BARBECUE RUM RIBS



Barbecue Rum Ribs image

These ribs are marinated in a rich sauce that is made with rum, ketchup, brown sugar, soy sauce, and chili sauce. Either bake or grill until done.

4 pounds spare ribs (or country style)
1/4 cup ketchup
1 teaspoon dry mustard
1/4 cup dark rum or apple juice
2 cloves garlic, crushed
1 cup packed brown sugar
1/4 cup soy sauce
1/2 cup chili sauce
1/4 cup Worcestershire sauce
1 dash black pepper

Steps:

  • Preheat the oven to 350 degrees F. Place the ribs in a double-thickness of aluminum foil. Place the foil-wrapped ribs on a rimmed baking sheet to catch any juices that may leak out. Place in the oven and bake at 350 degrees F for 1 1/2 hours. Remove the ribs from the oven and unwrap the foil. Transfer the ribs to a shallow baking dish. Combine the ketchup, dry mustard, rum, garlic, brown sugar, soy sauce, chili sauce, Worcestershire sauce, and black pepper in a bowl and mix to dissolve the sugar. Pour over the ribs. Let the ribs sit in the mixture at room temperature for 1 hour. Meanwhile, preheat the grill to medium heat. Place the marinaded ribs on the grill and cook for 30 minutes, turning the ribs as needed and basting with the marinade. Alternately, the ribs can be finished in the oven. Place the ribs on a rack in a roasting pan and bake at 350 degrees F for 30 minutes, basting with the marinade and turning as needed until browned and tender.

This recipe is easier than it sounds. I usually cook the ribs the day before and grill them for a quick dinner the next night. FYI: the sauce is much better after it is cooked. It is not a dipping sauce.

4 pounds pork spareribs
1 cup brown sugar
¼ cup ketchup
¼ cup soy sauce
¼ cup Worcestershire sauce
¼ cup rum
½ cup chile sauce
2 cloves garlic, crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Cut spareribs into serving size portions, wrap in double thickness of foil, and bake for 1 1/2 hours. Unwrap, and drain drippings. (I usually freeze the drippings to use later in soups.) Place ribs in a large roasting pan.
  • In a bowl, mix together brown sugar, ketchup, soy sauce, Worcestershire sauce, rum, chile sauce, garlic, mustard, and pepper. Coat ribs with sauce and marinate at room temperature for 1 hour, or refrigerate overnight.
  • Preheat grill for medium heat. Position grate four inches above heat source.
  • Brush grill grate with oil. Place ribs on grill, and cook for 30 minutes, basting with marinade.

Steps:

  • Cut ribs into individual pieces. Line a roasting pan with a double thickness of foil. Place ribs in pan and seal tightly in foil.
  • Bake at 350°F (180°C) for 45 minutes. Unwrap ribs and pour off drippings.
  • Combine remaining ingredients; pour half the sauce over ribs. Return to oven and bake for about 11/2 hours or until meat is tender, turning ribs occasionally and basting with remaining sauce.

2 racks baby back ribs
6 tablespoons Emeril's Rib Rub spice blend
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon celery salt
Emeril's Sweet Original Bam BQ Barbecue Sauce, or your favorite barbecue sauce

Steps:

  • Preheat the oven to 300 degrees F. Line a large baking sheet with a piece of aluminum foil that is large enough to cover the pan twice (you will be folding this over the ribs and sealing it).
  • Arrange the ribs, meat side up, in one layer on the prepared baking sheet. In a small bowl, combine the Rib Rub, salt, pepper, and celery salt, and stir to combine. Divide the seasoning evenly between the 2 slabs of ribs, coating them well on both sides. Fold the extra length of foil over the ribs, and seal it tightly on all sides. Place the baking sheet in the oven and bake, undisturbed, for 2 1/2 to 3 hours, or until the ribs are very tender.
  • Preheat a grill to medium-high (or leave the oven on).
  • Remove the baking sheet from the oven and peel back the foil so that the ribs are exposed. Using a basting brush or the back of a spoon, coat the meaty side of the rubs lightly with barbecue sauce. Place the slabs of ribs, meaty side up, on the grill and cook until the barbecue sauce is thickened and lightly browned, 5 to 10 minutes. (Alternatively, return the baking sheet to the oven and continue to bake the ribs, without the foil covering, until the barbecue sauce is thickened and lightly browned, 20 to 30 minutes.)
  • Plating / Assembly: Remove the ribs from the grill (or oven), and let them cool briefly. Then cut between the ribs and serve, with additional barbecue sauce on the side if desired.

RIB KICKIN' RIBS

These simply rock. I threw these together the other day for a BBQ and the guests went wild, after they went for something to quench the burn. They are spicy, if you don't like spicy, these are not for you. Chile heads will love it! The searing heat is nicely balanced with the addition of maple syrup. Serve with plenty of beer!

4 pork rib racks (about 4 pounds)
2 limes, juice of
4 tablespoons maple syrup
2 habanero peppers, dried (or 6TB powder)
2 chipotle chiles, dried
15 bird's eye dried chilies (or Tepins)
3 tablespoons instant chicken broth
2 tablespoons Italian herb seasoning
1 tablespoon cumin, ground
1 teaspoon mustard seeds
1 teaspoon sea salt

Steps:

  • In a coffee/spice grinder, mix the Cayenne, Chipotles, Bird's Eyes, chicken broth powder, cumin, mustard seeds, and sea salt until you have a fine powder.
  • In a seperate bowl, mix the powder with the juice from the limes and the maple syrup. It should be a fairly thick paste. If not, add more of your favorite powdered ingredient.
  • Rub the paste on the ribs and marinate for two days in the fridge, tightly wrapped with saran wrap, or in a glass bowl, tightly covered. Flip them occasionally.
  • On the day of cooking, preheat oven to 175°F, remove ribs from saran wrap. Place each rack in the middle of a piece of parchment paper and seal it by bringing both ends together above the rack and rolling them tightly down until you have a well sealed package. Do the same again but with aluminum foil. Make sure you wrap them as tight as possible.
  • Place them in a large casserole, covered with aluminum foil, or in a dutch oven, tightly covered. The idea is to cook them slowly and seal the juices inches Cook them in the oven for about 5 hours, or until the meat is tender. Cooking time will vary greatly depending on the ribs, your oven, and how tightly they are wrapped. I recommend checking them every hour. It is difficult to burn them at 175°
  • When they are finished, remove the foil and saran wrap and smear each rack with maple syrup and then put them under the broiler until they have a nice crispy crust, be careful not to burn them! Serve warm.

2 medium onions, chopped
2 tablespoons butter
2 garlic cloves, minced
1 cup packed brown sugar
1 cup water
1 cup spicy ketchup
3 tablespoons white vinegar
3 tablespoons Worcestershire sauce
1 tablespoon Liquid Smoke, optional
2 teaspoons ground mustard
2 teaspoons chili powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1 teaspoon salt

1/2 teaspoon pepper
5 to 6 pounds pork baby back ribs

Steps:

  • In a large saucepan, saute onions in butter until tender. Add garlic, cook 1 minute longer. Reduce heat; simmer for 10-12 minutes or until thickened, stirring occasionally. Remove from the heat. , In a small bowl, combine the salt, onion salt, garlic salt and pepper; sprinkle over ribs. , Grill ribs, covered, over indirect medium heat for 1-3/4 hours or until tender. , Set aside 1 cup barbecue sauce for serving. Brush some of the remaining sauce over ribs; cook 20 minutes longer, turning ribs occasionally and basting with sauce. Serve with reserved sauce.

I have found that the major restaurant chains who make this awesome dish pre-cook their ribs SLOWLY before the quick grilling process.

2 (2 pound) slabs baby back pork ribs
coarsely ground black pepper
1 tablespoon ground red chile pepper
2 ¼ tablespoons vegetable oil
½ cup minced onion
1 ½ cups water
½ cup tomato paste
½ cup white vinegar
½ cup brown sugar
2 ½ tablespoons honey
2 tablespoons Worcestershire sauce
2 teaspoons salt
¼ teaspoon coarsely ground black pepper
1 ¼ teaspoons liquid smoke flavoring
2 teaspoons whiskey
2 teaspoons garlic powder
¼ teaspoon paprika
½ teaspoon onion powder
1 tablespoon dark molasses
½ tablespoon ground red chile pepper

Steps:

  • Preheat oven to 300 degree F (150 degrees C).
  • Cut each full rack of ribs in half, so that you have 4 half racks. Sprinkle salt and pepper (more pepper than salt), and 1 tablespoon chile pepper over meat. Wrap each half rack in aluminum foil. Bake for 2 1/2 hours.
  • Meanwhile, heat oil in a medium saucepan over medium heat. Cook and stir the onions in oil for 5 minutes. Stir in water, tomato paste, vinegar, brown sugar, honey, and Worcestershire sauce. Season with 2 teaspoons salt, 1/4 teaspoon black pepper, liquid smoke, whiskey, garlic powder, paprika, onion powder, dark molasses, and 1/2 tablespoon ground chile pepper. Bring mixture to a boil, then reduce heat. Simmer for 1 1/4 hours, uncovered, or until sauce thickens. Remove from heat, and set sauce aside.
  • Preheat an outdoor grill for high heat.
  • Remove the ribs from the oven, and let stand 10 minutes. Remove the racks from the foil, and place on the grill. Grill the ribs for 3 to 4 minutes on each side. Brush sauce on the ribs while they're grilling, just before you serve them (adding it too early will burn it).

This recipe was so different we had to try it - Turned out so great we want to share it! Sweet with a Kick - or was it a Kick with a little sweet? Either way it was delish! NOTE: You will need 6 to 8 chunks of cherrywood, applewood, or hickory wood. NOTE:Be sure to set aside 2 1/2 teaspoons of the rub mixture to be used in the mop sauce and the Caribbean Rum Sauce. NOTE: I could not find "mango nectar" - so I used a can of Sliced Mangos in Mango Juice and smashed the mango slices to make a chunky "juice" .

1 tablespoon salt, Kosher
1 tablespoon brown sugar, packed
1 1/2 teaspoons dry mustard
1 1/2 teaspoons chili powder
1/2 teaspoon garlic powder

1/2 teaspoon crushed red pepper flakes
1/2 teaspoon ground black pepper (set aside 2 1/2 teaspoons of rub mixture)
6 lbs pork back ribs (about 2 racks)
1/3 cup mango nectar (see notes)
1 tablespoon cider vinegar (and reserved rub)
1/2 cup onion, chopped (1 medium)
1 tablespoon vegetable oil
1 cup barbecue sauce
3/4 cup mango nectar
1/4 cup spiced rum (Captain Morgan)
2 tablespoons honey (and reserved rub)

Steps:

  • . Soak wood chunks for at least 1 hour before smoke-cooking. Drain before using.
  • For the rub, in a small bowl, combine salt,brown sugar, dry mustard, chili powder, garlic powder, thyme, all spice, cumin, crushed red pepper, and black pepper.
  • Set aside 2 1/2 tablespoons of the mixture.
  • Sprinkle the remaining mixture evenly over ribs; rub in with your fingers.
  • Cover and let stand at room temperature of 15 minutes.
  • For mop sauce, in a small bowl, combine nectar, vinegar, and 1 1/2 teaspoons of the reserved rub.
  • Set aside the remaining 2 tablespoons rub for the Caribbean Sauce.
  • Prepare the smoker. Add four to six of the drained wood chunks to smoker. (Add one or two additinal chunks when only a wisp of smoke comes through top vent.).
  • Place ribs on top and middle racks of smoker.
  • Cover and smoke at 225 to 250 degrees F for 3 1/2 hours, brushing with mop sauce after 2 to 3 hours.
  • For Caribbean Rum Sauce cook 1/2 cup chopped onion in 1 tablespoon hot vegetable oil in medium saucepan over medium heat until tender. Stir in 1 cup bottled barbecue sauce, 3/4 cup mango nectar, 1/4 cup spiced rum, 2 tablespoons honey, and the reserved 2 tablespoons of tub. Bring to boiling; reduce heat. Simmer, uncovered, about 20 minutes or until sauce reaches desired consistency. Makes 2 cups.
  • Remove ribs from smoker. Brush again with mop sauce; lightly brush with Caribbean Sauce. Wrap each slab in foil and return to smoker.
  • Cover and smoke for 30 to 60 minutes more or until ribs are tender. (When you lift each rack with tongs, the meat should tear easily.).
  • Unwrap ribs and return to smoker. Cover and smoke 20 minutes more or until tops of ribs appear dry. Brush with additional sauce before serving.

1 (4 pound) rack pork spareribs
¼ cup mustard
¼ cup barbecue sauce, or to taste

Steps:

  • Preheat the oven to 250 degrees F (120 degrees C). Line a baking sheet with aluminum foil.
  • Mix brown sugar, barbecue seasoning, paprika, sea salt, pepper, and garlic powder together in a bowl.
  • Coat both sides of ribs liberally with mustard and then with seasoning mixture. Place ribs onto the prepared baking sheet and cover with additional foil.
  • Bake in the preheated oven until meat pulls away easily from the bone, about 2 hours. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Remove from the oven, discard foil, and cover ribs in barbecue sauce. Bake, uncovered, until barbecue sauce begins to caramelize, about 15 minutes. Let rest for 10 minutes before serving.

5 lbs deer or 5 lbs beef ribs
1 cup brown sugar
3/4 cup barbecue sauce
1 teaspoon dry mustard
1/2 teaspoon cinnamon
1/4 cup ketchup
1/4 cup soy sauce
3 cloves garlic, minced
fresh pepper
3 teaspoons cornstarch
3/4 cup dark rum

Steps:

  • Bake ribs in the oven at 350F for 1 1/2 hours. Drain oil and return ribs to roasting pan.
  • In a saucepan, mix together brown sugar, barbecue sauce, dry mustard, cinnamon, ketchup, soy sauce, garlic and pepper. Heat until almost boiling.
  • Add cornstarch to rum to thicken, then add to saucepan mixture. heat thoroughly until thickened and almost boiling.
  • Pour mixture over ribs, cover, and return to oven for another 1 1/2 hours, but at 250°F
