it gently into the bottom of the pan.
  • In a medium size bowl, mix the ricotta and sugar well.
  • Add the chocolate chips mix again.
  • Spread the filling evenly over the top of the crust.
  • Crumble the remaining crust mix over the top of the filling.
  • During the baking process the butter melts to form a nice crust.
  • Bake 50 to 60 minutes.

This delicious cake is the perfect cake moist, not too sweet, not too gooey. Just enough to compliment the perfect ending to dinner

1 teaspoon(s) flour
1/2 cup(s) mini semi sweet chocolate chips
2 tablespoon(s) mini semi sweet chocolate chiips
1 1/2 teaspoon(s) baking powder
1/4 teaspoon(s) salt
2 eggs
1 egg yolk
1 cup(s) white sugar
2 teaspoon(s) vanilla extract
1/2 cup(s) olive oil
1 cup(s) whole milk ricotta
confectioners sugar for dusting

Steps:

  • Preheat oven to 350 degrees Spray a tube pan with baking spray Set aside
  • Put 1/2 cup chocolate chips ina bowl and add 1 teaspoon of flour to them. Toss until chips are Well coated Set aside
  • In a mixing bowl, whisk together 2 cups flour, baking powder and salt. Set aside.
  • In a mixing bowl combine the eggs, yolk,sugar and vanilla. Beat with an electric mixer on medium speed until fluffy. Add in the oil and beat until combined. Beat in the ricotta until just incorporated.
  • Beat in the dry ingredients until just incorporated. Do not over mix. The batter will be thick. Fold in the chocolate chips tossed in flour and spoon into the prepared pan
  • Top with the remaining 2 tablespoons of chips
  • Bake for 40 minutes. Cool and dust with confectioners sugar as desired.

In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer, combine the sugar, flour, cocoa, baking soda, baking powder and salt; mix on low until dry ingredients are thoroughly combined. In a separate bowl combine the eggs, egg yolk, ricotta cheese, oil and vanilla, mix until completely combined. Pour mixture into the dry ingredients and beat on low until just incorporated. Pour in hot water and continue mixing until completely combined; about 1 minute. The batter will quite thin.
  • In a stand mixer fitted with the paddle attachment, cream the softened butter on medium-speed until completely smooth; about 3 minutes. Turn the mixer off and sift the powdered sugar and cocoa into the mixing bowl. Turn the mixer on the lowest speed and mix until the sugar/cocoa have been absorbed by the butter; about 2 minutes. Increase mixer speed to medium; add in vanilla extract, salt, and ricotta cheese; beat for 3 minutes. If your frosting appears a little too thin, add a little more sugar; If your frosting needs to be thinner, add additional ricotta cheese, 1 tablespoon at a time.

  • In the bowl of an electric mixer fitted with the paddle attachment or beaters, cream the butter and sugar on medium speed until light and fluffy, 2 to 3 minutes, scraping down the sides as necessary. Add the eggs one at a time, stopping to scrape down the sides of the bowl between each addition. Beat in the vanilla (don't worry if the batter looks curdled). Add the ricotta cheese and mix on medium-low speed until incorporated. Scrape down the sides of the bowl and add the dry ingredients in one addition. Mix on low speed until just combined. Remove the bowl from the mixer. Using a rubber spatula, fold the chocolate chips into the batter until they are evenly dispersed, making sure to scrape the very bottom of the bowl. (You'll notice that the ricotta cheese gives the batter a slightly grainy texture.)
  • Transfer the batter to the prepared pan, and use an offset spatula to smooth and level out the top. Bake the cake for 50 to 60 minutes, until completely set and golden brown on top. (If the top starts to get too dark towards the end, cover the pan loosely with foil.) Place the pan on a cooling rack for 15 minutes. Run a thin knife around the edges of the pan to loosen the cake, if necessary, then remove the ring of the springform pan. Let the cake cool completely on the rack before cutting.
