Rice pudding has been a family favorite for generations, both because of its fantastic flavor and ease of preparation. You and your family will love this pudding's creamy texture.

4 cups milk
1 package (3 ounces) cook-and-serve vanilla pudding mix
1 cup uncooked instant rice
1 egg, beaten
1/4 teaspoon ground cinnamon
1/4 teaspoon vanilla extract

Steps:

  • In a large saucepan, combine the first five ingredients. Cook and stir over medium heat until mixture comes to a boil. Remove from the heat; stir in vanilla., Cool for 5 minutes, stirring twice. Spoon into individual serving dishes. Serve warm or chill until serving.

⅓ cup uncooked white rice
⅓ cup white sugar
1 pinch salt
1 quart whole milk
2 tablespoons vanilla extract
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Coat a 2 quart casserole dish with nonstick cooking spray.
  • In the casserole dish, mix together rice, sugar and salt. Stir in milk and vanilla.
  • Bake, uncovered, in preheated oven for 1 1/2 to 2 hours, stirring every 20 minutes. Let stand for 30 minutes. Sprinkle top with cinnamon.

Shaki Kheer Creamy Rice Pudding With a Coconut Twist image

Every September in India a grat festival is held to give thanks to Ganesha (the elephant god). A celebratory pudding is eaten in celebration - kheer, creamy rice pudding. Because I love coconut, I've changed to recipe & replaced the regular milk with coconut milk. Note that you can adjust thickness by using less or more milk. This is not for everyday as it is very sweet.

1 cup short-grain rice
2 (13 1/2 ounce) cans light coconut milk
2 (14 ounce) cans sweetened condensed milk
1 teaspoon saffron

Steps:

  • Soak the rice in cold water 30 minutes & rinse.
  • Measure the sweetened condensed milk and stir in the saffron. Set aside.
  • Boil the rice and coconut milk together, then simmer, stirring from time to time, until the rice is tender (about 15 minutes).
  • Add the condensed milk and saffron to the rice and coconut milk. Turn off heat.
  • Can be served warm and garnished with golden raisins or sliced almonds.
  • Served cool can be topped with Redi Whip.

Rice pudding recipe made in a rice cooker...with ice cream! This recipe is from Aroma rice cookers, but I imagine most rice cookers work the same way. (FYI The servings and yield are estimates.)

1 1/2 cups medium grain rice
3 cups 2% dairy milk or 3 cups soymilk
1/2 teaspoon kosher salt
raisins (optional)
1/2 teaspoon vanilla extract
1 1/2 cups vanilla ice cream, slightly softened

Steps:

  • Place rice, milk, optional raisins, and salt in the inner pot and stir. Place inner pot into the rice cooker, cover and press the steam/cook button. Allow to cook until rice cooker switches to Keep-Warm mode.
  • Stir in vanilla extract and vanilla ice cream, stir thoroughly and serve warm or chilled.
