Crock pot carne guisada is a slow cooked Latin beef stew with baby red potatoes and Latin seasonings. Serve this topped with fresh aji picante - it's a must and really brightens the flavors and rounds out the dish!

2 tsp olive oil
1 cup scallions (chopped)
3 cloves garlic (minced)
2 small tomatoes (chopped)
2 tbsp cilantro (minced)
1 1/2 lb choice Top round beef stew (cut into small chunks)
2 tablespoons all purpose flour
1/3 cup light beer (I used Corona light)
1/3 cup water
1/2 tsp cumin
1/4 tsp dry adobo seasoning (or seasoned salt)
1/2 tsp ground achiote
1 dried bay leaf
kosher salt to taste
10 oz baby red potatoes (halved or quartered)
Aji Picante

Steps:

  • Heat a large nonstick skillet over medium heat.
  • Add 1 teaspoon of oil, scallions and garlic and sauté about 2 - 3 minutes; add tomatoes, cilantro and a pinch of salt.
  • Cook another 2 minutes, then place in the slow cooker.
  • Wipe the skillet, add remaining oil and increase the heat to medium high.
  • Add the beef and brown on all side, about 4 minutes.
  • Season with salt to taste and sprinkle flour over the meat, cook 1 minute turning often, then add to the slow cooker.
  • Add beer, water, cumin, adobo, achiote, bay leaf and 1/4 teaspoon kosher salt.
  • Add potatoes and cover, cook on low heat 6 to 8 hours or until beef is tender and the potatoes are cooked through.

2 1/2 pounds chuck roast
salt and pepper
2 tablespoons vegetable oil
1 cup chopped white onion
1 bell pepper
1 jalapeno pepper (seeded and diced into small pieces)
6 chopped garlic cloves
1 tablespoon ground cumin
2 teaspoons chili powder
1 teaspoon dried oregano
2 cups low-sodium chicken broth
14.5 ounces diced tomatoes
1/2 cup flour
1 pound potatoes
1/2 pound carrots

Steps:

  • Cut chuck roast into bite-sized pieces and season with salt and pepper. Heat 1 tablespoon of cooking oil in a large skillet on medium-high and cook meat until browned on all sides, when the meat is browned place into a 5 or 6-quart slow cooker.
  • You may need to cook the meat in two batches. When the meat is removed add remaining oil and add chopped onion, tomatoes, chopped bell pepper, diced jalapeno pepper, chopped garlic. When the onions have almost become translucent add spices, flour, and stir to combine.
  • When the onions have cooked through add chicken broth and diced tomatoes. Scrape the browned bits up from the bottom of the skillet. Place the meat back into the slow cooker.
  • Place lid on the slow cooker and cook on high for 4 1/2 hours. Place cut potatoes and cut carrots into the slow cooker and cook for the remaining 1 1/2 hours.

3 pounds chuck roast, cut into 1 1/2-inch cubes
3 medium potatoes, unpeeled and diced
1 medium onion, chopped
2 red bell peppers, cut into strips
3 cloves garlic, crushed
¼ cup all-purpose flour
¼ cup chili powder
1 teaspoon cumin
1 teaspoon salt
3 cups beef broth

Steps:

  • Combine beef, potatoes, onion, peppers, and garlic in a large bowl. In a small bowl, mix together the flour, chili powder, cumin, and salt. Toss the beef mixture with the flour mixture until evenly coated. Place the mixture into a slow cooker, and pour in enough beef broth to barely cover the meat. If you don't have quite enough, you can fill the rest of the way with water.
  • Cook on Low until the beef is tender, 6 to 8 hours.

One of my favorite Mexican dishes is carne guisada. I combined parts of several recipes and adapted a bit for crock pot cooking. The family likes it even though they always say it's a little spicy.

2 lbs beef round roast
2 garlic cloves, minced
1 small onion, chopped, finely
1 jalapeno pepper, minced
2 cups beef stock
3 tablespoons tomato paste
3/4 teaspoon salt
2 teaspoons chili powder
2 teaspoons cumin
1/8 teaspoon black pepper
6 corn tortillas

Steps:

  • Cut the meat into bite sized cubes, put into crock pot. Add the garlic, onion and chilis. Add the tomato paste and stock. Add all remaining ingredients except tortillas. Cook on low for 6 to 8 hours. Serve with tortillas and Spanish rice.
  • Warning: I've made my own recipe recently and it was disastrous. I tried to rate it, but wasn't able to. I've made it with good results in the past, but if I can't get consistent results you probably can't either.

1/4 cup all-purpose flour
2 tablespoons tomato paste
1 jalapeno pepper, seeded and chopped
4 teaspoons Worcestershire sauce
1 bay leaf
2 to 3 teaspoons crushed red pepper flakes
2 teaspoons chili powder
1-1/2 teaspoons ground cumin
1/2 teaspoon salt
1/2 teaspoon paprika
2 garlic cloves, minced
1/2 teaspoon red wine vinegar
Dash liquid smoke, optional
1 boneless pork shoulder butt roast (3 pounds), cut into 2-inch pieces
2 large unpeeled red potatoes, chopped
1 medium onion, chopped
Whole wheat tortillas or hot cooked brown rice, lime wedges and chopped fresh cilantro, optional

Steps:

  • In a 4- or 5-qt. slow cooker, mix first 13 ingredients and, if desired, liquid smoke. Stir in pork, potatoes and onion. Cook, covered, on low until pork is tender, 7-9 hours., Discard bay leaf; skim fat from cooking juices. Shred pork slightly with 2 forks. Serve with remaining ingredients as desired.

2 1/2 pounds beef chuck roast or bottom round, cut into 1-inch pieces
Coarse salt and ground pepper
2 tablespoons vegetable oil
1 medium white onion, diced medium
1 medium green bell pepper, seeded and diced medium
1 large jalapeno, seeded and diced small
5 garlic cloves, roughly chopped
1 1/2 teaspoons ground cumin
3/4 teaspoon chili powder
3/4 teaspoon dried oregano
6 tablespoons all-purpose flour
1 3/4 cups low-sodium chicken broth
1 can (14 ounces) diced tomatoes
2 bay leaves
Flour tortillas, warmed, grated cheddar, and cilantro, for serving

Steps:

  • Season beef with salt and pepper. In a large skillet, heat 2 teaspoons oil over high. In 2 batches, cook beef until browned on all sides, 5 minutes per batch (add 2 teaspoons more oil for second batch). Transfer to a 5- to 6-quart slow cooker.
  • In same skillet, cook 2 teaspoons oil, onion, bell pepper, jalapeno, and garlic over medium, stirring and scraping up browned bits with a wooden spoon, until vegetables are tender, 5 minutes. Add cumin, chili powder, oregano, and flour and cook 1 minute. Slowly pour broth into skillet, stirring until liquid is smooth. Simmer 2 minutes, then transfer mixture to slow cooker, along with tomatoes and bay leaves. Season to taste with salt and pepper and stir to combine. Cover and cook on high 6 hours. Serve in tortillas with cheese and cilantro.

We love carne guisada around our house. This is a really easy recipe! FYI: I always go to my local meat market and have them cut a good looking rump roast into stew meat. It saves me the time of having to cube the meat myself and that way i get to pick out the best cut of meat. Also, if you like spicy, leave the seeds in one or two of the jalapenos. **UPDATE- I have recently improved this recipe to a point that I almost removed some of the original parts from what I had posted. Instead, I am adding options for the meat and cooking method. Please let me know which method you used if you rate this.

2 -3 lbs rump roast, cubed or 2 -3 lbs chuck roast, whole
2 minced garlic cloves
3 fresh jalapenos, chopped, seeds and stems removed
1 small onion, chopped
2 cups beef stock
1 (6 ounce) can tomato paste or 1 (8 ounce) can tomato sauce
1/2 teaspoon salt
2 teaspoons cumin
2 teaspoons chili powder
2 tablespoons cornstarch

Steps:

  • *METHOD 1: If using rump roast, simply place all ingredients into crock pot. Whisk corn starch in with a bit of beef stock before adding to the pot.
  • Cook on low for 6-7 hours.
  • For best results, stir all ingredients about 1-2 hours into cooking.
  • *METHOD 2: If using chuck roast, brown both sides of the roast in a pot before putting it in the crock pot. My new favorite thing to do is to completely omit the crock pot. I brown the chuck roast in a dutch oven, then add remaining ingredients and cook it in a 300 degree oven for about 4 hours, or until the meat is so tender that it pulls apart easily with a fork.
  • The tenderness of method 2 (with dutch oven) is absolutely mouth-watering!
  • If using a chuck roast, don't forget to pick out all the pieces of fat before serving. You wouldn't want to bite into a piece of that!
  • Try it whichever way you like, you won't be disappointed!

salt & pepper
3 garlic cloves, minced
1 cup chopped onion

1 diced bell pepper

  • Place stew meat, 1/4 cup water, salt and pepper in crock pot.

  • Add tomatoes, garlic, and onions to crock pot.
  • STIR and let simmer on high for 30 minutes.

  • Blend juice and enough water to equal 1 1/2 cups liquid and flour stir into meat/veggie mixture.
  • Let cook on LOW for 3-4 hours until sauce is nice and thick (if you like runnier gravy three hours is good).
  • Serve with warm flour tortillas.
