SWEET AND SPICY HAM FRIED RICE



Sweet and Spicy Ham Fried Rice image

Pair sweet chili sauce with chili oil to get a sweet heat for this ham-and-shiitake rice dish.

2 tablespoons vegetable oil
1 large egg, beaten
1 cup diced ham
1/2 cup sliced stemmed shiitakes
1/2 cup diced red bell pepper
1 tablespoon Asian sweet chili sauce
1 teaspoon finely grated fresh ginger
1 teaspoon soy sauce
Kosher salt
3 cups cold cooked long grain white rice
1 to 1 1/2 teaspoons Asian chili oil
2 tablespoons chopped scallions

Steps:

  • Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop out onto a plate.
  • Add the remaining tablespoon oil, then add the ham and shiitakes and cook, stirring constantly, until golden, about 3 minutes. Add the bell pepper, sweet chili sauce, ginger, soy sauce and 1/4 teaspoon salt and cook, stirring constantly, until the pepper are crisp-tender, about 2 minutes.
  • Add the rice, stirring to break up any clumps, and spread it out in the skillet. Cook until heated through, about 3 minutes. Return the egg to the skillet and cook, stirring and breaking up the egg, to mix it in thoroughly, about 1 minute. Season with additional salt if needed. Stir in the chili oil, sprinkle with the scallions and serve.

Normally a pepper and rice dish has a Mexican or Spanish kind of flair to it. I wanted something a little more Italian, and this is what I came up with.

2 cups water
1 cup long grain rice
1 tablespoon olive oil
1 small sweet onion, finely chopped
3 cloves garlic, minced
1 small green bell pepper, chopped
1 small red bell pepper, chopped
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon ground black pepper
1 tiny pinch salt
1 splash dry white wine
1 tablespoon grated Parmesan cheese

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, 20 to 25 minutes.
  • Heat oil in a large skillet over medium-high heat. Cook and stir onion in the hot oil until tender, about 3 minutes. Add garlic and continue to cook and stir until onion is translucent, 2 to 3 minutes more. Stir green bell pepper and red bell pepper into onion mixture; cook until tender, about 5 minutes. Season with basil, oregano, black pepper, and salt.
  • Pour wine into vegetable mixture and reduce heat to medium low. Simmer until liquid is reduced, about 5 minutes. Stir rice into vegetables. Top with Parmesan cheese before serving.

I CAME UP with this recipe several summers ago. I had a ham in the refrigerator and was trying to avoid heating up the kitchen by preparing it in the oven. The stovetop was the solution. 1 can (8 ounces) pineapple chunks
1/4 cup ketchup
2 teaspoons soy sauce
2 teaspoons sugar
2 cups cubed fully cooked ham
2/3 cup chopped green or sweet red pepper
1 tablespoon cornstarch
2 tablespoons cold water
Hot cooked rice, optional

Steps:

  • Drain pineapple, reserving 1/3 cup of juice; set pineapple aside. In a large bowl, combine the reserved juice, ketchup, soy sauce and sugar. Add ham and green pepper., In a large skillet, cook and stir ham mixture over medium heat for 5-7 minutes or until pepper is tender. Combine cornstarch and water until smooth; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in pineapple and heat through. Serve with rice if desired.

Ham and Peppers Stir Fry With Sweet and Sour Sauce image

We call this "Ham and Peppers" but there's onion and pineapple too. This is a great quick meal and an excellent use for leftover ham. The recipe was originally from a Doubleday Cookbook but has evolved during the past 12 years to suit our taste--we like the ham and onions slightly browned and the peppers crisp/tender. Serve over steamed rice and add soy sauce to taste. Note that this dish is best just after it's thickened and it doesn't reheat that well, but there's rarely any leftovers.

Number Of Ingredients 10

2 cups diced cooked ham
2 tablespoons butter (Divided in thirds)
1 (8 ounce) can pineapple chunks (don't drain) or 1 (8 ounce) can pineapple tidbits (don't drain)
1 medium onion, peeled cut in half and quartered
1 medium bell pepper, cored seeded, and cut in 1/2 inch strips (your favorite color)
2 tablespoons cornstarch
2/3 cup chicken broth
1/3 cup firmly packed light brown sugar (or 1/3 cup granulated sugar with 1/2 tsp. molasses)
1/3 cup cider vinegar
2 tablespoons soy sauce

Steps:

  • Prepare the sauce by first stirring cornstarch with about 2 or 3 tbs.of the chicken broth in a small bowl.
  • When the cornstarch is dissolved and smooth, stir in the remaining sauce ingredients and set aside.
  • Brown ham in 1/3 of butter over moderately high heat in a skillet or wok until it begins to brown.
  • Remove and set the ham aside.
  • Melt another 1/3 of the butter in the skillet or wok and sauté the onions.
  • When they start to soften and turn translucent, add the peppers and the final 1/3 of the butter.
  • When the onions have somewhat browned, add the ham and the pineapple, juice and all.
  • Stir the sauce until smooth again (since the cornstarch tends to settle) and pour into skillet or wok.
  • Increase heat and stir until the sauce begins to bubble.
  • Reduce heat and stir for a minute or two until the cornstarch is fully cooked; if too thick, thin with a little water or broth.
  • Serve over steamed rice as soon as possible. I like to sprinkle some dried hot red pepper flakes over it; I love hot food and this gives the dish some zing!

1/2 cup red and green peppers cut into small cubes
1/4 cup cooked ham, cut into 1/4-inch cubes
1 cup converted rice
1 1/4 cups water
1 bay leaf
2 sprigs fresh thyme or 1/2 teaspoon dried
Tabasco sauce to taste
Salt and freshly ground pepper to taste
1 tablespoon butter

Steps:

  • Heat the oil in a saucepan and add the onion, peppers and ham and cook, stirring, until wilted. Add the rice and stir.
  • Add the water, bay leaf, thyme, Tabasco, salt and pepper. Stir well and bring to a boil. Cover and simmer for exactly 17 minutes.
  • Remove from the heat, discard the bay leaf and thyme sprigs. Add the butter and stir to fluff the rice

1 cup tomato juice

  • In a large saucepan melt butter over medium heat. Saute green pepper until crisp tender.
  • Stir in ham, undrained stewed tomatoes, tomato juice, peas, and water. Bring to a boil. Remove from heat and stir in instant rice. Cover and let stand about 5 minutes or until rice is tender.

  • Pour 2 cups of water into a large, deep skillet or Dutch oven and bring it to a boil over medium-high heat.
  • Add the halved peppers to the boiling water; reduce the heat to medium-low, cover the pan, and cook for 4 minutes.
  • Remove the peppers from the pan. Pour the liquid into another container or cup and set aside.
  • Wipe the skillet or Dutch oven out and add the butter. Place the pan over medium heat. When the butter has melted, add the onion and diced ham; sauté for about 4 to 5 minutes, or until the onion is translucent.
  • Add about 1/3 cup of the reserved cooking liquid along with the rice and the 4 ounces of shredded cheese.
  • Cook the rice mixture until the cheese has melted; add salt and pepper, to taste, and then add half of the parsley. Blend well.
  • Wipe the skillet or Dutch oven out and place a rack on the bottom. Add about 1 1/2 cups of the cooking liquid to the pan.
  • Place the filled peppers on the rack and bring to a simmer. Reduce the heat to low, cover the pan, and simmer for about 10 to 15 minutes.
