Rhubarb Butter without Canning image

Fruit butters have much less sugar in them than jellies, jams, or preserves but are just as good on bread or as a glaze for pork or chicken. This recipe calls for only adding as much salt and sugar as your taste requires. The batch in the picture took 2 very small pinches of salt and 6 tablespoons (3/8 cup) of sugar. Fruit butters may have spices in them like cinnamon or may simply rely on the flavor of the fruits for their kick. Although this same recipe may be adapted for canning, making a small quantity to store in the fridge or freezer works just as well.

3 or 4 stick(s) rhubarb, washed, leaves and tought strings removed, and diced
2 or 3 medium apples, peeled, cored, and diced
2 medium lemons (juice only) or 3 tbl bottled lemon juice
1 or 2 pinch(es) salt (optional)
0 to 8 tablespoon(s) sugar (to taste)

Steps:

  • In a medium, non-reactive saucepan, on medium-low heat, bring the rhubarb, apples, and lemon juice to a slow boil. Add a pinch of salt (optional).
  • Simmer on medium low heat, stirring frequently until the fruit becomes the consistency of apple sauce (about 15 minutes). Hurry the fruit along by mashing if you wish.
  • Taste the unsweetened sauce and add sugar, 1 tablespoon at a time until you reach the desired sweetness. Add another pinch of salt if desired.
  • Simmer for another 15 to 20 minutes, stirring frequently or until a "thick applesauce" consistency is reached.
  • Allow the resulting fruit butter to cool in the sauce pan and then transfer to clean containers for storage in the refrigerator or freezer. If your containers are clean and well-sealed, the rhubarb butter should last 2 or 3 weeks in the refrigerator or 6 months in the freezer.
  • Use as you would any jam or preserves. The batch pictured above resulted in about 2 cups of rhubarb butter, one headed to the fridge, the other to the freezer.

  • Rinse the rhubarb and trim the ends Slice it into 1 inch pieces and put in a heavy bottomed pot along with the sugar. Add 2 tablespoons of water and the lemon juice, and stir to combine.
  • Heat, stirring constantly, until the rhubarb starts to give off juice and the mixture comes to a boil. Boil gently for about 20-30 minutes, until the rhubarb is very soft and mostly broken down.
  • Puree the mixture, in batches if necessary,. Be careful when pureeing hot liquids, as they can 'explode' up through the spout of the processor or blender.
  • Put the puree in a clean pan back on the stove and bring to a boil, then turn down the heat and let it gently bubble away until reduced and thickened about another 20 minutes, Stir often, and be careful not to let the fruit scorch. If you are using the spice or vanilla bean, stir it in now.

  • Place all of the ingredients together in a small saucepan, and place it over medium-high heat. Once the mixture begins to bubble and boil, turn it down to medium-low and allow it to simmer, about 25 minutes, stirring every few minutes.
  • Remove the pot from heat, then blend the mixture until smooth, using either an immersion blender, high-powered blender, or food processor. Pour the smooth mixture back into the pot, then place it back on the stove over low heat.
  • Simmer the rhubarb butter for 2 hours, stirring every so often, until thickened. (It will thicken more as it cools). Pour the butter into a heat-proof container or jar, then place it in the fridge to cool completely, about 4-5 hours. Once cooled, you can use it as a spread on toast, pancakes, or in a baking recipe.

  • Remove the rhubarb leaves, they are poisonous.Wash the rhubarb and cut it into slices, about 2,5 cm/ 1 inch thick. Place into a large, wide pot. Add the sugar, water, and lemon juice. Stir well. Bring to a boil and cook the rhubarb, stirring often, about 20 minutes or until very soft.
  • Puree the mixture with an immersion blender, making sure you wear something with long sleeves and gloves, the butter is very likely to splatter and that can cause painful burns.
  • Taste and add more sugar, if desired. You might also want to add some spices, likes cinnamon or vanilla, but that is optional, I prefer my rhubarb butter to be pure and not too sweet.
  • Place the pot back on the hob and continue cooking for about 30 minutes or until slightly thickened. Stir often, making sure to scrape the bottom and sides of the pot while you stir. Don't let the rhubarb butter scorch. If you like a thicker rhubarb butter, you can cook it for more than 30 minutes, until the butter reaches the desired consistency.
