REFRESHING MOJITO
The great mint flavor of mojitos helps balance the spiciness of Cuban food. My recipe calls for apple rum and a purchased mix.-Eric Brill, Wauwatosa, Wisconsin

MOJITO
Traditional mojitos are made with rum, which is both pleasant and mildly sweet. If you want a new spin on the classic mojito recipe, try using tequila for tart, yet refreshing flavor. -James Schend, Deputy Editor

THE REAL MOJITO
This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

Steps:
- Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

FRESH RASPBERRY MOJITO
This fun, refreshing cocktail puts a fresh berry twist on the classic mojito. It combines silver rum and raspberry vodka with fresh berries, lime juice, and mint leaves. Top it off with a splash of club soda. A house specialty at 230 Fifth in New York City, it's the perfect summer refresher.

REFRESHING MOJITO BY THE PITCHER MOJITOS
This is a refreshing Cuban drink. It's hard to stop drinking these on a hot summers day. I made these for the fourth of July and we went on to 3 yes 3 pitchers! If you don't have a muddle stick try a mortar and pestle or the end of a wooden rolling pin. Please use fresh lime if you cannot go ahead and try the already bottled lime juice but if you do think about that when you rate this recipe! I did both and there's nothing like fresh! Same goes for the fresh mint if you need to you can use frozen but I DON'T recommend extract. And for the sugar real granular is what helps muddles the lime and extract the mint oils from the leaves.
