Sesame Rice image

Rice flavored with scallions and sesame seeds pairs nicely with roasted chicken or fish.

Coarse salt and ground pepper
1 cup long-grain rice, (not converted)
6 scallions, thinly sliced
1 tablespoon toasted sesame seeds
1/4 teaspoon toasted sesame oil

Steps:

  • In a medium saucepan, boil 1 1/2 cups water with 1 teaspoon salt. Stir in rice; return to a boil. Reduce heat to a simmer; cover and cook until rice is almost dry, 15 to 20 minutes. Remove from heat. Let stand, covered, until completely dry, 10 to 15 minutes.
  • Fluff with a fork; toss with scallions, sesame seeds, and sesame oil. Season with salt and pepper.

1 tablespoon sesame seeds
1 tablespoon butter
1/2 cup uncooked long grain rice
1/2 cup chopped celery
1/4 cup chopped onion
1 chicken bouillon cube
1/4 teaspoon salt
1-1/4 cups hot water

Steps:

  • In a medium skillet, saute sesame seeds in butter for 2-3 minutes or until golden. Add rice, celery and onion; saute until the rice is browned. Spoon into an ungreased 1-1/2-qt. baking dish. Dissolve bouillon and salt in water; pour over the rice mixture. Cover and bake at 325° for 50-60 minutes or until rice is tender.

BROWN RICE WITH SESAME SEEDS



Brown Rice with Sesame Seeds image

I have been making this for years as a variation on the way my folks taught me how to make white rice.

Number Of Ingredients 6

1 cup uncooked brown rice
2 tablespoons butter or 2 tablespoons olive oil (or a combination)
1/4 cup toasted sesame seeds
1 small onion, chopped
2 cups chicken broth (preferred) or 2 cups very hot tap water
1 teaspoon salt (decrease or delete if chicken broth is salted, required with water)

Steps:

  • Saute rice in butter just until translucent and very lightly browned.
  • Add onion and sesame seeds, and continue browning until onion is translucent, stirring frequently to prevent onion from burning.
  • Drain any excess butter or olive oil.
  • Add stock or water carefully to prevent steam burns; it WILL blow steam!
  • Adjust heat for a slow simmer, cover, and cook about 45-50 minutes, stirring gently every 15 minutes.
  • If all liquid is not absorbed, remove cover and continue cooking for up to another 15 minutes.
  • Fluff with a fork before serving.

This is how I love my brown rice. I always use short grain rice, adding about 1/2 cup more water than called for. With a splash of soy sauce, I'm in heaven!

1 cup brown rice
1 1/2 teaspoons dark toasted sesame oil
1 1/2 cups water
1/3 cup minced scallion
2 tablespoons toasted sesame seeds
2 -3 teaspoons soy sauce, to taste

Steps:

  • In a saucepan with a tight-fitting lid, toss the rice with 1/2 teaspoons of the sesame oil to coat the grains.
  • Add the water, cover, and bring to a boil, then reduce the heat and simmer until the rice is tender, about 40 to 45 minutes.
  • Stir in the scallions, sesame seeds, the remaining sesame oil, and soy sauce to taste.
  • Enjoy!
  • Note:.
  • Toast sesame seeds in a single layer on an unoiled baking tray at 350*F for 2 to 3 minutes, until fragrant and golden.
  • Watch carefully, so as not to burn!

TAMARIND RICE WITH SESAME SEEDS



Tamarind Rice With Sesame Seeds image

This recipe is slightlly adapted from the cookbook Cooking at Home with Pedatha. This is a very good south Indian recipe.

2 cups uncooked rice
1/2 teaspoon turmeric
1/2 teaspoon fenugreek seeds
3 1/2 tablespoons sesame seeds
3 tablespoons oil
1 tablespoon Urad Dal (split white)
1 tablespoon channa dal
1 tablespoon black mustard seeds
4 dried red chilies, halved
3 green serrano chilies
12 curry leaves
1 tablespoon tamarind paste
1/2 cup water
1/4 teaspoon hing
2 teaspoons salt
1 tablespoon oil
1 teaspoon split white Urad Dal
1 teaspoon channa dal
1/2 teaspoon mustard seeds
6 curry leaves

Steps:

  • Cook the 2 cups rice with water and the 1/2 teaspoons turmeric until tender. Set aside to cool.
  • Dry fry the 1/2 teaspoons fenugreek seeds and powder them. Set aside.
  • Dry fry the sesame seeds and powder them. Set aside.
  • In a dutch oven or other large cooking vessel put the 3 Table. oil, 1 Table. urad dal, 1 Table. chana dal, 1 Table. mustard seeds, and the dried red chilies.
  • Split the serrano chilies part way up and add them to the spices. Heat over high heat until the mustard seeds are popping AND the dals are light brown.
  • Reduce heat to medium and stir in the 12 curry leaves.
  • Add the tamarind concentrate and 1/2 cup water. Stir-fry for 3 minutes, adding a little more water if needed. The tamarind concentrate needs to cook a bit to loose its raw taste.
  • Stir in 1/4 teaspoons hing, the powdered fenugreek seeds and the powdered sesame seeds. Cook for 2 more minutes. The water should have evaporated by this time.
  • Reduce heat to low and stir in 2 teaspoons salt.
  • Slowly add the cooked rice and stir until it is well mixed. Remove from heat.
  • In a small frying pan put the remaining oil, urad dal, chana dal and mustard seeds. Heat over high heat until the dals are light brown. Quickly stir in the 6 curry leaves and then pour the spices over the top of the rice for a crunchy topping.
  • 1 teaspoons of curry powder can be added when you add the powdered sesame seeds, if desired.

2 tablespoons vegetable oil
1 tablespoon sesame seeds
3/4 teaspoon ground turmeric

Steps:

  • Wash rice in several changes of water and drain. Transfer to a bowl and add enough wataer to cover generously. Leave to soak 30 minutes, then drain.
  • Heat oil over medium heat in a medium sized saucepan with a heavy base. When oil is hot add sesame seeds and stire until golden brown.
  • Add rice, turmeric and salt. Turn heat down to medium. Stir gently to saute 1 minute. Add 600 ml water and bring to a boil.
  • Cover rice with a tight lid and turn heat down as low as possible. Leave to cook, undisturbed, 25 minutes. Remove lid and transfer rice to a warmed serving dish.
