This recipe comes from a newspaper clipping that claims supposedly that this is the recipe from The Rib Room Rotisserie-Extraordinaire in New Orleans, LA.

1 (18 ounce) beef tenderloin, center cut (filet mignon)
kosher salt, to taste
fresh ground black pepper, to taste
1 tablespoon extra virgin olive oil
4 fresh thyme sprigs
12 slices french bread crostini
4 egg yolks
8 garlic cloves
2 roasted red peppers
1 cup fresh basil
2 cups extra virgin olive oil
salt, to taste

Steps:

  • To roast peppers, place under or over flame in broiler or on stovetop until skin is blackened. Peel off black skin and discard it.
  • In a food processor, combine egg yolks, garlic, roasted pepper and basil. Add oil very slowly in a thin stream with food processor running until the ingredients form an emulsion. Store in refrigerator. This may be made one day ahead. Makes 4 cups.
  • Season tenderloin with salt and pepper and rub with olive oil. Place thyme sprigs on and around meat and let marinate for 30 minutes. Roast on a rotisserie or in a grill over an open flame until internal temperature reaches 120F, about 25 minutes until beef is cooked rare. Let rest for 15 minutes.
  • To serve, carve into thin slices. Place crostini on plates, top with slices of beef and drizzle with aïoli.

4 medium onions, chopped
1/2 bunch celery, chopped
3 medium green peppers, chopped
3 cloves garlic, chopped fine
2 bay leaves
1/8 teaspoon rosemary
1 pinch oregano
1 (15 ounce) can whole tomatoes, chopped
1 (3 ounce) can tomato paste
1 (3 ounce) can tomato puree
salt and pepper
4 teaspoons sugar
1/4 cup oil

Steps:

  • Saute onion, celery and green pepper in a small amount of oil (about 2-3 Tbsp.) for 15 minutes.
  • Add other seasoniongs and cook slowly over low heat for another 45 minutes.
  • Use over beef or veal, pork or chicken.
  • Also great for omelets.

  • One hour before cooking, remove the tenderloin from the refrigerator. Fold the tail of the tenderloin over and truss it to even out the thickness on the thin end of the roast. Cut the roast in half, truss the two pieces together, then skewer on the rotisserie spit, running the spit between the pieces of tenderloin and securing them with the spit forks. Whisk the mustard, garlic and thyme, then brush all over the trussed tenderloin. Let the beef rest at room temperature until it is time to grill.
  • Set up the grill for indirect high heat (450°F or higher). On my Weber Summit, I remove the grill grates and preheat the grill with all burners on high for 15 minutes. Then I turn off all but the outer burners – burners 1 and 6 – and turn on the rotisserie burner to high.
  • Put the spit on the grill, start the motor spinning, and make sure the drip pan is centered beneath the tenderloin. Close the lid and cook with the lid closed as much as possible. (If you have an infrared rotisserie burner, turn it off after the beef is browning well, about 30 minutes, and let the burners in the main body of the grill finish cooking the beef.) The tenderloin is done when it reaches 120°F in its thickest part for medium rare, about 45 minutes. (Cook to 115°F for rare, 130 ° F for medium.)
