2 medium acorn squash
1/4 cup chopped celery
2 tablespoons chopped onion
2 tablespoons butter
1 medium tart apple, peeled and diced
1/2 teaspoon salt
1/2 teaspoon lemon juice
1/8 teaspoon pepper
1 cup fresh or frozen cranberries
1/2 cup sugar
2 tablespoons water

Steps:

  • Cut squash in half; discard seeds. Cut a thin slice from the bottom of squash halves so they sit flat. Place squash hollow side down in an ungreased 13x9-in. baking dish. Add 1/2 in. water. Cover and bake at 375° for 45 minutes. , Meanwhile, in a small skillet, saute celery and onion in butter until tender. Add the apple, salt, lemon juice and pepper. Cook, uncovered, over medium-low heat until apple is tender, stirring occasionally. Stir in the cranberries, sugar and water. Cook and stir until berries pop and liquid is syrupy. , Turn squash halves over; fill with cranberry mixture. Cover and bake 10-15 minutes longer or until squash is tender.

4 medium acorn squash
1 cup fresh or frozen cranberries, coarsely chopped
1 medium tart apple, coarsely chopped
1 medium orange, peeled and diced
2/3 cup packed brown sugar
1/4 cup chopped walnuts
1/4 cup butter, melted
1 teaspoon grated orange zest
Pinch salt

Steps:

  • Cut squash in half; discard seeds. Place squash, cut side down, in a 15x10x1-in. baking pan. Fill pan with hot water to a depth of 1/2 in. Bake, uncovered, at 350° for 30 minutes., Meanwhile, combine cranberries, apple, orange, brown sugar, walnuts, butter and orange zest. Drain water from pan; turn squash cut side up. Sprinkle with salt. Stuff with cranberry mixture. Bake 25 minutes longer or until squash is tender.

1 (12-ounces) pkg. whole fresh cranberries (Do not use canned)
1 large thin-skinned orange, un-peeled, seeded, and chopped
1 large apple, un-peeled, seeded, and chopped
1/2 cup water
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
3 Tablespoons sugar
4 small acorn squash, about 1 1/2 to 2 1/4 pounds each

Steps:

  • Cranberry Sauce: In a small saucepan, combine cranberries, orange and apple pieces. Add water. Bring to a boil; reduce heat. Add cinnamon and ginger; simmer until mixture is soft. Remove from heat and stir in sugar. Squash: 1) Slice squash in half. Scoop out the seeds and slice a tiny bit off the bottoms of the squash so it will sit on the plate later. 2) Place squash halves cut side down in a glass dish in 1/8-inch water. 3) Prick the skin of the squash with a fork several times. Cover the dish with plastic wrap and microwave for about 3 to 5 minutes, depending on size of the squash. Squash is done when a fork pierces the skin easily. 4) Stuff the cranberry mixture into the squash cavity. Microwave another minutes.

  • Combine remaining ingredients; fill squash with fruit mixture. Continue baking for 25 minutes, or until squash is tender.

1/4 cup orange marmalade
1/4 cup raisins
1/4 teaspoon cinnamon

Steps:

  • Cut each squash in half length wise; remove seeds.
  • Cut squash into 1 inch thick wedges.
  • Arrange squash in slow cooker.
  • Heat cranberry sauce, marmalade, cinnamon and raisins; stir until smooth.

2 medium acorn squash
⅔ cup graham cracker crumbs
⅓ cup chopped pecans
⅓ cup unsalted butter, softened
3 tablespoons packed brown sugar
¼ teaspoon ground nutmeg
½ cup whole berry cranberry sauce

Steps:

  • Pierce each squash in several places to allow steam to escape, then place 2 inches apart in the microwave. Microwave on high for 6 minutes. Remove to a cutting board.
  • Cut each squash in half crosswise; remove and discard seeds. Arrange halves with cut-sides down on a microwave-safe plate.
  • Cover tightly with plastic wrap and microwave until tender, 7 to 9 minutes. Remove stems and cut a thin slice from the pointed ends to prevent tipping. Flip so cut-sides are facing up.
  • Mix graham cracker crumbs, pecans, butter, brown sugar, and nutmeg in a bowl. Spoon 1/4 of the mixture into each squash half.
  • Microwave, uncovered, until filling is heated through, 2 to 5 minutes.
  • Serve topped with cranberry sauce.
