EASY RHUBARB CRISP
Growing up in Alaska, we had rhubarb growing out of our ears. This recipe is a great way to use it, and people will devour it.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Mix flour, brown sugar, oats, butter, and cinnamon together in a bowl until crumbly. Press 1/2 of the oat mixture into the bottom of prepared baking dish. Sprinkle rhubarb over oat mixture.
- Combine white sugar, water, cornstarch, and vanilla extract in a saucepan over medium heat; cook and stir until thick and clear, about 5 minutes. Pour sugar mixture over rhubarb. Sprinkle remaining oat mixture over rhubarb.
- Bake in the preheated oven until crisp is lightly brown and bubbling, about 1 hour.

MOM'S RHUBARB CRISP
This delicious dessert was a summer staple in my family growing up. An easy, delicious way to use up the summer surplus of rhubarb!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
- Mix rhubarb, 1 tablespoon flour, sugar, water, cinnamon, and allspice together in a bowl. Mix oats, brown sugar, and 1/2 cup flour together in a separate bowl; add butter and mash into the oats mixture with a pastry cutter until crumbly.
- Press about half the oats mixture into the bottom of the prepared baking dish. Spread rhubarb mixture over the oats mixture; top with remaining oats mixture.
- Bake in preheated oven until rhubarb layer is set, about 45 minutes.

RHUBARB CRISP FOR THE MICROWAVE

Steps:
- 1. Mix the first 3 ingredients in glass casserole or cake pan that will fit in your microwave. Use glass dish (Mom used to use a Corning Ware 2 inch deep large dish). Cook on high for 3 minutes, rotate dish - unless you have a turntable. Then cook for 3 more minutes on high. While that is cooking, stir together margarine, flour, brown sugar, cinnamon, and quick oatmeal. Mix well and put on top of rhubarb mixture. Microwave on high for 10 minutes - rotating once if you do not have a turntable.
RHUBARB CRISP (EASY!)
Even if you're not wild about rhubarb, you'll be wild about this! You can make this in advance, refrigerate and heat individual servings in the microwave, if you'd like.

- Mix flour and sugar together, add rhubarb, tossing well.
- Place in a 9" x 13" baking dish.
- Sprinkle dry cake mix and chopped nuts, if using, over rhubarb mixture.
- Drizzle melted butter over all.
- Bake at 350 degrees F for 50- 60 minutes.
- Serve warm topped with vanilla ice cream, if desired.

RUSTIC RHUBARB CRISP
Okay, there are other rhubarb crisp recipes out there, but none exactly the same as this one. (It's my mom's, so I am partial to it!) There is less sugar, more oatmeal and rhubarb, and it is super easy! And for more crispy goodness, the topping can easily be doubled. I hope that you like it as much as I do!

- Mix granulated sugar and flour, then stir in rhubarb. Put mixture in a greased 9 x 13 glass pan.
